EASY VEGETABLE RATATOUILLE



Easy Vegetable Ratatouille image

An easy, classic French-style vegetable casserole, made with roasted eggplant, zucchini, sweet peppers and tomatoes

1 pound eggplant
2 small zucchini (8-10 ounces total, sliced into 1/2" circles)
1 red or orange bell pepper (seeded and sliced into large bite-size pieces)
1 small red onion (sliced (about 1/2 cup))
3 tablespoons extra-virgin olive oil
1 ½ teaspoons salt
2 teaspoons chopped fresh thyme leaves plus 3 or 4 sprigs
1 cup canned tomato puree or crushed tomatoes
2 cloves garlic (crushed or grated)
½ teaspoon crushed red pepper
Freshly ground black pepper
4 plum tomatoes or other small tomato (sliced)
3 ounces soft goat cheese (omit for vegan)
2 tablespoons prepared basil pesto

Steps:

  • Preheat oven to 425 (220 C) degrees.
  • Peel the eggplant, if desired, or leave some of the skin on in strips. Trim off the stem and sliced into quarters lengthwise, then slice into 1-inch thick half moons.
  • Put the eggplant in a large bowl with the zucchini, bell pepper and onion. Drizzle with the olive oil, 1 teaspoon salt and the chopped thyme and toss together.
  • Pour the tomato puree into a 4-5 quart casserole or baking dish. Stir in the remaining ½ teaspoon salt, garlic, red and black pepper and spread over the bottom of the dish.
  • Arrange the vegetables in the dish in one layer. Top with the sliced tomatoes and thyme sprigs. Bake 30-35 minutes. The juices should be bubbling and the eggplant tender when pierced with a the tip of a knife. Remove the thyme stems (you can crumble the leaves over the dish first).
  • Sprinkle the goat cheese over the ratatouille and drizzle with the pesto. Serve warm or at room temperature.

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in a heavy, large Dutch oven over medium heat. Add garlic; stir 1 minute.
  • Add eggplant, green bell peppers, tomatoes, onion, zucchini and basil. Saute for 5 minutes.
  • Cover and simmer until all vegetables are tender, stirring occasionally, about 25 minutes.
  • Uncover pot and simmer until juice thickens, stirring occasionally, about 10 minutes.
  • Mix in vinegar; season to taste with salt and pepper.
  • Spread in 9-inch pie dish.
  • Sprinkle with cheese, if desired.
  • Bake until heated through, about 20 minutes.

1 tablespoon olive oil
5 cloves garlic, minced
1 onion, chopped
2 cups peeled and diced eggplant
2 cups chopped zucchini
1 green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 tablespoon dried basil
1 tablespoon dried parsley
½ teaspoon salt
⅛ teaspoon black pepper
1 (8 ounce) package frozen cheese ravioli
¾ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C); spray a 2 1/2-quart baking dish with cooking spray.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the garlic, onion, and eggplant with the garlic until the vegetables have begun to soften, about 8 minutes. Stir in the zucchini, bell pepper, tomatoes, basil, parsley, salt, and black pepper; bring the mixture to a boil, stirring frequently. My easy way to make ratatouille a colorful classic French summer dish!

2 medium eggplants, (cubed)
4 medium zucchini (or a mix of zucchini and yellow squash) (cubed)
3 medium bell peppers (use a different color), (cubed)
2 medium onion, (diced)
4 garlic cloves, (peeled and finely diced)
1 lbs tomatoes, (cubed)
3-4 sprig of thyme,
2 bay of leaves,
2 1-inch snips of rosemary (optional)
salt, pepper,
olive oil

Steps:

  • Preheat oven to 425°F.
  • Cut all the vegetables (eggplant, zucchini, bell pepper, tomatoes, onions) so that they are approximately the same size and can cook evenly. Transfer them on a large rimmed baking tray. Add the garlic and herbs (thyme, bay leaves, and rosemary (optional). Sprinkle enough salt, pepper, and olive oil to enrobe them. Mix with your hands and spread them evenly on the baking sheet. It might seem crowded but they will shrink while cooking.
  • Put the baking tray in the oven for 15 minutes. Lower the temperature oven to 375 F for another 15 minutes. Then lower the temperature oven to 350 F for the rest of the time (about 30 more minutes). I recommend stirring occasionally (every 15-20 minutes) to ensure the vegetables cook evenly. In the end, they must be very tender and hold their shapes.
  • Before serving, remove the herbs and add some basil to garnish (optional).

3 courgettes , cut into bite-sized pieces
1 red pepper , cut into bite-sized pieces
3 tbsp olive oil
8 large pork sausages
2 garlic cloves , crushed
400g can chopped tomato

Steps:

  • Heat oven to 220C/200C fan/gas 7. Place the onion, courgettes and red pepper in a baking dish, large enough to fit them in a single layer. Drizzle over 2 tbsp of the olive oil and season. Cook in the oven for 20 mins.
  • Meanwhile, heat the remaining olive oil in a frying pan and cook the sausages for about 5 mins until lightly browned on all sides.
  • Stir the garlic and chopped tomatoes into the veg, season again, then place the sausages on top and return to the oven to cook for a further 20 mins until the vegetables are tender.

2 aubergines
3 medium courgettes
2 red peppers
2 tbsp olive oil
1 large onion , finely diced
3 garlic cloves , crushed
2 x 400g cans chopped tomatoes
1 tsp dried oregano , basil or Italian mixed herbs
small bunch basil , chopped, plus a few leaves to serve
1 tbsp red wine vinegar
1-2 tbsp sugar

Steps:

  • Dice the aubergine, courgette and pepper into 3cm chunks. Heat the olive oil in a large casserole or deep frying pan over a medium heat. Fry the onion for 10 mins until soft and translucent. Add the chopped veg, turn the heat to high and fry for another 10 mins until softened.
  • Stir the garlic into the pan, and toss everything together, frying for 1 min more. Tip in the chopped tomatoes, plus half a can of water (200ml), the dried herbs and the chopped basil. Simmer for 20 minutes on a medium heat, stirring occasionally, until the veg is tender and the tomatoes are thick and coating the veg. Season and add the vinegar and sugar to balance the sweet and acidity of the tomatoes. Scatter with the basil leaves, and serve with rustic bread, or pasta.

1 eggplant, cut into 1/2 inch cubes

1 cup grated Parmesan cheese
2 zucchini, sliced
1 large onion, sliced into rings
2 cups sliced fresh mushrooms
1 green bell pepper, sliced
2 large tomatoes, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 1 1/2 quart casserole dish with 1 tablespoon olive oil.
  • Heat remaining 1 tablespoon olive oil in a medium skillet over medium heat. Cook and stir garlic until lightly browned. Mix in parsley and eggplant. Cook and stir until eggplant is soft, about 10 minutes. Season with salt to taste.

  • Make the sauce: Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes.
