Homemade fruit wine is easier to make than you might think-the main ingredient is time.

4 -6 pounds fresh fruit (cut into small pieces)
2 pounds sugar
3 quarts water (boiled)
Juice of 1 lemon
6 drops liquid pectic enzyme
1 can frozen white grape juice concentrate (optional)
1 packet wine yeast (champagne or Montrachet strains)

Steps:

  • Place the fruit in a fermentation bag inside a sanitized primary fermenter. Combine the sugar with 2 quarts of the hot water and pour over the fruit. Add the lemon juice, pectic enzyme, and grape juice concentrate (if using), and additional boiled, cooled water to bring the water level up to 1½ gallons. When the temperature cools to 72°F (22°C), test the specific gravity or taste the liquid. It should taste quite sweet, as sweet as light syrup. Sprinkle on the yeast and cover the primary fermenter after providing a way for gases to escape, such as using an airlock or covering the container securely with several folds of cheesecloth or a clean towel.
  • At least once a day for 5 to 6 days, use clean hands to knead the fruit in the fermentation bag and turn it, so a different side floats to the top. The liquid will become cloudy and slightly fizzy; with some fruits, large bubbles form on the top. Taste the liquid just before washing it from your hands. The sugar level should drop noticeably by the fifth day.

  • Pour grape juice into 5-gallon container.
  • Bring water and sugar to a boil until sugar is melted.

  • Pour into container.
  • Add 1 pkg yeast (activating beforehand is optional).
  • Close with airlock stopper.
  • Allow to ferment for 3 weeks in a sanitized 5-gallon container.
  • After 1 additional week, bottle.

Make strawberry wine at home with only four ingredients. All you need is a crock, some bottles, and a year of time to ferment.

7 pounds whole strawberries
2 gallons boiling water
1 lemon , juiced
Optional: 2 teaspoons wine yeast
5 pounds sugar

Steps:

  • Gather the ingredients.
  • Wash and hull strawberries, removing any stem or bits of leaf.
  • In a large earthenware crock, mash strawberries.
  • Cover mashed berries with boiling water.
  • Add lemon juice and quickly stir for about 2 minutes.
  • If you want to add wine yeast, mix into strawberry mash once it has cooled to 85 F.
  • Cover the crock with a clean linen cloth. Let crock rest in a cool, dark place.
  • Give it a stir each day for one week.
  • After one week, strain mixture through a double layer of cheesecloth into a large, clean bowl, discarding strawberry pulp.
  • Combine strawberry liquid with sugar, stirring to dissolve sugar.
  • Pour liquid into a clean crock and let stand another week, stirring daily.
  • After the second week, pour strawberry liquid into 1-gallon glass wine bottles and cork loosely. If you have fermentation locks, you can use those instead of a loose cork.
  • Let bottles rest in a cool, dark place for three months.
  • When wine is clear and no longer fermenting (bubbling), pour it into individual bottles. Cork bottles and let them age for at least one year before drinking this delicious strawberry wine.

This easy homemade pear wine recipe combines just a few simple ingredients to turn an abundance of ripe pears into delicious homemade wine.

Number Of Ingredients 7

4 quarts of chopped, unpeeled ripe pears (approximately five pounds)
3 cups of white raisins, chopped
6 cups of cane sugar
1 cup of light brown sugar
4 quarts of water
1 packet champagne yeast
1 teaspoon yeast nutrient (optional)

Steps:

  • Pears should be ripe enough that stems pull out easily. If not, set aside and wait a few more days. (Pears ripen off the tree.) Wash, trim, quarter and finely chop or crush the pears. Skins are fine to include, but keep the seeds out. Pear seeds are bitter and can give the wine an off flavor. Crush pears with a potato masher or well washed hands. Place pears and raisins into crock.
  • In a medium stockpot, dissolve brown and white sugar in two quarts water over low heat. Bring to a boil, and then set aside to cool to lukewarm.
  • Add 2 quarts water to fruit mash in crock, then add the sugar water. Stir well to evenly distribute the sugar throughout the mix. Sprinkle yeast and yeast nutrient over top of mash, stir in to mix until completely dissolved and well blended.

You will need a sterile milk jug, a large latex balloon and a rubber band to complete the project. This Wine is a bit stronger than regular table wine. Its great for cooking as well as drinking.

4 cups sugar
1 (12 fluid ounce) can frozen juice concentrate - any flavor except citrus, thawed
3 ½ quarts cold water, or as needed

Steps:

  • Combine the yeast, sugar and juice concentrate in a gallon jug. Fill the jug the rest of the way with cold water. Rinse out a large balloon, and fit it over the opening of the jug. Secure the balloon with a rubber band.
  • Place jug in a cool dark place. Within a day you will notice the balloon starting to expand. As the sugar turns to alcohol the gasses released will fill up the balloon. When the balloon is deflated back to size the wine is ready to drink. It takes about 6 weeks total.

1 gallon fruit juice, any flavor
1 (1/4 ounce) package yeast
4 cups sugar

Steps:

  • Pour the package of yeast and the sugar into the gallon of fruit juice and mix thoroughly (put the cap on and shake it).
  • Uncap the bottle, poke one tiny hole in the balloon with a pin, then secure the balloon over the opening of the bottle.
  • Set aside in a dark place. The balloon will rise over time. Wait until the balloon is deflated once again, this will take weeks.
  • Siphon into bottles or mason jars (leave the gunk at the bottom of the gallon container) and cap securely until you're ready to drink it.

  • Choose Your Fruit. You can pick fresh fruit to make your wine, but I prefer to use the frozen fruit I have leftover. My property has plenty of grapes, muscadines, blackberries, and blueberries.
  • Prepare the Fruit. Whether your fruit is fresh or frozen, it’s a good idea to give it a rinse under the faucet. Be sure to use cold water. If your fruit is fresh, be on the lookout for bugs and stems which may have stayed attached during the picking process.
  • Prep the Wine Container. If you’ve ever made anything homemade, you know it’s vital to make sure all your equipment is sterilized. The rules are the same when making your own wine.
  • Let the Sugar and Fruit Mesh. It’s now time to put the fruit in its bag. You can use a cheesecloth or mesh bag. I prefer to use a pillowcase because I have them on hand at any given time.
  • Start the Process. When your fruit and simple syrup have been added to your wine container, add more water until the container is full. Add 1 teaspoon of yeast to the mixture in the container.
  • Play the Waiting Game. The wine will sit in the container for 2 weeks. This allows the gases from the fruit to release in the container and begin turning the syrup into wine.
  • Pull the Fruit. When the 2 weeks are up, it’s time to pull the fruit out of the container. This is why I use the mesh bag, to begin with. Some people throw the fruit in the liquid mixture and allow it all to marry together for a couple of weeks.
  • A Little Stronger, You Say? My husband and I can’t agree on the intensity of our wine. I prefer a fruitier flavor. Yet, he prefers a more intense or bold flavored wine.
  • Clean It Up. When your wine is at its desired flavor, siphon the wine from the container. The siphon I use filters the wine as well which gives it a shinier finish.
  • Bottle and Store Your Homemade Wine. Some people will store their wine in mason jars. I’ve heard of some saying their lids buckle which has turned me off from using mason jars to store homemade wine.

  • Pick Fully Ripe Berry Clusters. I am just a homesteader, not a food scientist or safety expert. However, I have always heard that you should not eat unripe elderberries.
  • Remove Berries from Stems. By holding the stem of the cluster in one hand and rubbing the berry head with your other hand, ripe berries fall right off into your bowl or bucket.
  • Crush Berries. Do not bother with a fruit press for these berries! Just use your hands to crush. Get a handful and squeeze hard until the skins pop-off and the juice runs.
  • Strain. Use a really fine sieve to strain the skins and seeds from the juice. I like to use my fruit press at this point. It won’t crush the berries but it pre-strains a lot of the solids and leaves behind mostly juice.
  • Dilute. This juice is super-concentrated at this point. You will need to add water to get something closer to the consistency of wine. Some recipes give you dilution rates based on the original fruit weight.
  • Add Sugar. Making alcohol is all about having enough brix. Brix is a unit of measure used in wine-making to determine how much alcohol a juice such as wine grapes or in this case, elderberry juice, are likely to produce.
  • Choose Your Yeast. Here’s the tricky part of figuring out how much sugar to add. The kind of yeast you use will determine how many of that brix actually gets converted into alcohol.
  • Acidify (Optional) Beyond brix, for a balanced wine, you want a little acidity. Some fruits have this naturally (e.g., grapes). Unfortunately, elderberry is not one of them.
  • Ferment. To ferment the juice into wine, you need to create a pleasant environment for your yeast. An easy, inexpensive way to do this is to use a fermentation bucket or glass bottle with an airlock.
  • Bottle and Age. After fermentation, bottle your wine and age it. Sanitize your empty wine bottles, and any equipment you use, in a solution of 1-gallon water to 1 tablespoon bleach or use purchased sanitizing powder before filling.

Allow about 4 inches of space between the top of the liquid and the bottom of the airlock. If needed, top off the wine with boiled, cooled water to bring the liquid to this level. Install the airlock.
  • Place the wine in a dark place where temperatures range between 60 and 70°F (16 and 21°C). Cover the bottle with a cloth sleeve to protect the wine from light, which can change its color. Old T-shirts make convenient wine covers for big bottles.
