NOTE: When selecting cucumbers for pickling, there are a few things to remember. For crisp pickles, choose ripe, pickling cucumbers, which are shorter and chunkier than regular eating cucumbers, which tend to be longer and smoother. Ripe pickling cucumbers are darker green, firm, and not "bloated." They should have plenty of spiny bumps on the outer surface. Overripe cucumbers make mushy pickles. They tend to have yellow or white streaks or spots and their surfaces are smoother. Choose pickles that have not been coated in wax, as the pickling brine cannot penetrate through the wax. The fresher the cucumbers, the crisper the pickles will be. For best results, try picking your own cucumbers from a local farm or farmers' market.

3 pounds pickling cucumbers, sliced into 1/4-inch thick slices
2 cups sliced onions
1/2 cup pickling salt
6 cups water
3 cups white vinegar
1 1/2 cups apple cider vinegar
3 1/2 cups sugar
2 tablespoons yellow mustard seeds
1/2 teaspoon turmeric
4 whole cloves
10 tablespoons roughly chopped garlic
24 dried cayenne peppers
2 teaspoons 100 percent Natural Pickle Crisp, optional

Steps:

  • Place cucumbers, onions, pickling salt, and water in a large, non-reactive bowl. Cover and allow cucumbers to soak for 2 hours. Drain the water from the onions and cucumbers through a colander and rinse well for 5 minutes. Drain well and set aside.
  • Combine the vinegars, sugar, mustard seeds, turmeric, cloves, garlic, and peppers in a medium saucepan over high heat. Bring to a boil, reduce heat to medium and add the cucumbers and onions. Bring to a simmer and remove the saucepan from the heat.
  • Fill each of the hot sterilized pint-size preserving jars with the pickle mixture, dividing them evenly, and enough of the liquid to come within 1/2-inch of the top. Add 1/2 teaspoon of Natural Pickle Crisp to each jar, if desired. With a clean damp towel, wipe the rim and fit with a hot lid. Screw on the metal ring just until the point of resistance is met. Process the jars in a hot-water bath for 15 minutes.
  • Using tongs, remove the jars, place on a towel, and let cool. Test the seals by allowing the jars to stand at room temperature overnight or until the lids pop. Tighten the rings and store in a cool dry place. Let the pickles age for at least 2 weeks before using.

½ cup kosher salt
4 cups water
10 medium pickling cucumbers, sliced lengthwise into spears
4 cups white sugar
3 cups distilled white vinegar
1 cup water
2 tablespoons whole mustard seeds
2 teaspoons celery seed
1 teaspoon ground dried turmeric
1 tablespoon pickling salt
6 large carrots, peeled and sliced lengthwise into sticks
4 green bell peppers, seeded and cut into strips
4 red bell peppers, seeded and cut into strips

Steps:

  • Make a brine by dissolving 1/2 cup of salt in 4 cups water in a large container, place the cucumber spears into the brine, and let stand overnight.
  • The next day, drain the cucumbers, rinse well with water, and set aside.
  • Combine the sugar, vinegar, 1 cup of water, mustard seeds, celery seed, turmeric, and pickling salt in a large nonreactive pot, and bring to a boil. Add the carrot sticks, and boil for 2 minutes, until the carrots are cooked but not mushy. Stir in the pepper slices and cucumbers, and bring back to a boil.
  • Sterilize canning jars and lids in boiling water for at least 5 minutes. Pack the pickles into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings. Process in a boiling water bath canner for 15 minutes, remove the jars, and let cool to room temperature.
  • Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water

1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Love these Sweet Pickles, one of the best sweet pickle recipes in my collection and one of the best I have ever tasted. This is one of those old old recipes shared by a lady that made really great pickles. Very easily made and not as time consuming as it sounds. While modern safety method requirements may call for processing I don't process my pickles as I find it changes the taste and texture, you may do so if you wish. As with many of the old recipes some things just do not enter well ... with this one it's you have to be making up enough of each of the brine solutions to completely cover! NOTE be sure to use non - reactive containers ( stainless steel - unchipped enamel/porcelain, assure all your plastic bowls and containers are food grade)

4 quarts cucumbers, cut in 1/2 inch pieces
2 cups pickling salt
16 cups water
4 quarts water
1 cup vinegar
2 cups water
1 teaspoon alum
2 cups vinegar
2 cups water
8 cups sugar
1 teaspoon turmeric
1 tablespoon pickling spices, tied in a bag

Steps:

  • STEP ONE: Cut cucumbers in 1/2 inch pieces or a little larger and place in a crock or large glass container. Bring the soaking brine to a boil, pour over cut cucumbers, cover with a clean cloth and weigh down with a plate. Cover crock with a clean tea towel.
  • Let stand three days.
  • STEP TWO: Drain, put back in crock and cover with fresh water. There is no salt added to this.
  • Let stand two days.
  • STEP THREE: Drain and place back in crock.
  • Bring the pickle solution with the alum to a boil and simmer two minutes pour over.
  • Stand overnight.
  • STEP FOUR: Drain and place back in crock. Make Sweet Pickle brine, bring to a boil and pour over. For three days drain this syrup into a large pot and bring to a boil. Pour back over the cucumber slices. The third day once again bring the syrup to a boil. Put pickles into sterilized jars, pour hot brine over and seal.
  • I often replace some of the cucumber pieces with cauliflower chunks, making for a mixed sweet pickle.
  • Makes about eight pints.

1 quart vinegar

  • 1st day-.
  • Slice cucumbers peeland de-seed and soak in 2 gallons of water with 1 cup lime.
  • 2nd day-.
  • Rinse cucumbers good and mix the sugar and other spices and rinsed cucumbers in vinegar mixture and soak for 12 hours. Cover rinsed cucumbers with ice while mixing vinegar mixture. Be sure to drain cucumbers well, before adding to liquid.
  • 3rd day-.
  • Drain vinegar off cucumbers and heat to boiling, then add cucumbers and cook 20 minutes. Pack in jars and seal while hot. Can use green food coloring if desired.

4 lbs cucumbers, after slicing
1/3 cup salt
1 quart white vinegar
1 cup sugar
1 tablespoon celery seed
1 tablespoon mustard seeds
2 tablespoons whole mixed pickling spices
1 tablespoon alum
5 cups sugar

Steps:

  • Slice cucumbers about 1/8 inch thick.
  • Pour salt over cucumbers.
  • Pour enough boiling water over all to cover.
  • Stir and let stand 8 hours or overnight.
  • Drain and discard brine.
  • In a saucepan, combine vinegar, 1 cup sugar, spices and alum.
  • Bring to a boil.
  • Put cucumbers in a large glass jar or plastic bucket with lid or a stoneware crock.
  • Pour boiling vinegar mixture over cucumbers.
  • Cover and let stand.
  • Next day, and each consecutive day for 5 days total, stir in one additional cup of sugar.
  • Do not reheat when sugar is added.
  • At the end of the 5th day, pickles are done and may be stored in covered jar.
  • Do not seal jars.
  • Pickles will keep indefinitely and get better with age.

  • Drain all existing juice from pickles, cut pickles in chunks & return to jar after washing jar in hot water. Boil the sugar & vinegar until sugar dissolves & liquid is clear.
  • Pour juice over pickles, put lid on & let the pickles set for a while, the lid should "pop" (the lid should seal just like regular canning). Jar should be hot when you refill with the hot liquid.

1 quart vinegar
8 cups sugar
2 tablespoons pickling spices
food coloring, green

2 sticks cinnamon (for red pickles only)

Steps:

  • Day 1: Wash cucumbers and place in a crock.
  • Cover with boiling water 2 times a day for 2 days.
  • Day 3: Rinse in warm water. Cut into 1/2 inch chunks and cover with boiling water. Add alum.
  • Day 4: Drain, rinse and cover with boiling syrup: Vinegar, sugar, spices food coloring (If using red, add cinnamon sticks).
  • Cover with this syrup for four days. Reboil two times a day.
  • Day 8: Pack chunks into canning jars, cover with boiling syrup and seal. Pickles are ready to eat now. Extra syrup may be saved and added to another batch.
