The lime-and-soy-marinated chicken is delicious added to the coconut-curry soup, but it can also be served on its own. (Double the recipe if you want each person to have a full serving of chicken.)

2 tablespoons fresh lime juice (from 2 to 3 limes)
1 tablespoon safflower or peanut oil
2 teaspoons low-sodium soy sauce
2 teaspoons sugar
1 large shallot, thinly sliced into rings
Coarse salt
2 boneless, skinless chicken breast halves (about 8 ounces each), pounded to an even thickness (about 3/4 inch)
1 cup basil leaves

Steps:

  • Stir together 1 tablespoon lime juice, oil, soy sauce, sugar, shallot, and 3/4 teaspoon salt in an 8-inch square baking dish. Add chicken; toss to coat. Refrigerate for at least 30 minutes.
  • Heat broiler. Arrange chicken on top of shallot in dish. Broil 8 inches from heat source until lightly browned, about 7 minutes. Flip chicken, arranging shallots around sides. Broil until chicken is cooked through, 6 to 7 minutes more. Let stand for 5 minutes. Slice chicken crosswise. Reserve pan juices.
  • Transfer chicken and reserved pan juices to a bowl. Toss with basil and remaining tablespoon lime juice.

3 Limes juice and zest (Divided)

1/4 Cup Extra Virgin Olive Oil

3 tablespoon Worcestershire Sauce
3 tablespoon Soy Sauce
6 Green Onions (Chopped, Divided)
4 Cloves Garlic Minced (Divided)
2 tablespoon Basil (Chopped )

Steps:

  • Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 green onions, 2 garlic cloves, salt and pepper to taste.
  • Mix well.
  • Place chicken in a gallon sized baggie.
  • Pour marinade over the chicken and marinate for at least 1 hour to overnight.
  • Remove chicken from bag and place in a 6 quart slow cooker.
  • Discard bag and juices.
  • Slow cook chicken for 2-3 hours on high or 4-5 hours on low.
  • Meanwhile combine juice and zest of one lime with extra virgin olive oil, 3 chopped onions, 2 minced garlic cloves and basil to make a dressing.
  • Plate chicken and pour dressing over top before serving.

4 chicken breast halves, boned and skinned
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh basil

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
  • Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.

A delectable and elegant way of cooking a whole chicken for a special dinner party or for Sunday lunch! I have also cooked this chicken to take on a picnic - it is wonderful cold, AND in sandwiches or salads. Try to use an organic reared chicken - the flavour is more superior than a poor factory/battery farmed chicken - and, you will be doing your "bit" to stamp out this unnatural way of rearing poultry.

1 small limes or 1 small lemon, finely chopped, pips removed
1 small onion, finely chopped
2 -3 garlic cloves, crushed
100 g butter, softened
1 (2 -3 kg) roasting chickens
4 sprigs lovage or 4 stalks celery & leaves, roughly chopped
1 tablespoon lavender flowers
50 ml olive oil
2 tablespoons lavender honey
salt & freshly ground black pepper
lavender, and lovage sprigs (to garnish)

Steps:

  • Preheat the oven to 190C, 400F, gas mark 5.
  • Combine the lime(lemon), onion and garlic with the butter. Stuff half of this under the skin of the chicken, working carefully under the skin of the breast. Put the remaining flavoured butter inside the bird, with the chopped lovage (celery stalks/leaves) and the lavender flowers. Secure the skin over the neck with a skewer and put the chicken in a roasting tray.
  • Combine the olive oil and honey in a pan and heat gently so the honey liquefies. Stir, then pour over the chicken. Season well.
  • Roast for 45 minutes per kg plus 20 minutes, basting every 20 minutes or so.
  • If the chicken seems to be browning too quickly, cover it with foil half way through cooking. To test whether the chicken is cooked, pierce it with a skewer in the thickest part. If the juices run clear, it is cooked. Leave to stand, covered with foil, for 20 minutes before carving.
  • Garnish with lavender and lovage sprigs.
  • Carve at the table and serve with the pan juices, green beans and apple & potato purée.

Steps:

  • Preheat oven to 350.
  • Squeeze juice of halved lime(s) all over chicken.

  • Put 1 or 2 lime halves into cavity.
  • Cook approximately 30 minutes per pound, or until done.

1/4 cup lime juice

1 ½ - 2 lbs. boneless, skinless chicken breasts*
Optional garnish: additional chopped fresh basil or parsley

Steps:

  • Preheat oven to 425 degrees F. Spray an 11 x 7-inch baking dish (or any similar size that accommodates your chicken in a single layer) with cooking spray and set aside.
  • In a small bowl, whisk together wine, olive oil, Dijon mustard, basil, garlic, honey, Italian seasoning, and salt.
  • Season chicken on both sides with salt and pepper. Place chicken in the prepared baking dish.
  • Pour sauce over the chicken and toss to make sure that each piece of chicken is well coated.

4 limes , halved
2kg chicken
8 garlic cloves , 4 whole, 4 chopped
1 chilli , deseeded and chopped
large piece ginger
small bunch coriander stalks
2 tbsp soft brown sugar
1 tbsp fish sauce
sliced cucumber , shredded spring onions and coriander sprigs, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Squeeze all the limes into a bowl and pop the lime halves into the chicken cavity with the whole garlic, half the chilli, half the ginger and the coriander stalks. Place the chicken in a roasting tin and roast for 1 hr.
  • While the chicken is roasting, make a sticky glaze. Add the remaining garlic, chilli, ginger, brown sugar and fish sauce to the lime juice and use a hand blender or small blender to blitz until smooth. Transfer to a small pan and reduce until thick enough to coat the chicken.
  • When the chicken has been cooking for 1 hr, tip some water into the bottom of the tin. Pour half the glaze over the chicken and continue to roast for 45 mins more, covering with foil if it starts to brown too quickly. When cooked, leave to the side to rest.
  • Pour the juices from the roasting tray, discarding the fat, into the rest of the glaze and pour into a small pan. Simmer over a low heat and taste, adding more sugar or fish sauce if it needs it. Serve the chicken with the cucumber, spring onions and coriander around it and the gravy on the side.

1 whole fresh chicken (neck and giblets removed)
1 to 2 cups water
1 small sweet or yellow onion, slivered thinly
4 to 6 cloves of fresh chopped garlic, or 1 to 2 tablespoons minced garlic
5 to 10 fresh basil leaves, roughly chopped
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon dried basil leaves

Steps:

  • Set oven to preheat at 375°F and place rack in the lower middle part of the oven. Place the chicken on a cutting board and pat it dry with paper towels. Discard the neck and giblets if present and cut off any extra skin or fat hanging around the body cavity. Gently work half of the garlic, several slivered onion slices and half of the fresh basil leaves under the skin of the chicken breast. Drizzle the oil on top of the skin and rub it to cover the whole chicken evenly. Season the skin generously with salt, pepper, onion powder, garlic powder and dried basil. Finish by sprinkling on the remaining fresh chopped basil leaves. Place the chicken breast-side up in a cast-iron skillet, roasting pan or baking dish. Pour 1 to 2 cups of water in the bottom of the baking dish and arrange the rest of the garlic and onion around the chicken in the water. Create a loose canopy of foil to cover the chicken and bake with foil covering for 1.5 hours at 375°F. Be sure to roast the chicken until the juices run clear and a thermometer inserted into the inner thigh (but not touching the bone) registers 165°F. After the initial roasting, uncover the chicken and place back in the oven for 5 to 10 minutes, now set to 425°F. Keep a close eye on your chicken and remove it when it is golden brown. If your oven runs hot, you may want to consider using a lower temperature, such as 400°F for this step. Remove the chicken and transfer to a serving platter or cutting board for carving.
