EASY GROUND TURKEY ENCHILADAS



Easy Ground Turkey Enchiladas image

Easy enchiladas made with ground turkey, two cheeses and red enchilada sauce. Serve with some easy refried beans, recipe below in notes.

1 tablespoon olive oil
1 pound ground turkey
½ onion, finely chopped
2 cloves garlic, finely chopped
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon oregano
1¾ cups enchilada sauce
Kosher salt and fresh cracked black pepper
8 (8-inch) flour tortillas
3 cups shredded Mexican blend cheese, or colby or Monterey Jack
1 cup crumbled queso fresco (fresh Mexican cheese)
Optional: sliced green onions, chopped fresh cilantro and sour cream for serving.

Steps:

  • Preheat oven to 375º.
  • In large skillet, heat olive oil until shimmering. Pat turkey dry and add to pan, do not move, brown for about 6 minutes. Flip, brown other side for about 5 or 6 minutes. Add onion, garlic and spices and start breaking up turkey meat with a wooden spoon. Continue until no longer pink and onion has softened.
  • Add ¼ cup enchilada sauce to pan, stir to combine and season with salt and pepper. Cook 1 to 2 more minutes then remove from heat and set aside.
  • Spread ½ cup enchilada sauce in bottom of 9" by 13" baking dish. Place ⅛ of the turkey mixture on each flour tortilla, top with ¼ cup shredded cheese and tightly roll up. Place rolled enchiladas, seam side down, in baking dish.
  • Top with remaining 1 cup enchilada sauce, evenly top with remaining shredded cheese and then the crumbled queso fresco.
  • Bake for 20 minutes until hot and bubbly. If desired, garnish with green onions and cilantro and serve with more enchilada sauce and sour cream. Enjoy!

1 small onion, chopped
1 red pepper, chopped
1/4 cup KRAFT Zesty Italian Dressing
1 jar (16 oz.) TACO BELL® Thick & Chunky Salsa, divided
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, divided
12 flour tortillas (6 inch)
6 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 375°F.
  • Cook turkey with onions and peppers in dressing in large skillet on medium heat until turkey is done, stirring frequently. Stir in 1/4 cup salsa; simmer on medium-low heat 2 min. Remove from heat; stir in 1 cup cheese.
  • Spread 1/4 cup salsa onto bottom of 13x9-inch baking dish. Spoon about 1/4 cup turkey mixture down center of each tortilla; roll up. Place, seam sides down, in dish. Spoon remaining salsa over enchiladas; cover.
  • Bake 20 min. Uncover; top with remaining cheese. Bake 10 min. or until enchiladas are heated through and cheese is melted. Top with sour cream and cilantro just before serving.

Simple and fast enchiladas made with easy to get ingredients and ground turkey. I made this one up myself for our family dinner tonight actually and it turned out really yummy! Served with refried beans and sour cream.

1 lb ground turkey
1 small onion
1 (4 ounce) can mild diced green chilies
1 (20 ounce) can enchilada sauce
10 flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Brown ground turkey and onion together. Drain any liquid.
  • Add green chilies and about 1/2 cup of the enchilada sauce.
  • Place a couple spoonfuls of meat mixture into each tortilla and roll.
  • Place into a 9x13 baking dish.
  • Cover rolled enchiladas with remaining enchilada sauce.
  • Top with cheese.
  • Bake at 350F for 10-15 minutes until heated through and cheese is melted and sauce is bubbly.

1 1/2 lbs ground turkey
14 ounces frozen spinach, thawed and drained
2 cups salsa
14 ounces diced tomatoes
10 flour tortillas
2 cups Mexican blend cheese
1 (8 ounce) package cream cheese
ground cumin

Steps:

  • Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
  • Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
  • Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
  • Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

An enchilada, by definition, is a corn tortilla filled with various ingredients and drenched in cheese and sauce. This recipe doesn't involve any rolling of tortillas, nor does it require copious amounts of cheese. However, every bite will remind you of the flavors of this popular comfort food.

1/2 cup whole wheat couscous
1 pound lean ground turkey
Salt and freshly ground black pepper
1 teaspoon olive oil
2 cups butternut squash, peeled, seeded and diced
1 cup broccoli florets
One 15-ounce can no-sodium-added black beans
One 10-ounce can enchilada sauce
1/2 cup salsa
Suggested toppings: chopped fresh cilantro, diced avocado, shredded cheese, lime juice

Steps:

  • Pour 1/2 cup of water into a small saucepan and bring to a boil over high heat. Pour the couscous into the saucepan and stir well. Turn off the heat, cover and let stand 5 minutes. Fluff with a fork and set aside.
  • Meanwhile, in a large skillet or wok, cook the ground turkey over medium heat, breaking it up with a wooden spoon, until cooked through and browned, about 5 minutes. Sprinkle with some salt and pepper. Transfer to a bowl and set aside. Drain the excess fat and wipe the pan clean. Heat the oil in the same pan over high heat, then add the squash and cook, stirring occasionally, until browned and softened, 8 to 10 minutes. Add the broccoli and cook, 3 to 5 minutes more. Add the turkey, beans, enchilada sauce and salsa and stir until all the ingredients are well combined.
  • Serve with the couscous and top with suggested toppings as desired.

1 onion, chopped
1 (2 ounce) can sliced black olives
24 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small bowl, combine the cheese, onion, and black olives.
  • In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.

1/2 cup chopped onion
1 can (4 ounces) chopped green chilies, drained, divided
3 tablespoons butter, divided
1/3 cup taco sauce
1 cup sour cream, divided
1/8 teaspoon chili powder
2-1/2 cups cooked cubed turkey
2 cups shredded cheddar cheese, divided
10 flour tortillas (8 inches)
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup chopped fresh tomatoes

Steps:

  • In a skillet, saute onion and 2 tablespoons green chilies in 1 tablespoon butter until onion is tender. Remove from the heat. Add the taco sauce, 1/4 cup sour cream and chili powder. Stir in turkey and 1/2 cup cheese. , Divide the mixture evenly among tortillas. Roll up and place seam side down in greased 13x9-in. baking dish., In a small saucepan, melt remaining butter. Stir in flour until blended; gradually stir in broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and cool slightly. Stir in the remaining sour cream and remaining peppers. , Pour sauce over enchiladas. Bake, uncovered, at 325° for 40 minutes. Sprinkle remaining cheese, then tomatoes over top.
