Steps:

  • In 5- to 5 1/2-quart Dutch oven, cook Italian sausage and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is brown and onion is tender; drain.
  • Stir in chicken broth, diced tomatoes, pepper and lasagna noodles. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is tender.
  • Serve soup with Parmesan and ricotta cheese.

1 large green pepper, chopped
1 medium onion, chopped

1 can (8 ounces) tomato sauce
1 cup frozen corn
1/4 cup tomato paste
2 teaspoons Italian seasoning

2-1/2 cups uncooked spiral pasta
1/2 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, cook beef, green pepper and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain., Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. 8 ounces lasagna noodles, broken into pieces (about 10 noodles)
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 onion, chopped
1/2 pound hot or sweet Italian sausage, casings removed
3 cloves garlic, chopped
1 teaspoon dried oregano
2 tablespoons tomato paste
4 cups low-sodium chicken broth
1 15-ounce can crushed or diced tomatoes
1/2 cup chopped fresh basil, plus thinly sliced leaves for topping
1/3 cup grated parmesan cheese (plus more for sprinkling, optional)
1/4 cup heavy cream or half-and-half
Ricotta cheese, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain; drizzle with olive oil and toss.
  • Meanwhile, heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes. Add the sausage, garlic and oregano and cook, stirring and breaking up the sausage with a wooden spoon, until the sausage is browned, about 3 minutes. Add the tomato paste and cook, stirring, until darkened, about 2 minutes.
  • Add the chicken broth, tomatoes and 1 cup water; cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the noodles, basil, parmesan and heavy cream; simmer 2 more minutes.

2 Tbsp olive oil, (divided)
1 lb lean ground beef
1 large yellow onion, (diced (1 3/4 cups))
5 garlic cloves, (to taste, minced*)
4 1/2 cups low-sodium chicken broth, (then more to thin as desired)
1 (14.5 oz) can petite diced tomatoes
1 (14.5 oz) can crushed tomatoes
2 1/2 Tbsp tomato paste
1 3/4 tsp dried basil**
3/4 tsp dried oregano
1/2 tsp dried rosemary, (crushed)
1/2 tsp dried thyme
Salt and freshly ground black pepper, (to taste)
8 lasagna noodles, (broken into bite size pieces (6.5 oz)***)
1 1/4 cups (5 oz) shredded mozzarella cheese
1/2 cup (2 oz) finely shredded parmesan cheese
8 oz ricotta cheese
2 Tbsp chopped fresh parsley, (plus more for garnish)

Steps:

  • Heat one tablespoon olive oil in a large pot over medium-high heat. Once hot, crumble beef into pot, season with salt and pepper to taste and cook, stirring occasionally until browned. Drain fat from beef and set beef aside.
  • Heat remaining 1 Tbsp olive oil in pot, add chopped yellow onion and saute until it begins to soften, about 3 minutes. Add in garlic and saute 30 seconds longer.
  • Add in chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, rosemary, thyme, browned ground beef and season with salt and pepper to taste.
  • Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
  • Meanwhile, prepare lasagna noodles according to directions listed on package.
  • In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta.

1/3 cup Heavy Cream
1/2 cup Ricotta cheese (to dollop on top of each serving)
1/2 cup Parmesan cheese (to sprinkle on each serving)
Fresh Basil--optional (for garnish)
1/2 cup Mozzarella Cheese (to add on top if desired)

Steps:

  • Dice onion into small and even pieces. Add the olive oil and onion and cook in a large pot on medium heat. Cook while stirring onions and garlic until lightly golden brown. Add the minced garlic and cook for 1 more minute.
  • Add the ground hot italian sausage and/or ground beef. Using a wooden spoon to break the meat up into small pieces. Add 1/3 cup of water if needed. Cook until the meat is cooked throughout.
  • Add the Italian seasonings, salt and pepper, crushed, or diced, tomatoes, and chicken broth. Bring to a boil. Add the noodles. Boil for 10 minutes or until the noodles are done "al dente" (chewy but not mushy)
  • Add the heavy cream and the parmesan cheese. Reduce heat and stir until the parmesan cheese is melted. Laddel into bowls and add a Tablespoon of ricotta cheese and a Tablespoon of Parmesan cheese. Garnish with fresh basil if desired.

  • In a large pot over medium high heat add in olive oil, Italian sausage and onion.
