1/3 cup water
1/3 cup unsweetened cocoa powder
1/3 cup sugar
1 1/2 cups milk (or more)
1 pinch sea salt

Steps:

  • In a small saucepan, combine the water, cocoa powder, sugar, and a tiny pinch of sea salt. Whisk briskly to combine.
  • Bring almost to a boil over medium heat and whiskly briskly for a minute or two until smooth, glossy, and dark in color.
  • Pour in 1 1/2 cups of milk and whisk until frothy and slightly steamy, but do not boil. Taste, and add more milk if the hot chocolate is too strong for you.
  • Pour into mugs and enjoy!

  • Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
  • Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.
