- Generously butter baking sheets.
- In a large saucepan over medium heat, combine brown sugar, white sugar, water and butter. Bring to a rapid boil and stir in pecans. Continue to cook and stir until large bubbles form on the surface, pecans begin to look sugary and mixture just begins to color. Remove from heat and drop by rounded spoonfuls onto prepared sheets. Let cool completely.

CREAMY PECAN PRALINES
Steps:
- Mix light brown sugar, granulated sugar, heavy cream, butter, water and salt in a heavy-bottomed saucepan. Cook over low heat, stirring constantly with a wooden spoon, until sugar dissolves. Stir in pecans and cook over medium heat until mixture reaches the soft ball stage, 238 to 240 degrees F on a candy thermometer. If you spoon a drop of boiling syrup into a cup of ice water, it will form a soft ball that flattens easily between your fingers.
- Remove pan from heat and stir rapidly until mixture thickens. Drop pralines by the spoonfuls, 1-inch apart onto parchment paper-lined baking sheets. Let cool completely until firm. Store in an airtight container.

- Prepare a muffin tin by filling with cupcake liners; set aside.
- Add all ingredients to a large pot over medium-high heat. Stir consistently as you bring to a boil.
- Use a candy thermometer to check the temperature - when it reads 235-240°F remove pan from heat. (This should take about 10 minutes or so).
- Use wooden spoon to vigorously stir the mixture, so that it thickens as it cools and starts to have a cloudier appearance. This should take anywhere from 2-5 minutes.
- While the mixture is still hot, use a cookie scoop to portion out the praline mixture into your muffin tin. You want to make sure to cover the bottom of each cupcake liner.
- Allow to cool completely until firm.
- Remove the cupcake liner before serving.

- Add all of your pecans to a medium-sized bowl, set aside.
- Add your confectioners swerve to a large bowl, set aside.
- Add your heavy cream to a small cup, set it aside.
- Cut up a stick of melted salted butter and add those pieces to a small bowl then set aside.
- Put your pecans on a baking sheet lined with parchment paper and spread them out. Roast in the oven for a couple of minutes, just until they get fragrant.
- Add your butter - except about a tablespoon - to a pan set over medium heat.

- Line two baking sheets with parchment paper; set aside.
- In a medium saucepan over medium-low heat, melt butter. Add the cream and both sugars and continue cooking until the sugars are dissolved. Increase the heat to medium and simmer until the mixture reaches 240-250 degrees F, stirring occasionally. (If the mixture begins to crystallize you can add 2 more tablespoons of the cream and continue cooking until it loosens up)
- Add the pecans, remove from heat and give the mixture a final gentle stir. Use a wooden spoon, portion about 2 tablespoons of the praline mixture onto the prepared baking sheet, spacing at least 1 inch between them. (If the mixture begins to crystallize and set up before you finish portioning all of the pralines, add an additional 2 tablespoons of cream to the saucepan and set the pan over medium heat until the mixture is creamy, then continue portioning the candies.) EASY PRALINES
Pralines are delicious and always were something I liked to eat. I never made them because the recipes were too complicated. This changed when I got this from "Cooking New Orleans Style". Now I make and eat them and don't have to wait for DH to go to Louisianna on a business trip.

- Combine first 5 ingredients in a medium sized saucepan.
- Cook over medium low heat stirring and bring to a rolling boil.

- In a medium sized pot, bring butter, brown sugar, and half & half together to a boil over med-low heat, whisking constantly. Allow the mixture to boil for 3-4 minutes, or until the sauce has thickened and coats the back of a spoon (can be anywhere as long as 5-7 minutes).
- Drop the mixture to low and add in the salt, vanilla extract, and chopped pecans and cook another minute or so.
- Turn the heat off and allow the caramel praline sauce to cool completely before storing in a glass jar.
- Store in the fridge.

PECAN PRALINES BY MICROWAVE
Here's a recipe I adapted from a stove-top recipe in a church women's collection back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. - Gather the ingredients.
- Lay an 18-inch sheet of waxed paper or parchment paper on the countertop.
- Cut the butter into small pieces. Place the pieces of butter on a plate and put the plate in the freezer while you heat the ingredients.

- Set a large 6-8 quart saucepot over medium heat. Attach a candy thermometer to the side of the pot, making sure the tip reaches the bottom. Measure both sugars, cream, butter, and cinnamon into the pot.
- Meanwhile, set out two baking sheets lined with parchment paper.
- Once the mixture starts to boil, stir. Continue to cook and stir until it reaches 235°F. Turn off the heat but leave the pot on the burner to keep warm. Quickly stir in the pecans, salt, and vanilla.

- Stir together whipping cream and brown sugar in very large microwave safe mixing bowl. Cook in microwave on High for 13 minutes. Open microwave about half way through cooking time and give the mixture a stir or two to make sure it is mixed well. When time is up, take bowl out of microwave, add butter and stir until butter is melted. Add nuts, stir for a couple of minutes or so until mixture starts to thicken slightly. Quickly drop by spoonfuls on a sheet of foil. Allow pralines to cool completely and then put them in a covered container. NOTE: If mixture is removed from bowl too quickly (too hot and shiny), the pralines will be too thin and may remain sticky. If mixture gets to cool (dull in appearance) before it is spooned out on foil, it may become too firm to make individual pralines, but it can always be broken into chunks and eaten. Less attractive, but still good. Chocolate lovers can add 1/2 cup of chocolate chips to hot mixture along with the butter. The chips will melt completely producing "chocolate pecan pralines."
