Mashed potatoes become rich and creamy with the addition of Classico® Fresh Alfredo sauce! An added punch of roasted garlic, fresh herbs, and a surprising crunch top off this family-pleasing potato casserole!

1 head fresh garlic
1 tablespoon olive oil
3 pounds gold potatoes, peeled and cubed
½ (15 ounce) jar Classico® Fresh Alfredo Sauce
½ cup milk
5 tablespoons butter, melted and divided
Salt and pepper to taste
2 eggs, beaten
½ cup chopped fresh Italian parsley
¼ cup chopped fresh chives
¼ cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly oil a 2-quart baking dish.
  • Cut off the top of the garlic head to expose the tops of the cloves. Place garlic on a sheet of foil and drizzle with olive oil. Seal the foil around the garlic. Roast until soft, about 25 minutes. Cool. Reduce oven temperature to 375 degrees F (190 degrees C).
  • Place potatoes in large pot and cover with water. Set over high heat and bring to a boil. Simmer until the potatoes are fork tender, about 15 minutes. Drain; return to pot.
  • Pour the Classico® Fresh Alfredo sauce, milk, and 4 tablespoons of the melted butter into the pot. Using a hand mixer, mix the potatoes until they no longer have lumps.
  • Squeeze the soft roasted garlic into the potatoes; add salt and pepper to taste. Mix well.
  • Mix the beaten eggs into the potatoes. Reserve a tablespoon of the parsley and chives for topping, and stir the rest into the potatoes. Spread the potato mixture into the prepared baking dish.
  • Mix the panko with the remaining tablespoon melted butter; sprinkle evenly on top of the potatoes.
  • Bake until the potatoes are golden brown, about 25 minutes. Garnish with the remaining parsley and chives.

Steps:

  • In a large bowl, combine the Alfredo sauce, milk and garlic powder. Pour a fourth of the mixture into a greased 13x9-in. baking dish. Layer with a fourth of the potatoes; sprinkle with 1 tablespoon Parmesan cheese, salt and pepper., In a large bowl, combine the turkey, broccoli and 1-1/2 cups Swiss cheese; spoon a third over potatoes. Repeat layers twice. Top with remaining potatoes. Sprinkle with remaining Swiss and Parmesan cheeses. Spread with remaining Alfredo sauce mixture., Cover and bake at 400° for 45 minutes. 5 lbs peeled diced potatoes
1/2 cup butter
1 (8 ounce) package cream cheese
2 teaspoons garlic powder
2 cups milk
6 ounces grated parmesan cheese

Steps:

  • Bring 5lb potatoes to boil in salted water until tender, drain water, then put aside. Hint: You can also use Simply Potatoes in your grocery's refrigerated section and just pop each of them in the microwave for 3 minutes. This really speeds things up.
  • Melt butter in a medium sauce pan then add cream cheese and garlic powder. Stir until smooth. Add milk, a little at a time, then stir in Parmesan. Remove from heat when the sauce reaches a desired consistency. Hint: you can also use your favorite jarred Alfredo sauce, or buy a packet of McCormick's instant creamy garlic Alfredo mix (follow cooking directions on the package). They'll both do the trick, as well.
  • Add Alfredo sauce to diced potatoes and mash together until it reaches a fluffy texture.
  • Add salt and pepper to taste. Garnish with parsley.

Made with a jar of prepared Alfredo sauce which makes it simple. I haven't tried it yet. Note the salt and pepper amounts sound low to me for 5 lbs. of potatoes but there will no doubt be salt and pepper and Parmesan cheese in your sauce so adjust salt and pepper to taste. This calls for 1/2 tsp. salad dressing base but Zaar didn't recognize that (nor did I) but I assume it's a dry salad dressing mix (I think Good Season's Italian would be good here).

2 -3 medium yukon gold potatoes
4 garlic cloves, minced
3 tablespoons butter
1/4 cup milk
1/2 cup sharp white cheddar cheese
1/2 cup plain breadcrumbs
1/2 cup hot & spicy breadcrumbs (or make your own by mixing plain breadcrumbs with red pepper flakes and cayenne pepper)
salt and pepper
1/4-1/2 cup vegetable oil
1 tablespoon mayonnaise
1 tablespoon tomato ketchup
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley flakes

Steps:

  • For Pink Sauce -.Mix the mayonnaise, ketchup, thyme, and parsley together in a bowl. Let is sit until serving.
  • For Mashed Potato Balls -.Peal potatoes and cut them into equal sized chunks. Bring to a boil in salted water and cook until fork tender. Drain.
  • Mince the garlic cloves by hand or by a garlic mincer (preferred) and cook in one tablespoon butter in the same pot that was used to cook the potatoes.
  • Mash the potatoes on a cutting board or in a bowl, then add the garlic. Add milk and the remaining butter as well. Mix until combined.
  • Add cheese to mashed potato mixture until melted.
  • Add the plain breadcrumbs or as much needed for the potato mixture to come together while mixing. Move the potatoes from the pot into another bowl.
  • Add 1/4 - 1/2 cup Vegetable Oil to the pot to fry the potato balls.
  • Roll the mashed potatoes into balls then roll them lightly in the Hot & Spicy breadcrumbs. Fry three balls at a time in the pot, then drain on a paper towel.
  • Serve with the Pink Sauce.

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 egg, lightly beaten
2 cups all-purpose flour, approximately
1 (15 ounce) jar alfredo sauce, approximately
1 1/2 cups fresh baby spinach leaves
1 whole red bell pepper, chopped
1 cup sun-dried tomato
2 teaspoons italian seasoning
4 ounces log goat cheese, crumbled
4 slices turkey bacon, crumbled for additional flavor (optional)
1 tablespoon parsley (fresh or dried) (optional)

Steps:

  • Mix together the mashed potatoes and egg with a fork until it's well combined.
  • Add in most of flour and mix well until the flour is incorporated. Add enough additional flour to make a moist, but firm dough - like home made play dough consistency.
  • Turn dough out onto a lightly floured surface, knead and shape it into a ball. Divide the ball into 4 pieces.
  • Working with one piece at a time, roll the dough out into a long strand about 1/2 inch wide in diameter. Try to get it as even as possible, but it's okay if it's not perfect.
  • Use a dough scraper or knife to chop the strand of dough into 1 inch dumplings.
  • Once your dumplings are chopped, use the back of a fork to gently press into the gnocchi and make some grooves.
  • Drop the formed gnocchi into gentle boiling salted water. Cook them until they float, about 3-4 minutes. Drain the gnocchi, but do not rinse.
  • As the gnocchi is cooking, sauté red bell peppers with 1-2 Tbsp olive oil. Add the spinach and sun-dried tomato with another Tbsp olive oil, cook until spinach is wilted. Add the alfredo sauce and Italian seasoning, stir until sauce is warm. If the sauce is too thick, add 1 Tbsp milk and stir. Cook turkey bacon at this time.
  • Mix the gnocchi with the alfredo sauce. Top gnocchi with crumbled goat cheese, bacon and parsley and serve right away.

2 cloves garlic, minced
1 teaspoon salt
