This is another 'lucky' situation when things turn for better. While making my raspberry jam, I totally forgot to add pectin. The result: exactly the same that if I did add some. Easier, simpler, and less risky than adding pectin to it.

4 cups mashed raspberries
4 cups white sugar
1 tablespoon freshly squeezed lemon juice

Steps:

  • Bring raspberries to a boil in a very large pot. Cook for 4 minutes. Add sugar and lemon juice; stir well. Bring back to a boil, stirring constantly. Cook for another 4 minutes.
  • Remove pot from heat and pour jam into sterilized jars, leaving 1/4-inch of space at the top. Seal and transfer jars into a boiling water bath. Make sure jars are covered with at least 1 inch of water; let sit for 5 minutes. Lift jars and let them cool in a draft-free place without touching, 8 hours to overnight.

1kg raspberry
juice of 1 lemon
1kg bag jam sugar (the one with pectin added)

Steps:

  • Before you start, sterilise your jars (see tip below) and put a plate in the freezer to chill. Tip half the raspberries into a preserving pan and add the lemon juice. Mash the berries to a pulp over the heat with a potato masher, then leave to cook for 5 mins. Tip the cooked berries into a sieve over a bowl, then once all of the juice has drained off, firmly work the pulp through the sieve with a wooden spoon until you are left with just the seeds.
  • Tip the juice and pulp back into the preserving pan and stir in the sugar. Heat gently, then add the remaining whole raspberries. Bring to the boil, then boil rapidly for 5 mins. Remove from the heat and drop a little jam onto the chilled plate. Now push your finger through it - it should wrinkle and look like jam. If it doesn't, boil for 2 mins, then test again.
  • The top of the jam may look like it has sediment on it, but I find that if you stir it well as it cools, a little of this disappears. Pour into the jars and seal. It will keep unopened for a year, although the lovely bright colour will darken a little. Once open, keep in the fridge.

Steps:

  • Wash the berries, pickin them over to remove any bad berries. Mash the berries and cook them gently for 10 minutes, stirring frequently. Add the sugar and cook for 15 minutes or until it is thick.
  • When the jellying stage is reached, the drops will run together to form a sheet. If a thermometer is used it should read 219°F, which is 7°F higher than the temperature will read in regular boiling water.
  • Pour the jam into sterile glasses and seal with wax.

  • 1. Place sugar in an ovenproof shallow pan and warm in a 250°F (120°C) oven for 15 minutes. (Warm sugar dissolves better.)
  • 2. Place berries in a large stainless steel or enamel saucepan. Bring to a full boil over high heat, mashing berries with a potato masher as they heat. Boil hard for 1 minute, stirring constantly.
  • 3. Add warm sugar, return to a boil, and boil until mixture will form a gel (see tips, below), about 5 minutes.

6 cups fresh raspberries (fresh and ripe)
5 1/4 cups granulated sugar
1 box Sure Jell Fruit Pectin ((found at your local grocery store, walmart, or online))
3/4 cup water
A few clean glass or plastic jars with lids

Steps:

  • *Use firm, ripe berries for the best flavor and set. (You don't want to use overripe berries or the jam may be too soft and runny.)
  • Wash and rinse glass or plastic containers. How many you use depends on how big they are. This recipe makes about 7-8 cups of jam.
  • Add berries to a large bowl and lightly mash them. Be careful not to over mash them---hey should still look fairly chunky, but not like whole berries.
  • Measure out exactly 3 cups of mashed berries and pour them into a separate large bowl. (If you have leftover mashed berries you could freeze them for smoothies or use them for topping on pancakes or waffles.)
  • Gradually stir in 1 cup of the sugar to the mashed berries, and stir until sugar is dissolved. Repeat, adding just one cup of sugar at a time and then mixing, until you use up the remaining 4 1/4 cups of sugar.Let stand for 10 minutes.
  • In a small saucepan, stir together pectin with 3/4 cup water. Bring to a rolling boil (a boil that doesn't stop when stirred) over medium-high heat, stirring often. Boil for one minute, stirring constantly. Remove from heat.
  • Stir pectin into the berries mixture. Continue stirring the mixture until sugar is completely dissolved and no longer grainy. This step is important! (see notes in post above).
  • Pour jam into containers, leaving 1/2in of space at the top of the container, for expansion. Cover with lid and allow jam to rest at room temperature for 24 hours before freezing.
  • Jam will keep for up to 3 weeks in the refrigerator, or freeze for up to one year.
  • You might also like Peach Jam or Strawberry Jam!

This jam recipe is very easy to make and delicious! I like using apple with raspberries. I use pectin because it cuts down the cooking time and sugar significantly and makes the jam nice and thick. This recipe makes nine 8oz. jars. You can cut this recipe in half for a smaller batch. Enjoy!

6 1/2 cups raspberries (6 1/2 cups mashed raspberry equals 12 pints or approximately 2 pounds)
2 1/2 cups apples (peeled and diced)
2 cups sugar
1/4 cup lemon juice
4 teaspoons dry pectin (follow directions on your Pectin box)

Steps:

  • Wash, remove stems, and mash berries.
  • Dice apples into tiny pieces - you can leave skins on, but I peel them.
  • Place apples and lemon juice in large pan on medium heat.
  • Cook apples for 5 minutes until soft.
  • Add mashed berries and cook until it boils, stirring a few times.
  • Let fruit boil for 2-3 minutes.
  • In separate bowl, combine sugar and pectin and stir together.
  • Add sugar/pectin mixture into boiling fruit and stir.
  • Boil (high boil) for 5 minutes.
  • Remove from heat and fill jars to 1/4" of top. (Recipe makes nine 8oz. jars).
  • Wipe rims clean and screw on 2-piece lids.
  • Let jars cool. You will hear a "pop" sound once sealed. You do not have to put jars in boiling water. Just let cool on your kitchen counter.

RASPBERRY JAM NO PECTIN (3 INGREDIENTS)

  • Place two small ceramic plates in the freezer so we can use these to test the jam later. Alternatively, you can use a candy thermometer to check the doneness of the jam.

  • Then, turn the heat to medium-low. The jam should still be simmering but at a low simmer, not bubbling. Use a vegetable masher to mash the fruit - so you have a smoother jam-like consistency.Pro tip - Mashing the fruit is optional, as the fruit will break down into smaller chunks similar to preserve as it cooks. However, mashing will give smoother consistency like jam.
  • Continue to simmer for about 20 to 30 minutes more stirring often so it does not stick to the bottom of the pan. The jam will continue to thicken as well as deepen in color as it cools.Pro tip - The cooking time will depend on the quantity of the jam as well as the heat applied to it. It's ok to cook a little longer but there must be a simmer for the fruit to release pectin.

470g Frozen or fresh raspberries
360g Granulated sugar or caster sugar
1.5 tbsp lemon juice

Steps:

  • Put the 370g raspberries in a medium sized pan at medium heat on the hob and heat gently until they defrost (if your using frozen raspberries) , get softer and juice starts to come out of them. Press the raspberries with the side of your wooden spoon until they break up.
  • Stir in the sugar and the lemon juice. Heat gently until the sugar dissolves and the mixture kind of gets thicker in the pan.
  • Bring the mixture to the boil and boil it for 5-6 minutes until the setting point is reached. To test, place 1 teaspoon of the mix onto a saucer and put in the fridge for about 3 minutes. The surface should wrinkle when touched with a finger. If it's still too runny, then boil the mix for another few minutes.
  • Ladle the jam into a clean jar. Label and store for up to 12 weeks.
  • Enjoy on a nice fresh scone or some toast, or even in a sandwich!

SEEDLESS RASPBERRY JAM

2 quarts fresh raspberries ((about 2½ pounds in all))
6-7 cups granulated sugar
2-3 tbsp fresh lemon juice
½ tsp unsalted butter ((optional))

Steps:

  • Heat oven to 225˚F. Rinse the raspberries and drain them well. Put them into a heat-proof dish. I found that my 2 quarts fit nicely in a 13×9 Pyrex pan. Bake the pan of berries, uncovered, for about 30 minutes, because heating the berries gently will make it easier to sieve the seeds out.
  • Put a fine-mesh sieve over a large bowl or pot. Take the pan of hot raspberries out of the oven and sieve the berries in batches. Scoop some of the softened berries into the sieve, and press the pulp and juice through with a big spoon. It's surprisingly hard work to press the berries through the sieve. You want to end up with only seeds in the sieve, as dry as you can manage. When you've pressed out as much fruit as you can, put the seeds in a clean quart-sized jar (* see Notes) and set aside. Repeat until all the berries have been sieved. Don't forget to scrape the underside of the sieve with a clean spoon, to get all the pulp off it!
  • Combine the raspberry pulp with three-quarters its weight in sugar, or just estimate by volume, adding 6 c sugar to the lot, tasting it, and adding a bit more if it's too tart. Add lemon juice. Heat at a very low setting, and stir until sugar is dissolved. Taste again for balance of sweet and tart; adjust as you wish.
  • Now add the pat of butter (it helps reduce foaming) and turn heat to high. Bring the jam to a boil, stirring frequently, until the jam thickens and will pass a wrinkle test. Ladle jam into prepared jars, wipe rims, and apply lids and bands. If your last jar is only partly filled, just stick a lid on it and refrigerate.
  • Ladle jam into prepared jars, wipe rims, and apply lids and bands. Refrigerate any partially filled jar, and seal the rest in a boiling water bath for 10 minutes.
