Steps:
- Combine first 5 ingredients.
- Bring to boil and cook for 90 seconds.
- Remove from heat.
- Stir in 1/2 cup peanut butter; dissolve.
- Add 3 cups quick cooking oats.
- Add 1 tsp vanilla. Mix well.
- Drop by teaspoonfuls onto cookie sheet. Cool for 30 minutes or until set.
- NOTE: Some recipes omit the cocoa.

CHOCOLATE NO BAKE OATMEAL COOKIES
This recipe for chocolate no bake cookies are the classic cookie you remember, made with or without peanut butter-even with or without oats.

- Line large baking sheets with unbleached parchment paper and set aside. In a large mixing bowl, place the oats and cocoa powder, and toss to combine. Set the bowl aside.
- In a medium-size, heavy-bottom saucepan, place the butter or coconut oil, sugar, milk, and salt. Whisking frequently, bring the mixture to a rolling boil over medium-high heat.
- The mixture will bubble quite a lot. Just continue to whisk. Allow the mixture to boil for a full 2 minutes, whisking frequently.
- Remove the saucepan from the heat, add the chopped chocolate and mix until the chocolate is melted, and the mixture is smooth.
- Create a well in the center of the oats in the large bowl and pour in the sugar mixture. Mix to combine well.
- The mixture will be thick but soft. Allow it to sit at room temperature for 5 to 10 minutes to allow it to begin to firm up.
- Using a large ice cream scoop or two spoons, scoop the cookie dough in 2 tablespoon portions onto the prepared baking sheets, about 1-inch apart from one another. Spread each gently into an approximately 2-inch round.
- Allow the cookies to set at room temperature or in the refrigerator. After about 30 minutes, you should be able to peel them off the parchment paper.
- Store the finished cookies in a sealed glass container at room temperature or in the refrigerator.
GLUTEN-FREE NO BAKE COOKIES - CHOCOLATE, PEANUT BUTTER, AND OATS
This is a compilation of a few different no bake cookie recipes I found and tweaked. This recipe made 40 tablespoon-size cookies. It would be easy to halve everything for fewer cookies. Almond milk can be substituted for milk to make this dairy-free, agave nectar for honey to make it vegan, and almond butter or sunflower seed butter for peanut butter.

- Combine the first 5 ingredients in a saucepan.
- Bring to a boil and continue to cook over a gentle boil for 90 seconds.
- Remove from heat.
- Add peanut butter and stir to melt.
- Add oats and vanilla and stir thoroughly to mix.
- Drop by rounded tablespoon onto nonstick surface (Silpat, wax paper, nonstick cookie sheet).
- Transfer to refrigerator and cool till set.

- Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper and set aside.
- Whisk all of the flours, the cocoa powder, baking powder, salt and xanthan gum together in a medium bowl. Set aside.
- Put the butter and brown sugar into a large bowl and beat with an electric mixer on medium speed until smooth, about 1 minute. Add the milk, vanilla and eggs and beat until blended. Reduce the speed to low and slowly incorporate the flour mixture until thoroughly combined. Add the chips and stir to combine.
- Spoon heaping tablespoons (or smaller scoops) of the dough onto the prepared baking sheets, 1 to 1 1/2 inches apart. Bake the cookies in two batches, two sheets at a time, until the cookies are set and just beginning to crack slightly on top, 13 to 14 minutes. Rotate the sheets halfway through for even baking.
- Remove from the oven and let the cookies cool on the sheets for 2 minutes, and then remove to a rack and cool completely.
