2 russet potatoes, cut in 1/2 lengthwise, halves cut lengthwise into fourths to make 16 big, fat wedges
1/4 cup extra-virgin olive oil
Kosher salt
2 tablespoons chopped parsley leaves
1/4 cup freshly grated Parmigiano-Reggiano

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a baking sheet in the hot oven for at least 5 minutes.
  • While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.

2 large Russet potatoes ((baking potatoes), peeled, ends trimmed and cut into 1/4 inch matchsticks)
1/2 tbsp salt
1/4 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp black pepper
1 tsp paprika ((or less to taste))
3 tbsp olive (, avocado or vegetable oil)

Steps:

  • Fill a large bowl with cold water and place potatoes in it. Let them soak for 15-30 minutes at room temperature.
  • Rinse and drain, place potatoes on a plate liked with paper towels and dry them well.
  • Preheat oven to 425 F. Line a large baking sheet with parchment paper.
  • Place potatoes in a clean and dry bowl. In a small bowl, combine all ingredients for the seasoning. Sprinkle over potatoes, make sure they are coated in seasoning evenly. Drizzle with oil.
  • Transfer potatoes on the baking sheet, leaving some space between each one.
  • Bake for 15 minutes. Then carefully flip fries, (using a metal turner works best). Bake for 15-20 more minutes until golden and crispy one the outside and tender on the inside. Let them cool for 5 minutes, then transfer to a plate and serve with your favorite dipping sauce.

6 sprigs fresh thyme, or 2 teaspoons dried

Steps:

  • Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
  • Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.

This recipe is healthy and tasty. Great for people watching cholesterol and heart. Got it from a cookbook at a bookstore. Prepare these at least a couple hours ahead of time. NOTE: You can also put a tablespoon of liquid smoke (any flavor will do and found in BBQ sauces section) and also Vegeta (found in delis or foreign food section). Before chilling it takes about 10 minutes to peel the potatoes that is if you want to, and if you keep the skin on there will be more time for you. The only part that takes time is chilling the potato strips for 1 hour. Cooking is about 35 minutes.

4 large potatoes, you can peel skin off and keep (2 lbs)
8 cups ice water
1 teaspoon garlic powder

2 tablespoons margarine or 2 tablespoons butter

  • Preheat oven to 400 F.
  • Melt margarine/butter over medium heat in a large heavy bottomed fry pan which has a heat resistant handle(I use cast iron)
  • When butter starts to sizzle add potatoes and let fry for 2 minutes.

  • Continue until all sides of potato cubes are browned.
  • Place in preheated oven for 15-20 minutes until potatoes are tender.*.
