CROCK POT ITALIAN BEEF SANDWICHES
These CrockPot Italian Beef Sandwiches are perfect for tailgate season! With just a few simple ingredients, this easy slow cooker beef recipe is a favorite!

Steps:
- Heat the oil in a large skillet over medium high heat. Add the roast to the pan and cook without turning until it is browned on one side. Flip the roast over and brown on the other side.
- Place onion in the bottom of a 6 qt slow cooker.
- Place the browned roast on top of onions. Sprinkle with Italian dressing and seasoning.
- Add broth and pepperoncini peppers with ½ cup of the juices.
- Cook on high 5-6 hours or on low 9-10 hours until beef is very tender.
- Shred beef using forks and return to the juices. Allow to cook an additional 20 minutes.
- Serve over rolls and top with pickled vegetables or peppers.

- Cut roast in half; place in a 5-qt. slow cooker. Sprinkle with the Italian seasoning, cayenne and pepper. Add water. Cover and cook on high for 4 hours or until meat is tender. , Remove roast; shred meat with 2 forks and return to the slow cooker. In a large bowl, combine the pepperoncini, peppers, garlic, soup mix and Worcestershire sauce; pour over meat. Cover and cook on high for 1 hour or until peppers are tender. , Spoon beef mixture over the bottom halves of bread; replace bread tops. Cut each loaf into 6 sandwiches.

- Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
- Place roast in slow cooker, and pour salad dressing mixture over the meat.
- Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

CROCK POT ITALIAN BEEF
I start this after dinner the night before and forget it so much that when I get up in the morning I wonder what smell so good! I usually do a quick stir about 12-13 hours into it just so anything thats not in the juice gets mixed. Serve it with Mozzarella cheese on crispy rolls for a really good sandwich thats easy.

- Arrange the onions and garlic in the bottom of a slow cooker. Set aside.
- Pat beef dry and season with kosher salt and black pepper on all sides.
- Heat oil in a large pot or Dutch oven over medium-high heat. Place beef in the pot and sear for about 5-7 minutes on each side, or until browned all over. Transfer beef to the slow cooker (on top of the onions and garlic).
- Pour the beef broth into the Dutch oven; turn the heat down to medium. Using a wooden spoon, scrape up any browned bits from the bottom of the pot. These bits add a lot of flavor to the broth!
- Pour beef broth over the roast. Add Worcestershire sauce and sprinkle with dry Italian salad dressing mix. Add pepperoncini to the slow cooker, along with 1 tablespoon of liquid from the jar.
- Cover and cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
- Shred the beef with two forks (it should practically fall apart when it's done). Discard any big fatty pieces. Stir the shredded beef into the juices in the pot.
- To assemble sandwiches: split the hoagie rolls in half and toast lightly in a 350°F for 5 to 7 minutes. Add beef to each roll and top with provolone. Return to the oven just until cheese melts. Top with giardiniera and serve!

I have had this recipe for so long I don't remember where I got it but I have handed out the recipe many times. Nice meal to let cook all day and the flavor is great. I usually double the recipe for some great leftovers. I have also added onions but DH prefers recipe without them. Sometimes with the leftovers we will put on top of mashed potatoes instead of bun.

- Spray the inside of a 4 quart crock pot with cooking spray.
- If beef is tied, remove strings and netting.
- Place the beef in the crock pot arrange onion and bell pepper slices on top.
- Sprinkle with brown sugar and pour on the dressing.
- Cover and cook on low heat for 10 to 12 hours.
- Remove beef from crock pot and using 2 forks shred the meat.
- Return shredded meat to crock pot and sprinkle with Italian seasoning, stir to mix well.

- Combine the broth, beer (or additional broth), water, vinegar, soup mix, salad dressing mix, garlic, oregano, and basil; pour over roast.
