BLACKBERRY COBBLER
While berry cobbler is often thought of as a summer-only dessert, frozen berries can also be used so this is easy to pull off anytime of the year. Eliminating sugar makes this antioxidant-packed dessert practically guilt-free.

Steps:
- Preheat oven to 350°F. Spray a 9" x 13" baking pan with cooking spray.
- In a bowl, gently toss berries with ginger, 4 tablespoons of Splenda Stevia Sweetener, , water, and lime juice. Let berries sit for at least 15 minutes for juices to accumulate.
- In another bowl, 5 tablespoons of sweetener, flour, baking powder, and salt.
- In a large bowl combine canola oil, yogurt, vanilla extract, and milk. Add the dry ingredients; stir just until batter comes together (do not overmix).
- Pour batter into the baking pan, using a spatula to spread batter as best you can (it's OK if it doesn't completely fill the pan). Top with the berries and juice.
- Bake until a toothpick inserted in the center of the cobbler comes out clean, about 50 minutes. Serve warm.

- Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
- Blend together flour, baking powder, sugar, and milk.
- Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

- 1. Melt One Stick Butter In An 8 X8 Pan. Use Butter, not margarine.
- 2. Mix flour, sugar, baking powder and milk. Pour The Mixture Over The Melted Butter. DO NOT STIR
- 3. Sprinkle fruit over the top. (if using fresh fruit, you may want to toss it in 1/2 cup of sugar) DO NOT STIR
- 4. Bake at 350 for 45 minutes or until browned on top. The filling goes to the bottom and the batter makes a crust on top. Top with vanilla ice cream, yummy!!!

- Preheat oven to 375°F Spray an 8x8 baking dish with nonstick cooking spray and set aside.
- In a large saucepan, combine all fruit mixture ingredients (except pecans). Bring to a boil, stirring constantly. Reduce heat and simmer until sauce is thickened (add pecans now if using) Pour fruit mixture into sprayed baking dish.
- Separate dough into 5 biscuits. Cut each one into quarters and place into a bowl. Sprinkle with brown sugar, cinnamon, and orange peel and toss gently to coat.
- Arrange biscuit pieces over hot fruit mixture and bake for about 15 minutes or until biscuits are deep golden brown. Cool slightly before serving.

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

Steps:
- Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
- Mix flour, sugar, and milk.
- When your butter is melted pour your mixture into pan directly on top of butter.
- Place peach/fruit slices into pan on top of cobbler.
- Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
- Serve hot with ice cream if you wish.
- I put 8-10 on the servings it depends on the size of the servings.
