EASY FRESH BLUEBERRY COBBLER



Easy Fresh Blueberry Cobbler image

Easy recipe for all fresh fruit. Makes deep 8x8-inch pan. Great warm with vanilla ice cream and a cup of coffee! Use any fresh fruit, or use 2 cans of canned fruit. With pineapple, throw in some cherries and toss with brown sugar instead of white sugar. With peaches, use almond flavoring.

4 cups blueberries
½ cup white sugar
½ lemon, juiced
water, to cover
1 teaspoon cornstarch, or more as needed
¼ cup cold water
1 cup milk
1 cup self-rising flour
1 cup white sugar
1 egg
¼ teaspoon vanilla extract, or to taste
¼ cup melted butter, or to taste
1 pinch ground cinnamon, or to taste
1 teaspoon coarse sugar, for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine blueberries, 1/2 cup sugar, and lemon juice in a saucepan with enough water to just cover; bring to a boil. Cook, stirring occasionally, over medium-high heat until the berries pop and the sugar is dissolved completely, 3 to 5 minutes. Stir cornstarch into 1/4 cup cold water; stir into blueberry mixture. Continue cooking blueberries until the mixture thickens slightly, about 5 minutes more. (Mixture will thicken as it cools.)
  • Whisk milk, flour, 1 cup sugar, egg, and vanilla extract together in a bowl until smooth.
  • Swirl melted butter in the bottom of an 8-inch square deep baking dish to coat. Pour batter over the butter. Sprinkle cinnamon over the batter; top with the berries mixture.
  • Bake in preheated oven until the batter is no longer wet, about 30 minutes. Sprinkle coarse sugar over the cobbler. Cool 15 minutes before serving.

1 1/2 stick(s) butter

Steps:

  • Heat oven to 350 degrees.
  • Dump blueberries and sugar into 9-by-13-inch baking dish. Stir together.
  • Sprinkle cake mix over the fruit. Slice butter and distribute over the surface of the cake mix.
  • Bake for 45 minutes to 1 hour (until cake is lightly golden brown and no batter comes out after a toothpick test).

  • Open the can of blueberries that come with the muffin mix and drain, setting liquid aside.
  • In a small saucepan, combine the reserved liquid, pie filling, lemon juice, and cinnamon; heat to boiling.
  • Remove from stove and pour in 9-inch square baking pan.
  • Prepare the muffin mix as directed on the package, but pour the finished batter onto the hot pie filling mixture, spreading evenly.

This simple dessert (a cross between a cobbler and a buckle) comes together in minutes. If you don't have buttermilk, add 2 tsp lemon juice to 3/4 c sweet milk about 15 minutes ahead of time. In that case, add some lemon zest to the batter, too.

Quick & easy to put together for a last minute dessert. Served warm with Ice Cream it is comfort food desert at it's best. Got the recipe off a box of Bisquick years ago and tweaked it to my personal tastes.

1 cup Bisquick
1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup white sugar
1 (29 ounce) can peach pie filling
1/2 cup fresh blueberries, if using frozen, do not thaw
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 375; 350 for glass.
  • While oven is preheating, put butter in 8 x 8 x 2 pan, place pan in oven to melt the butter. Keep close watch so that it doesn't burn.
  • Mix together Bisquick, Milk, Nutmeg and Cinnamon.
  • Remove pan with melted butter from oven, pour batter over melted butter. Stir Lightly just to mix all together.
  • Pour Peach Pie filling evenly over batter mixture and then sprinkle Blueberries over top of Peach Pie Filling, DO NOT STIR!
  • Sprinkle Cinnamon Sugar over the top of everything, if you need more than one TBSP it is ok, but be careful that the cinnamon doesn't overwhelm the taste the fruit.
  • Bake for 45-55 minutes or until golden brown.
