There are many ways to prepare okra-it can be skewered, charred, grilled, or sautéed-but the most popular and traditional Southern method to give it a quick cornmeal dredge and fry it.The recipe is simple and straightforward. All you'll need is fresh okra, salt, cornmeal, and canola oil to pull off this stellar side. Southerners know that fried okra doesn't require much dressing up-when you try to get fancy, you run the risk of losing the true spirit of the dish. The process of frying okra may be simple, but the result is utter perfection-gorgeous, golden-brown nuggets of soft-on-the-inside, crunchy-on-the-outside okra. This fried favorite is also a great way to convince the kids to eat their vegetables. Don't let the summer pass by without making this dish at least once.

2 pounds fresh okra
3/4 cup salt
2 cups plain yellow or white cornmeal
Canola oil

Steps:

  • Cut off and discard tip and stem ends of okra; cut okra crosswise into 1/2-inch-thick slices. Place in a large bowl.
  • Combine 3 qt. water and salt; pour over okra. Soak 30 minutes; drain, rinse well, and drain again. Dredge okra, in batches, in cornmeal.
  • Pour oil to a depth of 2 inches into a Dutch oven; heat to 375ºF. Fry okra, in batches, 4 minutes or until golden. Drain on paper towels. Serve immediately.

1/2 cup all-purpose flour
1 egg
oil, to cover bottom of skillet
salt and pepper

Steps:

  • Slightly beat egg with fork in medium-sized bowl.
  • Pour okra into bowl and mix until coated well with egg.
  • Add flour and mix well.
  • Preheat skillet on medium-high until hot then add enough oil to coat bottom of pan.
  • Shake off excess flour from okra then carefully add to skillet. Flip over okra every few minutes, watching carefully so it does not burn on the bottom.
  • When golden brown, drain okra on paper towels. Immediately sprinkle with salt and freshly-ground pepper.
  • Enjoy!

Steps:

  • Wash the okra, cut it into 1/2-inch rounds, and place it in a small brown paper bag or plastic bag. Add the cornmeal and salt and pepper and shake to coat the okra with the cornmeal and seasoning mixture. Heat the bacon fat in a large, heavy skillet. Drop in the okra pieces a few at a time and fry until golden brown, turning frequently so that they are browned on all sides. Drain on paper towels and serve warm.

1 pound okra, rinsed and cut into 1/2-inch pieces

Steps:

  • In a large bowl, whisk together egg and milk. Place bread crumbs in a second large bowl. Heat oil in a heavy 12-inch skillet over medium-high heat until oil is hot enough to toast a bread crumb in 30 seconds.
  • Toss half the okra in the egg mixture until thoroughly coated (use your hands or, if you must, a spoon). Pick up large handfuls (or slotted spoonfuls) of the okra pieces, letting the excess liquid drip back into the bowl. Transfer okra to the bowl with bread crumbs and toss until coated.
  • Add okra to hot oil and cook until well browned, about 5 minutes. Remove okra with a slotted spoon and drain on paper towels. Repeat with remaining okra. Season with salt and pepper and serve hot.

1 teaspoon ground coriander
1 teaspoon ground paprika, plus more for sprinkling
1 teaspoon dried oregano
1 teaspoon dried thyme
Kosher salt and freshly ground pepper
1/2 cup white-rice flour
1/4 cup semolina flour or fine cornmeal
12 ounces okra, trimmed and quartered lengthwise (or halved, if on the small side)
Vegetable oil, for frying
Lime wedges, for serving

Steps:

  • Mix together coriander, paprika, oregano, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. In a large bowl, whisk together rice flour, semolina, and all but 1 teaspoon of spice mixture. Add okra; toss to fully coat. Shake excess flour mixture from okra back into bowl, and transfer okra to a plate.
  • Add enough water to flour mixture in bowl to create a batter about the thickness of honey (you should have about 3/4 cup; you may need to add more water as you go along, as rice flour thickens quickly).
  • Pour enough oil into a medium heavy pot to come about 1 inch up sides (about 4 cups). Clip a deep-fry thermometer to pot and heat oil over medium to 350°F. Working with a handful at a time, add okra to batter, turning to coat. Using tongs, lift out of batter and carefully add to oil.
  • Cook, turning once, until golden brown, 1 1/2 to 2 minutes. Transfer to a wire rack set inside a rimmed baking sheet; sprinkle immediately with salt. Place in a 200°F oven to keep warm. When all okra is cooked, sprinkle with some of remaining spice mixture and more paprika. Serve with lime wedges.

2 -3 tablespoons all-purpose flour
1 1/2 cups yellow plain cornmeal (stoneground is best)
1 egg, beaten
1 teaspoon salt
1/2 teaspoon pepper
lard or vegetable oil

Steps:

  • Wash okra and cut into 1/2 inch rounds.
  • Put in a mixing bowl and sprinkle with flour. Shake it around vigorously to coat evenly, then bounce in a wire strainer to remove all excess. Final coat should be very light!
  • Return to mixing bowl and add beaten egg. Stir to cover each piece of okra.
  • Place cornmeal in zipper bag with salt and pepper.
  • Add okra in 1 cup batches and shake until each piece is coated. Remove with something that will allow extra cornmeal to fall away. Put on a plate until all okra is coated.
  • Fry in 1/2 inch lard or oil at 400 degrees or med-high until pieces are golden brown.
  • Drain on brown paper or a wire rack.
  • Salt additionally if desired.

3 tablespoons buttermilk
2 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon salt
1/4 teaspoon garlic herb seasoning blend
1/8 teaspoon pepper
Oil for deep-fat frying
Additional salt and pepper, optional

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. 1 cup self-rising flour

Approximately 1 quart vegetable oil, for frying

Steps:

  • Cut the okra into 1/2-inch rounds. In a medium bowl, lightly beat the eggs. Place the flour, salt and pepper in a plastic bag large enough to hold the okra. Dip the okra in the eggs, then drop into the bag. Shake well, making sure that just enough flour adheres to cover and that the okra pieces do not stick together.
  • Pour enough oil into a deep saucepan to come up to approximately 3 inches in the pan. Heat the oil but watch that it doesn't get too hot. Lower heat. Add okra one handful at a time. Fry, watching carefully, for 3 to 5 minutes until golden. Remove with a slotted spoon and drain on paper towels.

butter flavored cooking spray
¼ cup yellow cornmeal
¼ cup panko bread crumbs
½ teaspoon garlic salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Place a baking rack on top of a baking sheet or sheet pan.
  • Cook the frozen okra in the microwave using your microwave's frozen vegetable setting, or on high for 8 minutes. Drain and cool on paper towels, about 5 to 10 minutes. Spray generously with butter flavored cooking spray. Add the cornmeal, panko bread crumbs, garlic salt, and pepper to a plastic food storage bag.
