EASY AS PIE 10-MINUTE NO-RISE THIN-CRUST PIZZA DOUGH
This came from one of the volumes in my e-cookbook collection-- it's meant to yield one 12" pizza but I get about two 8" or 9" individual pizzas with it. You can bake the raw dough with sauce and cheese on it but I prefer to bake ahead and freeze the crusts so I can just thaw it out then put sauce and toppings on. According to the instructions, you can use regular all-purpose flour if you don't have bread flour. (1 3/4 cups AP flour + 5 1/4 teaspoons vital wheat gluten = 1 3/4 cups bread flour)

Steps:
- Proof the yeast in the warm water with the honey or sugar for 8-10 minutes or until foamy.
- Add the remaining ingredients together and knead well, about 2-5 minutes.
- If the dough seems a little sticky, dust your hands with some flour and knead again.
- Grease a pizza pan or pie pan with cooking spray, and place the dough into it-- entire thing if a 12" pie, or half for an 8" or 9" pan.
- I prefer to bake these crusts ahead of time-- but if you want to eat it now, you can put the sauce, cheese, toppings, etc. on it and use the same baking instructions.
- Bake at 500F for 8-12 minutes or until the edges are nice and brown.
NO-YEAST PIZZA DOUGH
The remarkable thing about this easy pizza dough is that it contains no yeast -- and no yeast means no waiting. The pizza takes about 20 minutes from start to finish, and comes out fluffy and crisp on the bottom.

Steps:
- Position an oven rack about 8 inches from the broiler element and preheat the broiler.
- Combine the flour, cornmeal, baking powder, sugar, salt and baking soda in a food processor and pulse to combine. With the motor running, add 1/2 cup water and process, scraping down the sides as needed, until the flour is incorporated and the dough comes together to form a ball that is still slightly sticky.
- Lightly flour a work surface and your hands. Form the dough into a neat ball between your hands and put on the work surface. Sprinkle with flour and roll into a 10-inch circle.
- Spread the olive oil in a 12-inch cast-iron skillet to cover the bottom. Put the dough in the skillet and flip so both sides are coated in oil. Top with the desired toppings.
- Put the skillet over high heat and cook for 5 minutes, then transfer to the boiler and cook until the cheese is melted and golden, about 4 minutes.
EASY HEALTHY NO RISE PIZZA CRUST
This isn't spectacular, but it's the best I've come up with for a no rise crust without sugar or white flour that I like and my toddler will eat. This makes one regular size crust (12-14 inch diameter) and lasts my 2 year old and I for 2 meals. When hubby comes home from Iraq... I'll probably need to make a second just for him :-) Comments welcome, I'm open for changes!

Steps:
- Dissolve the yeast in the water in a large bowl. Add the rest of the ingredients in and mix.
- Dump onto a well floured surface. Knead into a smooth dough (takes me about 3-5 minutes tops).
- Roll out and press down onto a greased pizza pan (I like to sprinkle a little corn meal on the pan before pressing down the dough).
- Add toppings as desired and bake at 450 for around 12-15 minutes. If you have a stone, I bake it on the bottom rack so it evenly cooks the crust without the cheese getting too crunchy.
- You can also add some wheat germ or ground flax seed for added healthiness.

NO-KNEAD FOOD PROCESSOR THIN CRUST PIZZA DOUGH
Yes, it's a long name for the easiest thin crust pizza dough ever. For a thicker crust let the dough rise for 45 minutes or more. This is extremely quick and the dough is really stretchy and easy to work with. Adapted from the Canadian Living Cookbook.

QUICK AND EASY PIZZA CRUST
This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!
