  • Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.
  • Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

8 cups water
1 large onion, chopped (1 cup)
2 medium celery stalks, finely chopped (1 cup)

1 ham bone or 2 pounds shanks
3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)

Steps:

  • Heat peas and water to boiling in 4-quart Dutch oven. Boil uncovered 2 minutes; remove from heat. Cover and let stand 1 hour.
  • Stir in onion, celery and pepper. Add ham bone. Heat to boiling; reduce heat. Cover and simmer about 1 hour 30 minutes or until peas are tender.
  • Remove ham bone; remove ham from bone. Trim excess fat from ham; cut ham into 1/2-inch pieces.
  • Stir ham and carrots into soup. Heat to boiling; reduce heat. Cover and simmer about 30 minutes or until carrots are tender and soup is desired consistency.

1 cup chopped onion
1 teaspoon vegetable oil
1 pound dried split peas

Steps:

  • In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
  • Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.

3 tablespoons olive oil plus more for garnish
2 cups chopped onion
2 large cloves garlic (diced)
1 pound split peas
2 to 2 1/2 pounds ham steak (cubed)
1 bay leaf
1 tablespoon Mrs. Dash Table Blend
Thyme leaves from 5 springs (plus more for garnish)
8 cups low sodium chicken broth
Salt (optional)

Steps:

  • Heat the olive oil, garlic, and onion in a large pressure cooker over medium heat, along with the thyme leaves and bay leaf until just fragrant.
  • Add the ham, peas, and Mrs. Dash.
  • Then add the chicken broth. Cook over medium-high heat until it starts to bubble, then attach the pressure cooker lid and lock it. Allow the pressure to build until it begins to hiss. Then turn the heat down to simmer and allow it to cook for 20 minutes.
  • After 20 minutes, turn off the burner, release the pressure in the pressure cooker and remove the lid. The peas should be completely softened and should dissolve upon stirring.
  • Place the pan back on the burner and turn it on to low heat. Cook for another 10 minutes on low heat, stirring occasionally. This will allow the liquid to reduce a bit and for the soup to thicken somewhat. Repeated stirrings will ensure that the peas completely dissolve and further thicken the soup.
  • After cooking uncovered for ten minutes, discard the bay leaf then pour into soup bowls and garnish with some thyme and a drizzle of a high-quality olive oil (optional).
  • Serve hot.

1 ham hock
3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
8 cups water
1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on
4 cups vegetable oil, for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
  • Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
  • Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

4 tablespoons cold-pressed canola oil (or olive oil )
1 large onion (finely chopped)
1 clove garlic (finely chopped)
4 cups of beef stock (or chicken)
1/4 cup parsley (finely chopped)
1 sprig mint (plus extra for garnish)
1.1 pounds (500 grams) frozen green peas (divided)
1/3 pound cooked ham (cut into pea-sized dice; divided)
Dash salt

Steps:

  • Gather the ingredients.
  • In a large heavy-bottomed saucepan, heat the oil over medium heat being careful not to burn it (if it does smoke, start again). Add the onions and cook until translucent, about 5 minutes. The onions should be softened but not browned.
  • Add the garlic and cook for another minute.
  • Add the stock, chopped parsley, the leaves from the sprig of mint, 2/3 of the peas, and 2/3 of the ham. Reserve remaining peas and ham.
  • Simmer over a gentle heat for 10 minutes. The peas should be cooked and the ham warmed throughout.
  • Working in batches, carefully blend the soup in a food processor until a thick, chunky soup is created. If the soup is too thin it can be reduced down next, and if too thick, add a little boiling water.
  • Pour the soup back into the saucepan, add the remaining peas and ham, and heat until the peas are cooked and the ham warmed right through. Check the seasoning and add black pepper and salt as desired. Be very careful with the salt as the ham is already quite salty.

3 Tbsp salted butter
2½ C carrots cut into coins
2 C chopped sweet yellow onion
1½ C coarsely chopped celery
3 cloves minced garlic
1 Tbsp dry parsley
¾ tsp salt
½ tsp black pepper
1 hearty or lightly trimmed ham bone (see picture in blog post)*
1 24 oz bag of rinsed and sorted dried green split peas**
9 C water
1½ C peeled and diced yellow potatoes
1½ C diced ham

Steps:

  • Melt 3 Tbsp of butter in a stock pot and then add the carrots, onion, and celery and cook for 3 minutes. Next, add the garlic, parsley, and black pepper and cook for 1 more minute. (This step adds a nice sweetness to the vegetables, but if you're making your soup in a slow cooker, just dump the ingredients into the cooker and skip sautéing the vegetables.)
  • Add the ham bone, split peas, and water to the pot and stir to evenly combine the vegetables and split peas. Cook the soup at a simmer for 2-2½ hours. Stir the soup periodically and scrape the bottom of the pot to prevent burning. The soup can also be cooked in a slow cooker on high heat for 4-5 hours, or on low heat for 8-10 hours. Midway through your cooking time, add the potatoes to the pot so that they don't become too soft. The soup is done when the split peas are soft and breaking apart and the ham is falling off the bone.
  • The last step is to remove the bone from the pot and any gristle that may have fallen off of it. Stir in 2 C of diced ham, bring back up to a simmer, and then remove the soup from the heat. Serve immediately. Store in the refrigerator for up to 5 days or freeze for up to 3 months.

3 tablespoons unsalted butter
2 cups diced yellow onion
2/3 cup diced carrot (about 2 medium)
1/2 cup diced celery (about 2 small)
4 sprigs fresh thyme
2 smoked ham hocks (about 1-1/2 to 2 pounds in total weight)
2 cups dried split green peas (sorted and rinsed)
8 cups water
3/4 teaspoon kosher salt (or more to taste)
1/4 teaspoon freshly ground black pepper (or more to taste)

Steps:

  • Melt butter in a large Dutch oven over medium-low heat. Add vegetables, stir, cover and cook for 5-8 minutes (stirring occasionally) until the vegetables just start to soften.
  • Add in the thyme leaves, ham hocks, peas and water. Cover and increase heat to high and bring to a boil. Once boiling, crack the lid and reduce the heat to a simmer and cook for 1 hour or until the ham is tender and the peas are melting into the soup.
  • Remove the ham hocks to a cutting board to cool and discard the thyme stems. Ladle 4 to 5 cups of the soup into a blender. Remove the center plug from the lid and cover with a kitchen towel to allow the steam to safely escape when pureeing. Pour the pureed soup back into the pot with the remaining soup and keep warm on low heat.
  • Discard the skin on the ham hocks and remove the meat from the bone (discard the bones as well). Dice the ham into small pieces and add it back to the pot. Taste and season with salt and pepper as desired and serve piping hot.

1 tbsp vegetable oil
1 medium onion, finely chopped
1 large potato (about 250g/9oz), cut into small cubes
300g/10½oz frozen petits pois or garden peas
400ml/14fl oz chicken stock, or vegetable stock if preferred
200ml/7fl oz semi-skimmed or whole milk
100g/3½oz thick cut ham
small handful fresh mint leaves, optional
salt and freshly ground black pepper

Steps:

  • Heat the oil in a large saucepan on low or medium heat, then add the onion and potato, season with salt and pepper, then stir to coat the vegetables in the oil.
  • Take a piece of baking paper large enough to cover the top of the pan, scrunch it up then unfold it. Lay the paper over the surface of the vegetables, sealing them in right to the edges of the pan (this helps cook the vegetables more quickly). Put a lid on the pan, cook on a low heat for 8-10 minutes, until the potatoes are tender and the onions are soft and translucent.
  • Remove the paper. Add the peas and stock to the pan, then bring to the boil. Cook for a couple of minutes, or until all of the peas have floated to the top and are tender and bright.
  • Take the pan off the heat. Using a stick blender, process the peas until very smooth. Add the milk (or, if preferred, use more stock, water or cream). Tear in most of the ham. Bring the soup back to a simmer, then season to taste with salt and pepper, remembering that the ham is fairly salty.
  • To serve, ladle the soup into bowls then scatter with the rest of the ham and a few torn mint leaves.

1 onion, chopped
1 medium potato, peeled and diced
1l ham or pork stock (see 'Try', below)
500g frozen petit pois
300g thickly sliced ham, trimmed of any fat and diced

Steps:

  • Heat a knob of butter in a saucepan and when lightly foaming gently cook 1 chopped onion until softened, but not coloured.
  • Tip in 1 peeled and diced medium potato and stir to coat in butter, then pour over 1l ham or pork stock. Simmer until softened.
  • Tip in 500g frozen petit pois and bring back to the boil. Cook for a couple of mins.
  • Remove from the heat and blend until smooth. Stir in 300g diced ham and serve.

1.1kg (21⁄2lb) unsmoked ham
1 bay leaf
1tbsp olive oil
1 onion, finely chopped
Salt and freshly ground black pepper, season to taste
1tbsp Dijon mustard
3 garlic cloves, finely chopped
2 sprigs of rosemary handful of thyme, leaves only
900ml (11⁄2 pints) hot beef stock for the slow cooker OR 1.2 litres/2 pints for the traditional method
450g (1lb) frozen peas
3 potatoes, peeled and chopped into bite-sized pieces

Steps:

  • Slow cooker method: Preheat the slow cooker, if required. Sit the ham and bay leaf in the slow cooker and cover with 900ml (11⁄2 pints) of water. Cover and cook on auto/low for 8 hrs or on high for 4 hrs, then remove the ham and set aside. Discard the stock, or strain and reserve a little to add to the soup. Heat the oil in a large heavy-based pan over a medium heat, add the onion, and cook for 3-4 mins until soft. Season with salt and pepper, then stir in the mustard, garlic, and herbs (reserve some thyme leaves for garnish). Add a little stock and bring to the boil, then tip in the peas (if you prefer them puréed, pulse them gently in a liquidizer or use a stick blender). Transfer to the slow cooker, add the remaining stock and the potatoes, cover, and cook on auto/low for 8 hrs or on high for 4 hrs.
