Instant Pot Mac and Cheese image

This Instant Pot Mac and Cheese is ultra creamy and rich with a velvety smooth sauce!

16 oz dried elbow pasta
2 cups reduced sodium chicken broth
2 cups water
2 Tbsp butter
1 tsp hot sauce ((optional))
1/2 tsp kosher salt
1/2 tsp garlic powder
1/4 tsp black pepper
1/4 tsp smoked paprika
1/4 tsp dried mustard powder
1/4 tsp onion powder
2 1/2 cups shredded cheddar cheese ((mild, medium, or sharp - use personal favorite))
1 cup shredded colby jack cheese
1/2 - 1 cup heavy cream

Steps:

  • Add the dried pasta, chicken broth, water, butter, hot sauce, salt, garlic powder, pepper, smoked paprika, dried mustard, and onion powder to the liner of an Instant Pot. Use a wooden spoon to gently press down to make sure all pasta is submerged in the liquid. Don't stir.
  • Secure Instant Pot lid, making sure the valve is set to "sealing". Press the Pressure Cook or Manual button and use the +/- buttons to set the timer for 4 minutes.
  • Once the timer beeps, let out the pressure by carefully moving the valve to "venting" to perform a quick release. Be aware, this recipe is starchy, and can sputter quite a bit when venting. I usually place a folded paper towel loosely over the vent to prevent any kitchen messes.
  • When the pin drops, remove lid and set aside. Turn the Instant Pot OFF to avoid overcooking your pasta. There will be some water left in your pot - don't drain it. This helps create the smooth, cheesy sauce.
  • Add heavy cream and stir. Add in cheeses, a handful or so at a time, stirring after each addition. Keep stirring until they have completely melted into a creamy sauce.
  • As a side note, this mac and cheese does thicken as it sits, so if it seems on the thin side - just let it sit for a minute or so, and it will thicken up. Taste and adjust seasoning if necessary.

8 slices bacon, finely chopped
3 1/2 cups milk, plus more if needed
Several sprigs parsley
10 black peppercorns
1/2 teaspoon crushed red pepper flakes
1 bay leaf
1/4 teaspoon freshly grated nutmeg
Up to 6 tablespoons unsalted butter
1/2 cup all-purpose flour
8 ounces yellow Cheddar, freshly shredded
4 ounces Gruyere, freshly grated
4 ounces Parmesan, freshly grated
8 ounces macaroni, cooked until very al dente
1 1/2 cups frozen peas
1 cup fresh breadcrumbs
1 tablespoon unsalted butter, melted
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter a 2-quart baking dish or eight 12-ounce ramekins.
  • For the bechamel: Heat a medium saucepan over medium heat. Add the bacon and cook, stirring often, until just crisp, about 5 minutes.
  • Meanwhile, combine the 3 1/2 cups milk, the parsley, peppercorns, crushed red pepper, bay leaf and nutmeg in another medium saucepan. Bring to a simmer over medium heat, then remove from the heat and keep warm.
  • When the bacon is crisp, remove it with a slotted spoon and drain on a paper towel-lined plate, leaving 6 tablespoons of the bacon fat in the saucepan. If you have less than 6 tablespoons, make up the difference with the butter and heat over medium heat until melted. Add the flour and cook, stirring, until the mixture is doughy and smells a bit nutty, about 1 minute.
  • Strain in the warm milk about a half cup at a time into the flour mixture and cook, whisking to incorporate after each addition. The bechamel should be smooth and velvety. If it's chunky or too thick, whisk in some more milk.
  • For the mac 'n' cheese: Remove the bechamel from the heat and add all of the cheeses; whisk to combine. Fold in half of the bacon. Next, fold in the macaroni, then the peas. Transfer to the prepared baking dish or ramekins. If using ramekins, place them on a rimmed baking sheet.
  • Combine the breadcrumbs with the remaining bacon pieces, the melted butter and a pinch each of salt and black pepper in a small bowl. Sprinkle over the mac 'n' cheese and bake until the sauce is bubbly and the crust is browned on top, 30 to 45 minutes (depending on the baking vessel).
  • Let rest for 10 minutes then serve.

1/2 cup parmesan cheese, grated
2 tablespoons butter
1 dash salt, to taste
1 dash black pepper, to taste
4 slices bacon
1 medium onion, chopped fine
2 garlic cloves, minced
1 lb small shell pasta (or choice)
2 cups frozen peas
1 tablespoon lemon juice

Steps:

  • Place ricotta, parmesan, butter, salt and pepper in a large bowl. set aside. Fry bacon in skillet til crisp. Transfer bacon to paper plate to drain, crumbling once cooled. Reserve pan and bacon grease.
  • To the bacon pan, add onion and cook about 3 minutes. Add garlic and cook 1 more minute. Transfer onion mixture to cheese mixture.
  • Meanwhile, cook pasta in boiling water. When it is just 1 minute till done, add peas to water.
  • Reserving 1 cup of pasta/pea water, drain pasta and peas. Add half of the pasta water to the cheese mixture along with the lemon juice and mix till smooth.
  • Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.

1/4 cup unsalted butter
1/2 pint heavy cream

2 garlic cloves, finely diced

  • In frying pan over low to medium heat, cook two pieces of bacon. As the bacon gets close to being crisped, add the garlic cloves and cook until they are clear. Drain bacon and garlic on paper towels.
  • Pour the macaroni mixture into an 8x8 baking pan. Break the bacon into bits. Sprinkle the bacon and garlic over the top of the macaroni mixture.
  • Bake for 30 minutes or until cheese is crispy.
