My dad-a big steak lover-got this recipe form a friend, and now we never eat steak without using this marinade. It makes the meat so juicy and adds a great flavor.

2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup strong brewed coffee
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 pounds beef top sirloin steak (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. , Pour half into a shallow dish; add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Warm reserved marinade; serve with steak.

The deep and rich flavors of the unique steak marinade in this Coffee Balsamic Flank Steak seep in over many hours, making it a truly special meat dish, with rave reviews. note that almost all of the prep time is inactive, marinating time.

⅓ cup brewed strong coffee, (cooled to room temperature)
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
2 teaspoons garlic, (minced)
1 (approximately 2-pound) flank steak
1 tablespoon maple syrup
3 tablespoons balsamic vinegar
¼ teaspoon instant espresso powder
1 tablespoon unsalted butter
salt and freshly ground black pepper

Steps:

  • In a small mixing bowl, whisk the coffee with the balsamic vinegar, brown sugar and garlic. Set aside.
  • Cut any excess fat off of the steak and place it in a large zip-lock bag -- the bag should be large enough so the steak is flat, or almost flat. Pour the marinade in the bag, making sure it coats both sides of the meat. Gently let all the air out of the bag, seal it, and place it in the refrigerator overnight and ideally for about 24 hours. (It's a good idea to put the bag in a bowl in case it leaks.)
  • Remove the steak from the refrigerator about 20 minutes before you're ready to cook.
  • Preheat a stove-top grill (or outdoor barbecue), and take the marinated steak out of the bag and place it on a large plate.
  • Season both sides generously with salt and pepper.
  • Place the steak on the grill. You should hear a sizzling sound when the meat hits the grill - if you don't, the grill isn't' hot enough, and the steak won't caramelize and form a beautiful crust. Wait for the sizzle!
  • Grill the steak until it's cooked the way you like it -- for medium-rare, about 8 minutes. Turn the steak over about half way through the grilling time.
  • While the steak is grilling, add the coffee syrup or maple syrup, balsamic vinegar and espresso powder to a small saucepan, and place it over medium heat. Once it's bubbling, turn the heat to low and let it simmer until it thickens slightly and reduces a bit, about 3 minutes. Then add the butter, and swirl the pan around until the butter has completely melted and blended in. Season to taste with salt and pepper.
  • Place the steak on a large plate or platter, cover with foil, and let it rest for at least 10 minutes to allow the juices settle.
  • Slice the steak thinly against the grain, drizzle the glaze on top and serve.

3 tablespoons strong brewed coffee
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
1 tablespoon brown sugar
2 garlic cloves, minced
1 teaspoon whole black peppercorn, crushed
1/2 teaspoon salt
1 lb flank steak, trimmed of fat

Steps:

  • Whisk coffee, vinegar, oil, sugar, garlic, peppercorns and salt in a glass dish large enough for meat to lie flat. Add steak and turn to coat. Cover and refrigerate for at least 1 hour or up to 8 hours.
  • Heat grill to high.
  • Remove steak from marinade (discard marinade). Lightly oil grill rack (see Tip). Place steak on grill and cook for 4 to 5 minutes per side for medium-rare. Transfer steak to a cutting board and let rest for 5 minutes. Slice thinly across the grain and serve.
  • Tip.
  • To oil a grill rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. Do not use cooking spray on a hot grill.

1 large flank steak (about 2 pounds)

Steps:

  • Combine first 4 ingredients in shallow baking dish. Add steak and turn to coat with marinade. Cover and refrigerate 3 to 6 hours.
  • Prepare barbecue (high heat) or preheat broiler. Season steak generously with additional pepper. Grill or broil steak to desired doneness, brushing occasionally with marinade, about 4 minutes per side for medium rare. thinly slice steak across grain and serve.

I adapted this from a recipe I got off the myrecipes.com site. It is a wonderful marinade for flank steak. The great thing about this recipe is that you can serve the steak alone and it is still flavorful or you can top with yoru favorite sauce. Marinade time (3 hours to overnight) is not included in prep time. I hope you enjoy!

2 garlic cloves
1 tablespoon fresh thyme or 2 teaspoons dried thyme
4 tablespoons soy sauce
2 tablespoons olive oil
salt & pepper
1 1/2 lbs flank steaks

Steps:

  • 1. Place garlic, salt, pepper, and thyme on a cutting surface adn use a large knife to chop together until mixed.
  • 2. Transfer mixture to a large ziplock bag. Add soy sauce and oil; seal and press bag gently to combine ingredients.
  • 3. Place steak in the bag and seal. Turn several times to coat meat.
  • 4. Refrigerate, turning several times, for at least 3 hours and up to overnight.
  • 5. To cook meat: preheat broiler to high and arrange rack 6 inches from heat source. Remove meat from bag and pat dry; discard marinade. Broil on a broiling pan for 7 minutes. Turn meat over and broil 5 to 7 minutes longer. To check for doneness, test with the tip of a sharp knife. If juices run red, broil 1 to 2 minutes longer, until instant-read thermometer reads 140 degrees F (for medium rare). Let steak rest for 10 minutes. Working against the grain, cut into thin slices with a knife.

2 tablespoons peppercorns, medley crushed
1 teaspoon salt
3/4 teaspoon crushed dried rosemary
1 (1 1/2 lb) flank steaks
2 tablespoons butter
1 onion, halved and thinly sliced (about 1 cup)
2 tablespoons balsamic vinegar
2 tablespoons whole grain mustard

Steps:

  • Combine peppercorns, salt and rosemary.
  • Rub both sides of steak with peppercorn mixture.
  • In large nonstick skillet, melt 1 Tbsp butter over medium heat. Add steak; cook until browned, about 7 minutes. Turn. Add onions to pan around steak; cook until meat and onions are browned, about 7 minutes.
  • Tranfer meat to platter.
  • To onions in skillet, add 1/3 cup water, vinegar and mustard. Cook over medium heat, scraping up any brown bits. Bring just to boil; cook, stirring occasionally, until slightly thickened. Stir in remaining butter.
  • Pour over steak.

A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

½ cup vegetable oil
⅓ cup soy sauce
¼ cup red wine vinegar
2 tablespoons fresh lemon juice
1 ½ tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon ground black pepper
1 ½ pounds flank steak

Steps:

  • In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
  • Preheat grill for medium-high heat.
  • Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.
