This is a really easy soup to make. It is best if you have leftover ham from the holidays! You will likely have many of the ingredients on hand too! Tastes delicious with moist cornbread on a cold winter night!

Steps:
- Combine all ingredients into a large pot and cook on medium heat for 2 hours.
- Turn heat to low and cook for an additional hour or until carrots and celery are soft.
- It can be kept on very low eat until ready to eat.

Steps:
- Boil the drained, soaked beans with the water, bone, bay leaf and chili in a large pot.
- Reduce to a simmer and simmer for 3 hours.
- Add the remaining ingredients and simmer for 1 hour longer.
- This was a requested recipe and in my comments I said that if you dont have all the ingredients for the herb mix dont worry about it.
- Shake in what you got.
- If you go out and buy everything required in the spices-you're looking at around 50 bucks!
EASY HILLBILLY BEAN SOUP
There are a number of bean soup mixtures now on the market, with anywhere from 5 to 15 bean varieties. Any will work and all will taste better if the soup is allowed to sit until the second day.

- Rinse 1 1/2 to 2 cups bean mixture, cover with fresh water and soak overnight.
- Drain, place beans in large kettle with 2 quarts of water.
- Add remaining ingredients.
- Cook all day, until beans are tender.

- In a large soup pot sautee onion and celery in olive oil until soft.
- Add remaining ingredients to pot; bring to a boil. Reduce heat to simmer and continue to simmer for 45, or until potatoes are soft.
