Make this delicious but easy paella for your next gathering. Our take on this classic grilled rice dish from Spain has shrimp and Andouille sausage over a bed of saffron rice with Ro*Tel® to give it just the right kick.

3/4 pound large shrimp peeled and deveined, thawed if frozen
1 teaspoon smoked Spanish paprika, divided
3/4 teaspoon salt, divided
1/4 teaspoon ground black pepper, divided
1 tablespoon olive oil
1/2 pkg (12 oz each) andouille sausage, cut into 1/4" thick slices
1 cup chopped yellow onion
3 cloves garlic, finely chopped
1 tablespoon fresh thyme, chopped
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
2 cups Arborio rice
1 large pinch saffron threads
4 cups reduced-sodium chicken broth
1 cup Birds Eye® Sweet Garden Peas
2 lemons, cut into 8 wedges each, optional
2 tablespoons Italian (flat-leaf) parsley, chopped, optional

Steps:

  • Place the shrimp in a medium bowl, add 1/4 teaspoon of the paprika, 1/4 teaspoon salt and 1/8 teaspoon pepper. Toss to combine and refrigerate.
  • In a deep 12-inch skillet, heat the olive oil over medium heat. Add sausage and cook until it has started to brown, about 3 minutes. Remove sausage and set aside.
  • Add onion and cook until softened. Add garlic, remaining paprika, and thyme; stir and cook until fragrant, about 1 minute. Add the Ro*tel® and cook about 3 minutes. Add the rice, saffron and remaining salt and pepper. Cook and stir about 2 minutes. Add the chicken broth. Increase heat to high and bring to a boil. Arrange the rice mixture in an even layer. Cover and reduce heat to simmer 12 minutes.
  • Stir in peas. Add shrimp, nestling them in cooking rice. Cover the pan and continue cooking 5 minutes. Arrange sausage around the pan, cover and continue cooking 2 minutes. Remove from heat. Top with parsley and serve with lemon wedges if desired.

My dad is from Spain and growing up we had the "real" thing for every holiday. I have been able to serve this to my extended family with no one the wiser and it is A LOT QUICKER AND EASIER than the traditional one and you don't need the Paella pan.

1 red pepper, chopped
1 green pepper, chopped
1 large onion, chopped
3 tablespoons olive oil
16 ounces stewed tomatoes
1 (14 ounce) can chicken broth
1 cup water
2 cups parboiled rice (Uncle Ben's is parboiled)
1 teaspoon turmeric
1 teaspoon paprika
2 garlic cloves, chopped
1 lb shrimp
1 lb scallops
1 lb boneless skinless chicken

Steps:

  • Chop the chicken into 1 inch chunks.
  • Salt, pepper and garlic powder the meat.
  • Brown in oil that has been heated in a large pot such as a Dutch Oven.
  • Remove chicken and add peppers, onion, garlic, and cook until soft (about 10 minutes).
  • Remove and put with chicken.
  • In the same pot, combine, the tomatoes (you may need to cut them depending on the brand) and the liquid with the broth and water.
  • Bring to a boil.
  • Add turmeric and paprika and stir in the rice.
  • Add the chicken and vegetables.
  • Cover tightly and reduce heat to simmer (low or med low).
  • Cook for 30-35 minutes or until all the liquid is absorbed.
  • Add shrimp and scallops be sure to PUSH THEM TO THE BOTTOM UNDER THE RICE.
  • Cook for 5-10 minutes uncovered or until the shrimp are pink.
  • You may add a can of peas which I don't but it is the traditional way.

You may not think of paella as a weeknight dish, but this half-hour recipe might change your mind. The trick is to start it on the stove and finish it in a superhot oven so you get a nice, crisp crust on the bottom. The name "paella" refers not to a combination of rice, seafood, sausage and other meats, but rather to the paellera, a large pan that looks like a flat wok. But you don't need one to make a good paella. A cast-iron skillet will do just fine. Shrimp is called for here, but you can use chicken, sausage, vegetables, scallops, pork or firm tofu in its place.

3 tablespoons olive oil
1 medium onion, minced
2 cups short- or medium-grain rice

Steps:

  • Preheat the oven to 500 degrees, or as near as you can. Warm the stock in a saucepan with the saffron. Place a 10- or 12-inch skillet over medium-high heat and add the oil. One minute later, add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the rice, and cook, stirring occasionally, until glossy -- just a minute or two. Season liberally with salt and pepper, and add the warmed stock, taking care to avoid the rising steam. Stir in the shrimp, and transfer the pan to the oven.
  • Bake about 25 minutes, until all the liquid is absorbed and the rice is dry on top. Garnish, and serve immediately.

2 tablespoons olive oil
3/4 pound medium shrimp, peeled and deveined
1 (12 ounces) chicken sausage, sliced in 1/2-inch rounds
1 medium onion, finely chopped
2 cloves garlic, minced
1 1/2 cups long-grain rice
1/4 teaspoon paprika
1/4 teaspoon ground turmeric
1 can (14.5 ounces) diced tomatoes
2 cans (14.5 ounces each) reduced-sodium chicken broth
Coarse salt and ground pepper
1 cup frozen green peas, thawed

Steps:

  • In a heavy 12-inch saute pan, heat 1 tablespoon oil over medium-high heat. Cook shrimp until just pink on both sides, 4 to 5 minutes (do not overcook). Transfer to a plate.
  • Add remaining tablespoon oil and sausage to pan; cook over medium-high heat until beginning to brown, about 2 minutes. Add onion, and cook, stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice; cook, stirring to coat, until rice is translucent, 1 to 2 minutes.
  • Stir in paprika, turmeric, tomatoes, and broth, scraping up browned bits from bottom of pan with a wooden spoon. Season with salt and pepper.
  • Bring to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all liquid, 20 to 25 minutes. Stir in peas; cook 1 minute. Stir in cooked shrimp; serve immediately.

1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
Kosher salt
Extra-virgin olive oil
8 ounces Spanish chorizo, sliced thinly on the bias
2 1/2 cups thinly sliced Spanish onion (about 1 large onion)
2 tablespoons minced garlic (about 4 cloves)
2 cups unsalted chicken stock
1/3 cup bottled clam juice
One 14-ounce can chopped fire-roasted tomatoes
1 1/2 cups frozen peas
1 1/2 teaspoons sweet Spanish paprika
1/2 teaspoon saffron threads
Canola oil spray
2 1/2 cups bomba rice or other short-grain white rice such as Arborio
12 ounces jumbo shrimp (21/25 count), peeled and deveined, tails intact
1 pound littleneck clams
8 ounces Prince Edward Island mussels
1/4 cup pimiento-stuffed manzanilla olives, finely chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Season the chicken with 1 teaspoon salt. Heat 1 tablespoon olive oil in a 10-inch skillet over medium-high heat. Sear the chicken on all sides until almost cooked through and beginning to brown, 5 minutes. Stir in the chorizo; cook until it releases its oil and begins to brown, another 5 minutes. Stir in the onions and garlic; cook just until the garlic is toasted and the onions are slightly softened, 2 minutes more. Stir in the chicken stock, clam juice and fire-roasted tomatoes. Add the peas, paprika, saffron and 1 tablespoon salt. Increase the heat to medium and slowly bring the liquid to a boil.
  • Meanwhile, lightly spray a baking sheet with canola oil. Spread the rice evenly onto the tray and lightly spray with more canola oil. Toast the rice in the oven until light golden brown in spots, 10 minutes.
  • At this point, the chicken mixture should be boiling. Ladle it evenly over the rice and return the baking sheet to the oven. Cover the paella by inverting another baking sheet and placing it on top. Bake until the liquid is completely absorbed and the rice is cooked through, about 20 minutes. Carefully remove the top baking sheet, and then remove the paella from the oven. Preheat the broiler.
  • Sprinkle the shrimp with 1/2 teaspoon salt. Combine the shrimp with the clams and mussels in a large bowl.
  • Arrange the shrimp, clams and mussels on the paella with the shell openings facing up. Lightly drizzle with 1 tablespoon olive oil. Broil--keeping a close eye--until the shrimp are cooked through, the clams and mussels have opened, and the rice is crispy, 2 to 3 minutes for a top broiler or 5 to 6 minutes for a bottom broiler. Sprinkle immediately with the olives and parsley.

3 tablespoons olive oil
salt and pepper
1 medium onion, sliced into thin wedges

1 cup long-grain white rice, uncooked

3 cups chicken broth
2 tablespoons capers
1 teaspoon cayenne pepper (or to taste)
12 Spanish olives, green with pimento, sliced (or more if desired)
1 cup frozen peas, thawed
1 (7 ounce) jar roasted sweet peppers or 1 large roasted red pepper, cut into strips

Steps:

  • In a large deep non-stick skillet, or a paella pan with cover, warm olive oil over medium-high heat.
  • Season the chicken with salt and pepper on all sides.
  • Add the chicken, and brown on all sides.
  • Remove chicken; set aside.
  • Add in the onion and garlic, saute until translucent.
  • Stir in the rice, cook for 1 minute.
  • Add in tomatoes, chicken broth, capers and the cayenne pepper.
  • Press chicken pieces down into the liquid.
  • Cover the pan, and bring the liquid to a slow simmer; reduce the heat to very low.
  • Cook until the rice is tender (about 30-40 minutes).
  • Top with olives and peas; stir very gently.
  • Arrange the pepper strips on top of the paella.
  • Cover the pan again, cook for 3-4 minutes, or until the peas are hot.

4 chicken thighs (boneless and skinless cut into 1 inch pieces)
2 chorizo sausages (cut into 1 inch pieces (I used Italian sausages))

1 large onion (chopped)
6 cloves garlic (minced)
1½ cups arborio rice (*)
14 ounce diced fire roasted tomatoes ((1 can))
4 cups vegetable broth (or chicken broth , low sodium)
1 tablespoon hot sauce (such as Tabasco or Sriracha, optional)
2 teaspoon smoked paprika
1 teaspoon saffron
1 pound large shrimp (shelled and deveined but keep tails on)
1 pound mussels (scrubbed and soaked)
1 pound clams (scrubbed and soaked)
2 tablespoon fresh parsley (chopped)
1 lemon (cut into wedges)

Steps:

  • Cook chicken and sausage: In a large paella pan heat the olive oil over medium heat. Add the chicken and sausage, season with salt and pepper, then cook for about 5 minutes until the chicken is no longer pink.
  • Add onion and garlic: Move the chicken and sausage to one side of the pan, then add the onion to the other half, season with a bit of salt and pepper and cook for 2 minutes until the onion becomes translucent and soft. Add the garlic and cook for another minute.
  • Cook the rice: Add the arborio and fire roasted tomatoes to the pan and stir well. Let the rice cook in the sauce from the tomatoes for about 5 minutes, you will notice it will start to brown on the bottom, which is what you're looking for. Add the broth, hot sauce, smoked paprika, saffron and season with salt and pepper if needed. Stir everything together and cover with a large lid. Cook for about 15 minutes or until most of the liquid has been absorbed by the rice, without stirring. The rice will not be cooked through at this time.
  • Add seafood: Turn down the heat to medium-low. Arrange the shrimp, mussels and clams over the rice, cover with a lid again and cook for another 10 minutes or until the mussels and clams open up.
  • Garnish and serve: Turn off the heat and garnish with parsley and lemon wedges. Before serving, stir everything together to allow all the ingredients to marry each other for the best flavors.

4 small lobster tails (6-12 oz each)
Water
3 tbsp Extra Virgin Olive Oil (I used Private Reserve)
1 large yellow onion, chopped
2 cups Spanish rice or medium-grain rice, soaked in water for 20 minutes and then drained
4 garlic cloves, chopped
2 large pinches of Spanish saffron threads soaked in 1/2 cup water
1 tsp Sweet Spanish paprika
1 tsp cayenne pepper
1/2 tsp chile pepper flakes (I used aleppo pepper)
Salt
2 large Roma tomatoes, finely chopped
6 oz French green beans, trimmed
1 lb prawns or large shrimp or your choice, peeled and deveined
1/4 cup chopped fresh parsley

Steps:

  • In a large pot, bring 3 cups of water to a rolling boil. Add the lobster tails and let boil very briefly (1-2 minutes) until pink. Turn the heat off. Remove the lobster tails with a pair of tongs. Do not discard the lobster cooking water. When the lobster is cool enough to handle, remove the shell and cut into large chunks.
  • In a large deep pan or cast iron skillet, heat 3 tbsp olive oil. Turn the heat to medium-high and add the chopped onions. Saute the onions for 2 minutes then add the rice, and cook for 3 more minutes, stirring regularly. Now add the chopped garlic and the lobster cooking water. Stir in the saffron and it's soaking liquid, paprika, cayenne pepper, aleppo pepper, and salt. Stir in the chopped tomatoes and green beans. Bring to a boil and let the liquid slightly reduce, then cover (with lid or tightly with foil) and cook on low heat for 20 minutes.
  • Uncover and spread the shrimp over the rice, pushing it into the rice slightly. Add a little water if needed. Cover and cook for another 10 minutes or until the shrimp turns pink. Finally, add the cooked lobster chunks. When the lobster is warmed through, turn heat off. Garnish with parsley.
  • Serve the paella hot with your favorite white wine.

1 onion, chopped
1 tsp each hot smoked paprika and dried thyme
300g paella or risotto rice
3 tbsp dry sherry or white wine (optional)
400g can chopped tomatoes with garlic
900ml chicken stock
400g frozen seafood mix
1 lemon, ½ juiced, ½ cut into wedges
handful of flat-leaf parsley, roughly chopped

Steps:

  • Heat the olive oil in a large frying pan or wok. Add the onion and soften for 5 mins.
  • Add the smoked paprika, thyme and paella rice, stir for 1 min, then splash in the sherry, if using. Once evaporated, stir in the chopped tomatoes and chicken stock.
  • Season and cook, uncovered, for about 15 mins, stirring now and again until the rice is almost tender and still surrounded with some liquid.
  • Stir in the seafood mix and cover with a lid. Simmer for 5 mins, or until the seafood is cooked through and the rice is tender. Squeeze over the lemon juice, scatter over the parsley and serve with the lemon wedges.

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.

6 free-range chicken thighs, skin on, bone in
plain flour
olive oil
100 g quality chorizo
1 onion
4 cloves of garlic
½ a bunch of fresh flat-leaf parsley
6 rashers of higher-welfare pancetta or smoked streaky bacon
2 litres organic chicken stock
2 large pinches of saffron
1 heaped teaspoon smoked paprika
500 g paella rice
2 small squid, from sustainable sources, optional
2 handfuls of fresh or frozen peas
10 large raw shell-on king prawns, from sustainable sources
500 g mussels, (cleaned) from sustainable sources, optional
1 lemon

Steps:

  • Preheat the oven to 190ºC/375ºF/gas 5.
  • Quarter each piece of chicken, then season with sea salt and black pepper and dust with flour.
  • Heat a splash of oil in a large, deep pan on a medium heat and fry the chicken until golden brown all over, then transfer to a baking tray and place in the oven for 20 minutes, or until cooked through.
  • Meanwhile, slice the chorizo, peel and finely chop the onion and garlic, and pick and finely chop the parsley leaves, finely chopping the stalks.
  • Put the pan back on the heat, add the sliced chorizo and pancetta or bacon and fry until browned and crispy. Add the onion, garlic and parsley stalks, then cook until soft.
  • Meanwhile, gently heat the chicken stock and infuse half with the saffron.
  • Add the smoked paprika, the rice and infused stock to the pan and leave to cook on a medium heat for around 20 minutes, stirring occasionally.
  • Meanwhile, halve the squid and lightly score all over with a regular eating knife (if using).
  • When the time's up, add the remaining stock, peas, prawns, and the mussels and squid (if using). Place a lid on the pan and cook for 10 further minutes.
  • Finally, add the cooked chicken, sprinkle over the chopped parsley and serve with wedges of lemon for squeezing over.

Steps:

  • In a very wide pan or paella pan, preheated over medium high heat, add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, crushed garlic, red pepper flakes, add rice and saute 2 or 3 minutes. Add saffron threads, bay leaf, broth, and thyme and bring liquids to a boil over high heat. Cover the pan with lid or foil and reduce heat to simmer.
  • In a separate nonstick skillet, over medium high heat brown chicken on both sides in 1 tablespoon extra-virgin olive oil, 1 turn of the pan. Season chicken with salt and pepper. Add peppers and onions to the pan and cook 3 minutes longer. Add chorizo to the pan and cook 2 minutes more. Remove pan from heat.
  • After about 13 minutes, add shellfish to the rice pan, nesting them in cooking rice. Pour in peas, scatter lemon zest over the rice and seafood, then cover the pan again. After 5 minutes, remove cover or foil from the paella and discard any unopened mussel shells. Stir rice and seafood mixture and lift out bay and thyme stems, now bare of their leaves. Arrange cooked chicken and peppers, onions and chorizo around the pan. Top with parsley and scallions. Serve with wedges of lemon and warm bread.

When I first do a version of a classic dish like paella, I try to use a minimum number of ingredients and steps to focus on technique. After learning the method, you'll ideally use a wider variety of ingredients, like clams, mussels, squid, and chicken, which will make your rice that much more interesting. Garnish with extra virgin olive oil, freshly chopped flat-leaf parsley, and lemon wedges.

1 pound jumbo shrimp, peeled and deveined, shells reserved
2 teaspoons olive oil
½ teaspoon saffron threads, or more to taste
2 ¼ cups chicken broth
1 tablespoon olive oil
8 ounces chorizo sausage, sliced into thin rounds
½ yellow onion, diced
2 cloves garlic, minced
1 ⅓ cups Arborio rice
½ cup green peas

Steps:

  • Cook and stir reserved shrimp shells and 2 teaspoons olive oil in a saucepan over medium heat until shells are pink and fragrant, 1 to 2 minutes. Stir saffron into shells; add chicken broth, bring to a simmer, and cook until broth is a rusty brown and fragrant, about 20 minutes.
  • Strain saffron broth through a fine-mesh sieve; measure out 2 cups of broth, pour into a small saucepan, and place over low heat to keep broth hot.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 1 tablespoon olive oil in a large, oven-proof skillet over medium heat. Cook chorizo slices in hot oil until browned, about 2 minutes per side. Add onion to sausage; cook and stir until soft and slightly translucent, about 3 minutes. Reduce heat to medium-low.
  • Stir garlic into chorizo mixture; cook and stir until fragrant, about 1 minute. Add rice to skillet and stir to coat rice completely in oil; stir in peas.
  • Pat rice mixture evenly into the bottom of the skillet. Arrange shrimp in a single layer over the top of the rice. Lay pepper strips around and in between shrimp; season with salt, paprika, and cayenne pepper.
  • Increase heat to high. When rice begins to sizzle in the skillet, pour reserved 2 cups hot saffron broth over the shrimp; gently shake the skillet to distribute liquid.
  • Bake rice mixture in the preheated oven until rice is almost tender and still a bit wet, about 20 minutes.
  • Place skillet over medium-high and cook until rice is tender, liquid is absorbed, and rice caramelizes and crusts slightly on the bottom of the skillet, 3 to 5 minutes.

Easy Paella Recipe with Chicken and Shrimp image

This one pan easy paella recipe is packed with flavor, but unlike traditional paella recipes, it doesn't take hours to cook, and there's just one pan to wash!

2-3 tbsp olive oil (or other oil of your choice)
2 tbsp white wine (optional)
12 oz chicken breasts ((2 breasts))
3 cups raw shrimp
1 large onion (chopped)
2 green bell peppers (sliced into thin strips)
2-3 cloves garlic (minced or pressed)
3 cups chicken broth
28 oz canned diced tomatoes
1 1/4 cups brown rice (short grain is best)
1 tsp turmeric
1/2 tsp garlic powder
1 tsp paprika (divided)
a pinch of oregano
salt and pepper to taste
chopped cilantro (optional)

Steps:

  • Chop your onion, mince your garlic, and slice your bell peppers.
  • Slice your chicken breasts by butterflying them first. To do that, place your hand on top of the chicken breast and slice horizontally straight into the middle until you can unfold the chicken breast and its width doubles, and then slice into thin pieces.
  • Once your chicken has been sliced, ensure your shrimp has been completely defrosted and rinsed. Pat it dry with some paper towel to remove excess water.
  • Heat a large skillet over medium heat. While the skillet is heating, season the chicken breast slices with sea salt and pepper and 1/2 tsp paprika. Add 1 tbsp of your oil to the pan and after the oil is heated, add the chicken and cook until browned. Be careful not to turn the chicken too often. This prevents the browning process (which adds flavour).
  • When the chicken is fully cooked, remove it to a bowl and place the pan back on the heat. Add 1 tbsp of oil and when it's heated, add the shrimp. While they're cooking, season the shrimp with the turmeric, garlic powder and a pinch of pepper (if you wish). You'll know they're done when they turn pink (a few minutes). Transfer to the same bowl as the chicken.
  • Next, add the last tablespoon of your oil to the pan and add the onion and garlic. Cook for 2-3 minutes or until the onions soften slightly. Add the few tablespoons of white wine to the pan. It will start bubbling vigorously right away, so stir it around with the onions and garlic and let the wine soften the browned bits (leftover from the chicken and shrimp) stuck to the bottom of the pan. If you don't have any wine on hand, a few tablespoons of chicken broth will do the trick. Once you've deglazed the pan, add the rice, tomatoes (in their juice! Don't drain them!), chicken broth, and spices.
  • Once it starts to boil, turn down the heat just slightly and simmer (covered) for about 15-20 minutes.
  • Feel free to throw in your bell peppers at any time while the mixture is simmering. Since we have two small children I added the bell peppers right away in order to make sure they were soft. If you prefer them only slightly tender, leave the peppers out at this stage.
  • The mixture will reduce considerably after 15-20 minutes. At this time, add the chicken and shrimp (and the peppers if you haven't yet) and continue simmering for 4-6 more minutes, or until rice is tender. Add salt and pepper to your taste (approx. 1/4 tsp each). The amount of salt you add will largely depend on what type of chicken broth you used; mine was homemade broth that contained no salt, so I added just under 1/2 tsp. If yours is store-bought, consider the amount of sodium in the broth before adding salt.
  • Garnish with a little bit of chopped cilantro if you wish, and serve!

4 tablespoons olive oil, divided
1 large sweet Vidalia onion or yellow onion, diced small
1 red bell pepper, trimmed, seeded, and diced small
3 cloves of garlic, pressed or finely minced
about 1.25 pounds boneless skinless chicken breast, diced into bite-sized pieces, seasoned with salt and pepper
1.1 pounds Bomba Rice
4 cups (32 ounces) low-sodium chicken broth
1 packet Paellero
one 15-ounce can petite diced tomatoes
1 cup water (or additional chicken broth), as necessary
1 cup peas (I used frozen that I added straight from freezer)
1/4 to 1/3 cup fresh flat-leaf Italian parsley, minced
salt and pepper, to taste
lemon wedges, for garnishing

Steps:

  • To a large skillet (15+ inches in diameter if possible) or paella pan, add 2 tablespoons olive oil, onion, pepper, and sauté over medium-high heat until vegetables begin to soften and lightly caramelize, about 5 to 8 minutes; stir intermittently.
  • Add the garlic and cook until fragrant, about 1 minute; stir intermittently. Remove the sofrito (the onion, pepper, and garlic) from the pan; set aside.
  • Add the remaining 2 tablespoons olive oil, chicken, season with salt and pepper, and cook the chicken until it's about 50% cooked through, stirring and flipping intermittently. Remove from the pan; set aside with the sofrito.
  • Add the bomba rice and cook to toast the rice for about 3 minutes, stirring intermittently.
  • To the chicken broth, add 1 packet Paellero, and stir to combine. Add the chicken broth to the rice.
  • Add the sofrito and chicken back to the skillet, add the tomatoes, 1 cup water, and simmer over medium-low heat for about 20 to 25 minutes or until rice is tender, chicken is cooked through, and liquid is absorbed. If necessary, you may need to add more than 1 cup water (or chicken broth) based on the texture of the rice. Taste it near the end of the cooking period and if it's too firm and all the liquid is absorbed or nearly so, add a bit more water using your judgment.
  • Add the peas, parsley, stir to combine, and cook for 1 to 2 minutes to warm through.
  • Taste the paella and add salt and pepper, if necessary, to taste. The saltiness of the chicken broth, tomatoes, whether you used Paellero, and personal preference for salt and pepper will dictate how much to use. I used about 2 teaspoons salt and 1 teaspoon pepper.
  • Garnish with lemon wedges and serve immediately.

1 teaspoon saffron threads ((see notes))
1 lb fresh or frozen medium shrimp, (peeled and deveined (if using frozen allow to thaw))
4 tablespoons olive oil, (divided)
1 link Spanish chorizo, (thinly sliced)
2 cups boneless chicken breast, (cut into 1-inch pieces ( 2 - 3 chicken breasts approx.))
Salt and black pepper to taste
1 cup onion, (finely diced)
1 cup red pepper, (finely diced + )
6 garlic cloves, (minced)
3 cups paella rice ((see notes))
1/4 cup fresh lemon juice
1 teaspoon sweet paprika
1 cup frozen peas
6 strips roasted red pepper ((optional))
Fresh parsley leaves, (chopped)

Steps:

  • Combine chicken broth and saffron in a medium saucepan. Bring to a simmer and keep it warm over low heat. Do not boil.
  • Rise and pat dry the shrimp with a paper towel. Season with salt and pepper to taste. Set aside.
  • In a large paella pan, or a very large skillet, heat 2 tablespoons of oil over medium heat. Add chorizo to the skillet, sauté for 3 minutes, stirring occasionally. Remove from skillet and set aside.
  • Add chicken to the same skillet and cook for 5 minutes, or until lightly browned and cooked. Season with salt and pepper to taste. Add onion and red pepper; cook for 5 minutes, stirring occasionally. Add garlic; cook for 1 minute until fragrant.
  • Add uncooked paella rice; cook (toast) for 2 minutes, stirring constantly.
  • Stir in hot chicken broth, cooked chorizo, lemon juice, sweet paprika, and 2 tablespoons olive oil; mix to combine. Reduce heat to medium-low and bring to simmer; cook for about 10 minutes, or until the rice has absorbed most of the broth and is almost tender.
  • Scatter the peas over the rice. Reduce heat to low, cover with foil or a lid, and cook for 5 minutes.
  • After 5 minutes, arrange shrimp and roasted red pepper strips over the rice, cover, and continue cooking for 5 minutes, or until the rice is tender. Remove from heat and let stand, covered, for 10 minutes.
  • Garnish with chopped parsley. Serve with lemon, if desired.

Steps:

  • In your cast iron pan (on medium heat), add olive oil, chorizo sausage, onion, garlic and red pepper . Saute until onions starts to soften up.
  • Add short grain rice and stir until the rice turns a little translucent
  • Add diced tomatoes, chicken stock (1 cup at a time), saffron, salt and pepper and turn the heat to medium low.
  • Stir and let rice cook in the chicken stock. Once the chicken stocks evaporates, continue to add the rest of the chicken stock in (one cup at a time until finish)
  • Add cooked shrimp, lobster, and frozen green peas. Stir to combine.
  • Taste the paella to ensure it has enough seasoning. Adjust if necessary. Add parsley as garnish.

12 raw jumbo shrimp (peeled & deveined)

1/2 cup tomato sauce (112 grams)
1/2 tsp sweet smoked Spanish paprika (1.30 grams)
2 1/2 cups fish broth (600 ml)
1/4 tsp saffron threads or powder (.17 grams)
1 cup uncooked round rice (200 grams)
2 lemon wedges
handful finely chopped parsley
sea salt & black pepper

Steps:

  • Rouchly chop 3 cloves of garlic, finely dice 1/2 onion, finely chop 1/2 red bell pepper and cut 1 cleaned tube of squid into small squares
  • Heat a paella pan with a medium-high heat and add in 1/3 cup extra virgin olive oil, after 1 minute season the olive oil with sea salt and add in the cut squid, mix with the olive oil and cook for 1 1/2 to 2 minutes, then remove from the pan and set aside, then add in the diced onion & chopped garlic into the pan, mix with the olive oil, after 1 minute add in the chopped bell pepper and continue to mix so everything evenly sautees
  • After 3 minutes, add in 1/2 cup tomato sauce and season everything with 1/2 tsp sweet smoked paprika, sea salt & black pepper, mix together, after 2 minutes and the tomato sauce has thickened, add the squid back into the pan, mix together and then add in 2 1/2 cups fish broth
  • Once the broth comes to a boil add in 1 cup round rice, give it one final mix so everything is evenly distributed, after 5 to 6 minutes add in the shrimp and the cleaned mussels, after another 5 minutes, lower the fire to a low-medium heat and simmer until all the broth has been absorbed by the rice, then hit back to a medium-high heat to achieve the socarrat, just go between 1 to 2 minutes, then remove the pan from the heat and cover
  • After 5 minutes uncover the pan, and garnish the paella with lemon wedges and finely chopped parsley, enjoy!

Clams: 1/2 lb
Seafood Mix: 10 oz
Red Bell Pepper: 1

Carmencita Paellero Seasoning: 1 packet
Chicken Stock: 2 cups
Tomato Puree: 4 tablespoons
Smoked Paprika: 1 tablespoon
Olive oil: 1/2 cup
Fresh Parsley: to taste
Salt: to taste
Lemon: to taste

Steps:

  • I used a paella pan however any thin bottom metal pan would work. Preheat your pan and add 1/4 of olive oil. Let the oil get hot and season it with a pinch of sea salt. Make sure to thaw and drain excess liquid from your seafood mix before using. Add seafood mix to the pan and sear for 5 minutes while stirring it on medium heat. Take the seared mix out of the pan and sit aside.
  • Add the rest of 1/4 olive oil to the pan. Wait for 10 seconds to make sure the oil heats up. Add nicely chopped onion. Saute for 1 minute and add nicely diced red bell pepper. Cook on medium heat stirring for another 4 minutes or until onions become translucent. Add tomato puree and smoked paprika, mix well.
  • Lower the heat to a minimum. Add 2 cups of chicken stock to the pan. Mix well and add 1 pack of Carmencita Paellero seasoning. Return seared seafood mix to the stock and stir for 1 minute.
  • Increase heat back to medium. Add 2 cups of arborio rice to the stock. Try to spread it evenly however DO NOT stir! The secret to a real authentic paella is a crispy "burnt" bottom - socarrat, so no stirring is allowed at any time. Instead to allow the stock to coat all of our rice, use a wooden spoon and dip it in several areas reaching the bottom of the pan. Let it cook poking rice with the soon occasionally for 15 min. Add water if necessary if your stock evaporates too quickly or adjust the heat. Add water in smaller portions and pour only around the rim of the pan.
  • Lay your shrimp ( I peel and devein mine) and clams on top of rice and let it all cook for another 5 minutes or until clams shells will start opening. If all the liquid from the rice is gone by this step, add a little bit of water. We need that steam to cook our shrimp, Add water in smaller portions and pour only around the rim of the pan.
  • Now it's time to create that famous socarrat, the crispy rice bottom which defines the real-deal paella. Crank up the heat to maximum and let paella crisp up on the bottom. Keep moving the pan so all the areas get even attention. Now remove from heat and cover with some foil immediately. Let it rest for 10 minutes and dress up with some fresh parsley and lemon wedges. Serve right in the pan and enjoy!

  • Peel and chop the onion and garlic.
  • In a large pan, heat up the oil on a low heat, add the onion with a pinch of salt and fry until golden.
  • Add the garlic and tomatoes, and cook for a further 2-3 minutes until the tomatoes are mushy.
  • In go the paprika, turmeric and rice, salt and pepper.
  • Give them a good stir, add the stock, and place the lid on.
  • Cook on a low to medium heat without stirring at all until most liquid is evaporated.
  • Throw in the seafood, and place the lid back again.
  • Cook for 7 minutes until the seafood is cooked through, and rice is cooked, and all the liquid is absorbed.
  • Garnish with fresh parsley.

1 onion

2 cups paella rice (risotto rice)

Steps:

  • Finely chop the onion and bell pepper. Then cut the chicken breast into small pieces
  • Preheat a big skillet with olive oil and add the chicken. Brown the chicken before adding the chopped bell pepper and onion
  • Keep on stirring the chicken en onion mix until soft and translucent. This takes about 5 minutes
  • Then add 2 teaspoons paella coloring or turmeric and stir it through the chicken mix
  • Add the to the skillet and let it absorb the color. Stir the rice through the skillet
  • Then add the caldo de paella or fish broth. As the rice is similar to risotto you need a lot of fluids so the rice can absorb it
  • Bring the rice to a light simmer. Once the broth cooks down you can add the squid and stir it through the rice
  • Then put mussels and shrimp on top of the rice and reduce the heat. Let the paella simmer for 20 to 25 minutes or until the rice has absorbed all the liquids
  • If the rice is still hard you can add 1/4 cup of broth
  • Serve immediately

Easy Paella image

As the me says, this recipe is super easy − especially as the key to a good paella is not to stir the rice. Add in all the ingredients and let it simmer until cooked. If you don't have a paella pan, a large frying pan will do. Serve it straight from the pan to keep the authenticity!

1 red onion
4 cloves garlic, finely chopped
250 g boneless chicken thighs, cut into 2cm pieces
1 Spanish spicy chorizo sausage, cut into small pieces
1-2 tsp sweet smoked paprika
400 g can Wattie's Chopped Tomatoes in Purée
2 ½ - 3 cups hot chicken stock
1 ½ cups paella (Callaspara rice) or risotto rice
1 red capsicum, deseeded, cut into 2cm pieces
15 round green beans, halved
12 frozen prawn cutlets
chopped parsley to garnish
lemon wedges to garnish

Steps:

  • Heat 2-3 tablespoons of olive oil in a paella pan or large low sided frying pan. Add onion and garlic and sauté for 2-3 minutes. Increase the heat and add chicken. Stir fry to brown the chicken. Add chorizo and smoked paprika. Continue cooking a further 2 minutes.
  • Add Wattie's Chopped Tomatoes in Puree and pour over 2 1/2 cups stock. Stir and allow to come to the boil. Scatter over rice. Reduce heat. Add red capsicum and green beans. Gently press the vegetables into the stock with the back of a spoon to ensure the rice is covered. Do not stir the rice. Top with the frozen prawns.
  • Simmer uncovered for approximately 20 minutes, until the rice is cooked. If the liquid reduces too quickly add a little extra stock. Remove from the heat. Cover pan with a lid or foil and allow to stand for 10 minutes. This will allow any extra liquid to be absorbed into the rice.
  • Garnish with chopped parsley and lemon wedges.

  • In the same skillet, heat the remaining 2 tablespoons olive oil over medium heat. Add the chorizo and cook, stirring, until browned, about 3 minutes. Add the shrimp and scallops and cook until the shrimp are pink and the scallops are opaque, about 3 minutes; season with salt. Add the peas and paprika, then the cooked veggies, rice and the parsley; season with salt and pepper.
