QUORN SHEPHERD'S PIE
A delicious, easy, family friendly classic with a twist, this Quorn Shepherd's Pie uses Quorn mince instead of the traditional lamb, meaning this version is both vegetarian and much quicker to prepare - perfect for busy weeknights!

Steps:
- Preheat the oven to 200C / 180C fan / gas mark 6 / 400F.
- Peel, chop and boil the potatoes for 15-20 minutes, until soft.
- Meanwhile, fry the chopped mushrooms in the olive oil on a fairly high heat until they start to go brown. Lower the heat and add the chopped carrots and sliced leek and fry gently for 3-4 minutes.
- Add the Quorn mince, some black pepper to taste, a veggie stock cube and fry for 1 minute. Add in the tin of tomatoes, plus half a tin of water and the tomato puree. Stir to combine. Bring the mixture to the boil and then lower the heat and simmer for 5 minutes.
- While the tomato mixture is simmering, drain the potatoes and mash them with 75g of the cheddar cheese plus the butter, a splash of milk and salt and pepper to taste.
- Put the tomato mix at the bottom of a deep oven proof dish and spread the mashed potato on top.
- Sprinkle on the remaining cheese and put the shepherd's pie in the oven for 15 minutes, until it is bubbling and brown on top.
- Just before the shepherd's pie is ready, cook some peas and / or sweetcorn to go with it - or whatever veg you fancy!

- Brown meat in large skillet; drain. Return meat to skillet. Add mixed vegetables and gravy; mix well.
- Spoon into 9-inch square baking dish sprayed with cooking spray.

- Preheat your oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
- Bring a large pot of salted water to a boil. Add peeled and quartered potatoes and cook until tender, about 15 minutes. Drain and make mashed potatoes in your favorite fashion, then set aside.
- In a large skillet over medium-high heat, cook ground beef until brown. Drain. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, salt and pepper and heat through. Pour into prepared baking dish.
- Cover the beef mixture with the mashed potatoes. Dot the top with butter.
- Bake in preheated oven 30 minutes, until potatoes are golden, and mixture is hot and bubbly.

- Cut the potatoes in chunks and boil until tender; reserve half of the chunks and mash the rest with a little butter and milk.
- while the potatoes are cooking, cook ground beef and onions over medium-medium high heat.
- when the meat is cooked, drain the fat.
- add the liquid smoke, worcestershire sauce, salt, pepper and garlic powder (to taste).
- take some of the potato chunks and make a bed of them in a buttered casserole dish.
- spread the ground beef mixture over the top of the potatoes.
- Spread mashed potatoes on top of the ground beef.
- cover with cheese and sprinkle with parsley flakes; bake for 10 minutes.

This recipe is so easy, yet so delicious. You can change up the type of meat (I have used a combo of beef, chicken and/or sausage) and use whatever veges you choose. It always comes out a winner! Steps:
- Saute beef, onion, celery and garlic in a large pan until well done.
- Strain off fat, leaving meat in the strainer and reserving pan for later use.
- Boil potatoes until fork tender, about 20 minutes.
- Drain and mash with butter.
- Blanch carrots (or microwave until al dente) and add to beef mixture.
- Whisk broth with flour to thicken, and add to the pan. When gravy comes to a boil, add beef and carrot mixture.
