- Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
- Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.
- Spoon 1 tablespoon pizza sauce into each biscuit; top each with 1 slice pepperoni and 1 tablespoon mozzarella cheese.
- Bake in the preheated oven until biscuit is lightly browned and cheese is melted, about 10 minutes. Remove each pizza from tin and place on a cooling rack, about 5 minutes.

- Preheat oven to 375°F.
- Grease a 12-cup muffin tin with non-stick cooking spray.
- Unroll the refrigerated pizza crust and slice in 12 even sections using a pizza cutter.
- Take one piece of the dough and flatten out in the palm of your hand. Press the dough into a muffin cup, pressing it up the sides as much as you can. Repeat until each muffin tin is filled with dough, set aside.
- In a small bowl, combine the melted butter, garlic salt and Italian seasoning. Using a pastry brush, spread the butter mixture over the dough.
- Put 1-2 tablespoons of pizza sauce into each dough cup. *If the dough slides down the sides, adjust as necessary.
- Sprinkle your pizza toppings, except the cheese.
- Bake the pizza muffins for 15 minutes.
- Add 1-2 tablespoons of cheese on top of each pizza muffin and continue to bake for 10 minutes or until the cheese is browned and bubbly.

- Preheat oven to 400 degrees and spray a mini muffin tin generously with cooking spray. Remove pizza crust from tube and unroll it. When unrolled, the dough will be in a smallish rectangle. Cut in half and roll the first half out on a lightly floured surface to approx. 10" x 14". The dough will be very thin. Using a 3 1/4" cutter, cut 12 circles out of the dough. Place a circle in the muffin tin creating a fluted edge that sticks up a bit above the top of the cup. Repeat with the remaining 11 circles then repeat the entire process with the remaining dough. You will now have dough in all 24 cups.

- Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with unbleached parchment liners or reusable silicone liners.
- Whisk together the flour, baking powder, baking soda, salt, and oregano in a medium bowl to combine.

- Preheat the oven to 375 degrees F and grease a standard muffin tin well with nonstick spray.
- Add the milk, carrot, cheeses, butter, pepperoni (reserving the 2 tablespoons), and egg to a medium bowl. Stir together.
- Stir in the flours, baking powder, baking soda, pizza seasoning, and salt.
- Divide batter among the prepared muffin tin, using about 1/4 cup in each. Top each with pepperoni.

- When making pizza muffins , your first job is to take care of the dough 1 : Combine flour, baking powder, and salt 2 , then slowly add the water and mix with your hands 3 .
- Always knead by hand 4 and when all the water is absorbed, transfer the dough to a pastry board and roll it into a ball 5 . Your next job is the filling: Cut the mozzarella into cubes 6 ,

- Pour the wet ingredients into the bowl with the dry ingredients then mix until just combined. Fold in the cubes of cheese, pepperoni and fresh basil.
- Spray a muffin pan with cooking spray. I used a jumbo muffin pan (6 muffin pan) but you can use a standard 12-hole pan too.
- Using a large spoon or ice cream scoop, fill the muffin pan then top with extra pepperoni (optional).
- Place in a preheated oven and allow to bake for 20-25 minutes or until a skewer inserted comes out clean.
- Remove from the oven then allow to cool for 5 minutes and carefully remove the muffins from the pan. Allow to cool for another 10-20 minutes then serve warm.

These fun pizza muffins can be served for dinner or as an appetizer!

Steps:
- Preheat oven to 400 degrees F. Generously spray muffin tin with cooking spray and set aside.
- In large bowl, stir together flours, baking powder, garlic powder, onion powder, oregano, and salt.
- In a medium bowl, whisk together eggs and milk, and stir into dry ingredients just until combined. Mix in 1 c. cheese and additional ingredients.
- Scoop dough into muffin tin, and sprinkle a small amount of cheese over there top of each muffin. Bake in preheated oven for 18-20 minutes, or until golden brown. Allow to cool in pan for a few minutes, then serve warm with marinara for dipping if desired.

- Preheat the oven to 220C/Fan200C/Gas 6.
- Mix all Dry Ingredients togeather in a big bowl:
- Flour, Baking Powder & Salt.
- Mix all Wet Ingredients togeather in bowl/jug (I prefer using a jug, as easier for pouring later on): Veg Oil, Milk & Eggs
- In a separate bowl mix all Pizza ingredients: Pizza Topping, Grated Cheese, Dried Oregano, Black Pepper & Fresh Basil.
- Then roughly mix the Wet & Pizza Ingredients in with the Dry Ingredients. Do not over mix the Ingredients. Muffin mix is suppose to be lumpy & goopy & it should fall off the spoon in globs.
- Once mixed spoon into muffin cases, fill fairly high up the cases but do make sure you have enough Muffin Mix for 12. Bake for 20mins on top shelf.
- Remove from oven after 20mins & start placing the toppings on. Spread some Pizza topping on the muffin, then place a slice of tomato on top & finish with a small cube of cheese. Repeat for all 12 muffins & return to the oven for 5 mins/until cheese has melted.
- Once cooked, leave in tray for 5mins to cool then transfer to a cooling rack for 10/15mins. I prefer to serve mine while still warm but can be served at room temp.
