Steps:
- Pour milk into large microwavable bowl. Microwave for 90 seconds.
- Meanwhile, mix together sugar, flour and eggs. After the milk has been microwaved and is warm, whisk in the sugar, flour, and egg mixture.
- Microwave in 90 second intervals, whisking after each 90 seconds, until the mixture becomes thick.
- Stir in 1 tsp. vanilla. Serve hot or cold.

- In a large microwave-safe bowl mix milk and egg yolks.
- Add the dry mix to the liquid and whisk together till smooth.
- Cook in microwave 5 minutes, stirring once.
- Cook an additional minute and stir again.
- If pudding isn't thick yet, do 30 seconds more, or til pudding consistency.
- Take from microwave and stir in 2 tablespoons butter and 1 teaspoon vanilla.
- Cool and eat or put in a baked pie crust.
- Variations: For chocolate Pie add 2 tablespoons cocoa to the dry mixture. It floats on the milk for a minute or so, but stirs in as it is cooked.
- For coconut pie: Add 1 cup coconut to the milk mixture. Sprinkle a little coconut on top of the meringue before browning.
- For a peanut butter pie: In approximately 1/4 cup of peanut butter, work in powdered sugar until it is crumbly. Cover the bottom of the baked pie crust with peanut butter crumbs before filling with chocolate pudding. Mix more crumbs if needed. Top with cool whip sprinkled with chopped peanuts. Crunchy peanut butter works, too to make crumbs.

- IMPORTANT NOTES ADDED:.
- The tofu called for here is asceptic tofu NOT waterpacked tofu. One brand is Mori-Nu. AGAIN: It will NOT work with Waterpacked [tofu packed in water] also called cotton. It will NOT work with firm waterpack tofu. The texture and the taste will change because the medium will change. An example of the correct tofu is: http://www.morinu.com/ Please feel free to visit the Vegetarian forum and ask if you aren't sure. We don't bite. Honest but we do have great ways to make stuff taste even better. I host there so you can ask anytime. As to the Almond, add a bit, taste and add more. Don't add all at once. You may need less than we use because brands vary. [Do the same with other flavorings too] Also I have added chocolate extract. It does well with that in place of the Almond.
- Simply blend your tofu, cocoa, sugar or Splenda, vanilla in a food processor or blender until smooth and well blended.
- You have pudding. Add to your favorite shell or eat as a pudding. Can be used in parfaits also. Layer pudding, fruit, pudding, fruit. garnish with fruit slices and a mint leaf or two or almond slices.
- NOTE 24.6 ounces is two standard packages for me. It does seem to "grab" the sweet of sugar to me so I use less. I also find it works very well with Splenda. Those with a sweet tooth may want to tweak that. Simply add the 1/4 and taste. Then add to your taste. Syrups such as honey, maple syrup and Kings Molasses have been used but I personally wasn't pleased with it. However tastes may vary. Also note it MUST BE FIRM SILKEN. IT CANNOT BE WATERPACKED [can be low fat, organic or regular]. Soft is for smoothies and Cotton or waterpacked is for other methods.
- I never thought to add this. Be careful what cocoa powder you use. The tofu is going to grab the taste. IF it is a chalky type you are going to have chalky tofu pudding. Nothing in the pudding mix will 'hide' that. Remember this has no milk to 'mute' the cocoa taste.
SUPER FAST AND EASY MICROWAVE CHOCOLATE PUDDING
I'm mostly posting this so I don't have to go hunting for it every time I want to make it. My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

- In a 4 cup microwave safe glass container combine dry stuff, then stir in the wet stuff.
- Cook on high for 2 minutes, then whisk the mixture.
- Cook on high one more minute at a time, whisking after each minute, until thickened.
- Once it's almost thick, you should go for 15- 30 seconds at a time.
- Allow to cool if you can wait!

This is a breeze to make! We love cream pies but I have arthritis and a lot of times I don't feel like all the stirring it takes to make a cream pie the traditional way. This cuts out all of that! The taste is exactly the same, delicious! This recipe comes from an old Tappan O'keefe & Merrit Microwave Cooking Guide.

- Mix together sugar, cornstarch, salt and 1/2 cup milk in a 1 1/2 qt.
- casserole until smooth.
- Stir in remaining milk.
- Microwave on HIGH for 5 to 8 minutes or until thickened.
- Stir occasionally the last half of cooking.
- Beat a little of the hot mixture into the beaten egg yolks, then add the egg yolk mixture to the remaining hot mixture.
- Microwave on HIGH for 1 1/2 to 2 minutes or until thickened.
- Stir occasionally.
- Blend in butter and vanilla.
- Pour into the cooled baked pastry shell.
- Beat egg whites and cream of tartar until foamy.
- Gradually add sugar, beating until stiff peaks form.
- Spread over filling.
- Seal around edges.
- Microwave on MEDIUM-HIGH for 3 to 4 minutes.
- *Ifmicrowave has a browning element, brown as desired.
- Variations:.
- BANANA CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except slice 2 medium bananas in the bottom of the 9 inch baked pastry shell.
- Pour vanilla cream pie filling over the bananas.
- Top with meringue.
- BUTTERSCOTCH CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except substitute the granulated sugar with dark brown sugar and add 3 tablespoons butter instead of the 2 tablespoons butter.
- COCOA CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except add 1/3 cup cocoa in Step 1 and increase cornstarch to 1/4 cup.
- (I use the larger amount of sugar for this one.) COCONUT CREAM PIE.
- Follow Vanilla Cream pie recipe as directed except add 1 cup coconut to cream pie filling and sprinkle 1/3 cup toasted coconut over the meringue.
- I bake my meringue in my gas oven just because I prefer it that way.
MICROWAVE VANILLA PUDDING - OPT BANANA PUDDING
My mother gave me this recipe and said this is the only way to cook pudding. I like it hot but feel free to let it cool before eating. This is great served with bananas and vanilla wafers.

- Stir together the sugar, corn starch, salt and milk. Microave this on high for 8-9 minutes stirring every 2 minutes.
- Remove some of this liquide and stir slowly into egg yolks - too much and you will cook them. Once mixed slowly add to the hot mixture. Microwave on high for 1-2 minutes until thick and glossy. Stir in butter and vanilla.

- Combine milk, cornstarch, salt, and sugar in a 4 cup microwave safe bowl. Mix until sugar and cornstarch are dissolved. Cook in microwave on high until the mixture starts to foam up. - Preheat oven to 375 degrees F (190 degrees C).
- In 1 1/2 quart casserole dish, mix together sugar, cornstarch, cocoa, salt and 1/2 cup of milk until smooth. Once it is mixed well, stir in remaining milk. Microwave on high for 5 to 8 minutes or until thick; stir halfway through cooking.
- In a small bowl, place a small amount of the hot mixture and beat together with egg yolks. Stir back into original mixture in casserole dish. Microwave on high for 1 1/2 to 2 minutes or until thickened; stir frequently. Blend in butter and the 1 teaspoon of vanilla. Pour mixture into pastry shell.
- To Make Meringue: In a small bowl, beat egg whites and cream of tartar until foamy. Gradually stir in 2 tablespoons of sugar at a time until stiff peaks form; stir in vanilla. Spread meringue over top of pie filling.
- Seal rim of pie with aluminum foil, then bake in preheated oven for about 8 minutes or just until meringue gets browned.
