- Thoroughly wash potatoes, cut in half, and slice into wedges.
- Toss wedges in olive oil and seasonings.
- Place on a baking sheet, skin side down.

I brought the recipe for these gougeres back from a trip to Nice, France. The original called for Gruyere cheese, but I found that Gouda is a more budget-friendly alternative. - Preheat oven to 425°. In a large heavy saucepan, bring first 4 ingredients to a rolling boil. Remove from heat; add flour all at once and beat until blended. Cook over medium-low heat, stirring vigorously until mixture pulls away from sides of pan and forms a ball, about 3 minutes., Transfer to a large bowl; beat 1 minute to cool slightly. Add eggs, 1 at a time, beating well after each addition until smooth. Continue beating until shiny. Beat in cheese, chives and nutmeg. Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets., For topping, whisk together egg and water; brush lightly over tops. Sprinkle with cheese. Bake until puffed, firm and golden brown, 20-25 minutes. Serve warm. , Freeze option: Freeze unbaked puffs on parchment-lined baking sheets until firm; transfer to resealable freezer bags and return to freezer. To use, place frozen puffs on parchment-lined baking sheets. Top and bake as directed, increasing time by 2-3 minutes.

Steps:
- Place tomato slices on baking pan lined with non-stick foil.
- Place some diced onions and peppers on top of each tomato slice.
- Salt and pepper to taste.
- Place pan under broiler and broil as long as you prefer so that onions and peppers are slightly soft.
- Remove from oven and add a slice of Gouda cheese to each tomato slice.
- Return to broiler until cheese is golden and bubbly.
- Can serve hot or slightly warm.

- Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
- Spread the wedges out on a large baking sheet or two smaller ones. Toss with the oil and 1 tsp salt (preferably sea salt) and spread out so that they aren't overlapping. Roast for 30 mins, turning halfway until golden and crisp.

- Seperate dough into triangles.
- Arrange triangles on a non stick baking sheet with the points toward the center forming a rough circle.
- Press edges together to seal.
- Peel wax from cheese.
- Place cheese in the center of the dough circle.
- Fold dough over cheese and press seams together.
- Completely closing the cheese in.
- Bake 20- 30 minutes, or until the cheese melts.
- Remove from oven and let stand 10 minutes before serving.
