3 tablespoons good olive oil
1 small French bread or boule, cut into 1-inch cubes (6 cups)
1 teaspoon kosher salt
2 large, ripe tomatoes, cut into 1-inch cubes
1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced
20 large basil leaves, coarsely chopped
3 tablespoons capers, drained
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons Champagne vinegar
1/2 cup good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.
  • For the vinaigrette, whisk all the ingredients together.
  • In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

400g black beans , drained
2 large handfuls baby spinach leaves , roughly chopped
500g heritage tomatoes , chopped into large chunks
½ cucumber , halved lengthways, seeds scooped out and sliced on an angle
1 mango , peeled and chopped into chunks
1 large red onion , halved and finely sliced
6-8 radishes , sliced
2 avocados , peeled and sliced
100g feta , crumbled
handful of herbs (reserved from the dressing)
large bunch mint
small bunch coriander
small bunch basil
1 fat green chilli , deseeded and chopped
1 small garlic clove
100ml extra virgin olive oil or rapeseed oil
2 limes , zested and juiced
2 tbsp white wine vinegar
2 tsp honey

Steps:

  • Make the dressing by blending all of the ingredients in a food processor (or very finely chop them), saving a few herb leaves for the salad. You can make the dressing up to 24 hrs before serving.
  • Scatter the beans and spinach over a large platter. Arrange the tomatoes, cucumber, mango, onion and radishes on top and gently toss together with your hands. Top the salad with the avocados, feta and herbs, and serve the dressing on the side.

Everything in this salad is fresh, except the bread! Prepare this salad by using a loaf of artisan bread or rosemary bread that is a touch stale. If your bread is too fresh, toast it until it is about half as dried and crunchy as a crouton.

1 clove garlic
1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
⅛ cup chopped fresh thyme
¼ cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • Rub a peeled clove of garlic around a wooden salad bowl.
  • Pull apart or chop the bread into bite-size pieces.
  • In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

Here is another of the famous "Martha" recipe's, I alway love her recipes, they are a little busy to make, but always have that great flavor, and are worth all the effort you put into them!!

3 tablespoons champagne vinegar
1 medium shallot, finely chopped
coarse salt
8 ounces green beans, trimmed
1 lb baby zucchini or 1 lb regular zucchini, cut into 1/2 ich pieces
1 lb small ripe tomatoes (cocktail or cherry)
1 English cucumber, cut into 1/2-inch dice
2 tablespoons smooth Dijon mustard
2 tablespoons grainy mustard
1/4 cup loosely packed fresh basil leaf, coarsely chopped
1/4 cup loosely packed fresh flat-leaf parsley, coarsely chopped
fresh ground pepper, to taste
1/4 cup extra virgin olive oil, plus
1 tablespoon extra virgin olive oil
8 ounces ciabatta, about 1/2 loaf, torn into 1-inch pieces

Steps:

  • Combine vinegar and shallot in a bowl; set aside to soften shallot.
  • Prepare an ice-water bath. Bring a pot of water to a boil. Add 1 teaspoons salt and green beans, and cook until bright green, about 2 minutes. Using a slotted spoon, transfer green beans to ice-water bath. Add zucchini to boiling water, and cook until tender, about 3 minutes. Transfer to ice-water bath. Let cool, then drain.
  • Toss green beans zucchini, tomatoes, and cucumbers. in a large bowl.
  • Add mustard, herbs, 1 teaspoons salt, and pepper to shallot mixture. Add 1/4 cup oil in a slow steady stream until emulsified.
  • Pour vinaigrette over vegetables, and toss. Let stand at least 1 hour to allow the flavors to meld. (vegetables can be covered and refrigerated up to 2 days; bring to room temperature before serving.).
  • Preheat oven to 350°F Place bread on rimmed baking sheet. Drizzle with remaining tablespoon of oil, and toss. Toast, stirring occasionally, until golden brown, about 20 minutes. Add croutons to salad and toss. Let stand 1 hour before serving so that the croutons can soften. If you prefer yoru croutons crisp, add them to the salad just before serving.

1 medium shallot, finely chopped
Coarse salt
8 ounces green beans, trimmed
1 pound baby zucchini or regular zucchini, cut into 1/2-inch pieces
