  • In a small bowl, combine the first six ingredients. Crumble beef over mixture and mix well. 1 can (5-1/2 ounces) V8 juice
1/2 cup seasoned bread crumbs
1 envelope onion soup mix

  • In a large bowl, combine the egg, V8 juice, bread crumbs, soup mix, cheese and garlic powder. Crumble beef over mixture and mix well. 2 slices fresh white bread, crusts removed
500g pack minced pork
1 onion, roughly chopped
1 garlic clove, roughly chopped
big handful of parsley
1 tbsp fresh chopped oregano or 1 tsp dried
4 tbsp freshly grated parmesan
1 egg, beaten
8 slices prosciutto

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Put bread in processor and blitz to make crumbs, then tip into a bowl with the pork.
  • Tip the onion, garlic and herbs into the food processor and process until finely chopped. Add to the bowl with the parmesan and egg. Finely chop 2 slices of the prosciutto and add to the mix with some salt and pepper. Mix well with a fork or your hands.
  • Use the rest of the prosciutto to line a 1.5 litre loaf tin. Spoon in the meatloaf mix and press down well. Flip the overhanging prosciutto over the top, then put the loaf tin into a roasting tray.
  • Pour hot water from the kettle into the roasting tray to come halfway up the loaf tin and bake for 1 hr until loaf shrinks from the sides of tin.
  • Cool in the tin for 10 mins, then drain off any excess liquid and turn out onto a board. Cut into thick slices and serve warm or cold with salad.

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

2 tablespoons unsalted butter
1 medium onion, diced
2 large garlic cloves, minced or grated
2 pounds ground beef OR 1 pound ground beef and 1 pound ground pork (see note)
1 1/2 teaspoons salt
½ teaspoon black pepper
2 eggs, lightly beaten
2 tablespoons Worcestershire sauce
2 tablespoons chili sauce, plus more for topping the meatloaf
3 1/2 tablespoons sour cream
½ cup seasoned bread crumbs
1 tablespoon hot sauce, such as Frank's RedHot
1 teaspoon dried sage (optional)
½ tablespoon yellow or whole grain mustard
¼ cup cooked and crumbled bacon

Steps:

  • Preheat oven to 350℉.
  • In a saute pan over medium heat, melt butter. Add diced onion and cook, stirring occasionally, for about 5 minutes, or until soft and translucent. Add the garlic and a pinch of salt and pepper and cook for 1 minute more. Remove to a bowl and set aside to cool.
  • In a large bowl, add the meat, salt & pepper, eggs, Worcestershire sauce, chili sauce, sour cream, bread crumbs, hot sauce, dried sage, bacon, and the cooked onion and garlic.
  • Use your hands to thoroughly mix everything together. Alternatively, use a stand mixer with a paddle attachment on medium speed for about 2-3 minutes.
  • Scoop the meat mixture into a 9x5-inch loaf pan. Spread the mixture evenly, using your hands to press it evenly into the bottom of the pan.
  • Cover with foil and bake for 45 minutes.
  • After 45 minutes, remove from the oven and remove the foil. Carefully drain off most of the fat from the pan into a heatproof bowl. Evenly top the meatloaf with a generous amount of chili sauce. Return the pan to the oven and bake for another 15 minutes, or until a thermometer inserted into the center reads 160℉.
  • Let the cooked meatloaf rest uncovered for at least 10-15 minutes before serving.

This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. Steps:

  • In a small bowl, combine ketchup, brown sugar and mustard; set aside.
  • In a large bowl, combine 1/3 cup of the ketchup mixture and the remaining ingredients; mix well.
  • Spray a foil lined, shallow baking pan with non-stick spray. Shape mixture into loaf and bake at 350 for 1 hour; remove from oven and pour remaining sauce over loaf; bake for 10 more minutes and remove.
  • Let stand for 5 minutes before slicing.

1 tbsp. Worcestershire sauce
1 tsp. dried parsley leaves
3/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. ground black pepper
For the Topping:
1/4 cup ketchup
2 tbsp. packed light brown sugar
1 tbsp. red wine vinegar

Steps:

  • Preheat oven to 350° Fahrenheit.
  • In a large bowl, add the beef, bread crumbs, onion, milk, egg, 2 tablespoons ketchup, worcestershire sauce, parsley, salt, garlic powder, and pepper. Use your hands to mush and mix these ingredients together until well combined.*
  • Add the meat mixture to a loaf pan. Pat the meat down into an even layer.
  • In a small bowl, add 1/4 cup ketchup, the brown sugar, and vinegar. Stir to combine. Pour the sauce on top of the meatloaf and spread it into an even layer.
  • Bake uncovered for 55 minutes.
  • Let the meatloaf rest for 8-10 minutes before serving (or it may fall apart).**

20 saltine crackers, crushed
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 large egg
1 teaspoon​ paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons milk
1 teaspoon​ Worcestershire sauce
For Topping:
1/2 to 3/4 cup ketchup or barbecue sauce

Steps:

  • Gather the ingredients. Pre-heat the oven to 350 F.
  • Grease an 8 1/2 x 4 1/2-inch loaf pan or line it with foil and then lightly grease it. Alternatively, for a free-form loaf, line a rimmed baking pan with foil.
  • In a large bowl, combine the ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic powder, salt, thyme, black pepper, 1/3 cup of ketchup , milk, and Worcestershire sauce .
  • Pack the meat mixture into the loaf pan or shape it and place it on the baking pan.
  • Bake the meatloaf for 1 hour. Carefully pour excess grease into a can or jar (dispose of it in the trash after it cools).
  • Spread the meatloaf with 1/2 to 3/4 cup of ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160 F on an instant-read food thermometer inserted into the center. (If you have instead swapped ground turkey or chicken for the beef, cook the loaf to an internal temperature of 165 F.)
  • Let the meatloaf rest for ten minutes before slicing so it holds together well. Then, serve and enjoy!

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 large onion (finely chopped or grated)
1 cup breadcrumbs (I used Panko)
1/4 cup milk
1 pound ground pork
1 pound ground beef
1/2 green bell pepper ( finely chopped)
1 egg
1 cup barbecue sauce (I used Guy Fieri's Sweet and Smoky Kansas Style BBQ sauce)
1 teaspoon Worcestershire sauce
1 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)

Steps:

  • Preheat oven to 350 F degrees. Spray a loaf pan with cooking spray; set aside.
  • Grate the onion (if not using chopped) in a large bowl. Add the breadcrumbs and the milk and stir it together. Add the rest of the ingredients but only add about 3/4 cup of the barbecue sauce to the meat mixture. Mix the entire meat mixture really well using your hands or a spoon.
  • Add the meat mixture to the prepared loaf pan and shape it into a loaf. Brush with the remaining barbecue sauce over the top of the meatloaf.
  • Bake for 60 to 80 minutes or until done. Best way to tell when a meatloaf is done is to use an instant-read thermometer. Insert the thermometer into the meatloaf and when it reaches 160 degrees F, it's done.
  • Let it sit for 10 minutes before slicing into it.
