3 large eggs
2 cups store-bought frozen grated coconut, thawed
11/2 cups sugar
1/2 cup buttermilk, well shaken
1/2 cup (1 stick) unsalted butter, melted
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1 deep-dish unbaked 9-inch pie shell, homemade or purchased

Steps:

  • Preheat the oven to 350 degrees F. In the bowl of an electric mixer and using the whisk attachment, beat the eggs, coconut, sugar, buttermilk, butter, flour and vanilla until well combined. Your mixture may look curdled but keep beating on high until it comes together (it will still be chunky from the coconut).
  • Pour the filling into the pie shell. Bake until lightly browned, the center of the pie doesn't jiggle when shaken lightly and a toothpick inserted into the center comes out moist but not covered with custard, 45 to 50 minutes. The coconut will rise to form a top crust during baking. Set the pie on a wire rack and cool completely before serving, about 1 hour.

1 1/2 c sugar
1 stick butter, softened
1 tsp vanilla extract
1 Tbsp white vinegar
1 c shredded coconut

Steps:

  • 1. Preheat oven to 350. In a medium bowl, add lightly beaten eggs and then the remaining ingredients in order.
  • 2. Pour into unbaked pie shell. Bake at 350 for 1 hour or until set in center and golden brown on top (center should not jiggle) Remove from oven and let cool completely. Yum!

4 large eggs, room temperature
1 c granulated sugar, or splenda
1/2 c splenda brown sugar blend, or reg. brown sugar
1 1/3 c shredded coconut
1 stick butter melted
1 Tbsp malibu rum coconut liqueur
1 Tbsp lemon juice
1 tsp vanilla extract
1 Tbsp wondra flour
2 tsp coconut extract
1 deep dish refrigerated pie crust, or make your own

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dump all ingredients into a large bowl and beat till blended together.
  • 3. Pour mixture into a deep dish prepared pie crust, home made or refrigerated.
  • 4. Bake in Preheated 350 degree F. oven for 55 minutes to an hour until golden brown. Allow to cool and set before slicing. Add a dollop of whipped cream if desired.
  • 5. Please note I added my own spin to this recipe, in memory of my Mother during this Holiday season, there was no Splenda back then, and certainly there was no Malibu Rum, and if there was Mama didn't know about it, she used what she got from the Watkins salesman that came around about once per month or so. Hope you like this childhood favorite as much as I do.

1-1/2 cups whole wheat flour
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup canola oil
2 tablespoons whole milk
FILLING:
1/2 cup sugar
3 tablespoons cornstarch
1 tablespoon all-purpose flour
1/2 teaspoon salt
2-1/4 cups whole milk
3 large egg yolks, room temperature
1 tablespoon butter
1/2 cup sweetened shredded coconut
1 teaspoon vanilla extract
MERINGUE:
3 large egg whites, room temperature
1 cup marshmallow creme
1/4 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a bowl, mix flour, sugar and salt. In another bowl, whisk oil and milk. Gradually add to flour mixture, tossing with a fork until moistened (mixture will be crumbly). Press onto bottom and up sides of an ungreased 9-in. pie plate. Bake 20 minutes. Cool on a wire rack., For filling, in a heavy saucepan, mix sugar, cornstarch, flour and salt. Gradually whisk in milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat; stir in butter, coconut and vanilla., For meringue, in a bowl, beat egg whites until soft peaks form. Gradually add marshmallow creme, beating on high speed. Continue beating until stiff glossy peaks form., Transfer hot filling to crust. Spread meringue evenly over filling, sealing to edge of crust. Sprinkle with coconut. Bake 12-15 minutes or until meringue is golden brown. Cool 1 hour on a wire rack. Refrigerate at least 3 hours before serving.

  • Put all ingredients into a mixing bowl and mix well with a mixer.

1-1/2 cups sugar
1 cup whole milk
1/2 cup butter, melted
1 tablespoon all-purpose flour
1 teaspoon vanilla extract

1 cup sweetened shredded coconut
1 unbaked pastry shell (9 inches)

Steps:

  • In a bowl, combine all ingredients except pie shell. Pour into the pie shell and bake at 400° for 10 minutes. Reduce heat to 325° and bake 40 minutes or until top is golden and the center is almost set. When cool, store in the refrigerator.

  • In the bowl of an electric mixer, beat the sugar and flour with the melted butter. Add the eggs one at a time, mixing well after each. Add the buttermilk and vanilla and combine again. Stir in the coconut.
  • Pour the filling into the prepared pie shell. Bake for 45 to 50 minutes, or until lightly brown and the center of the pie doesn't jiggle when shaken lightly. A toothpick inserted into the center of the pie should come out moist but not covered with custard. The coconut will rise to form a top crust during baking. Set the pie in the pan on a wire rack and cool completely before serving.

1½ cups/188 grams all-purpose flour
2 tablespoons/25 grams granulated sugar
½ teaspoon fine sea salt
¾ cup/170 grams unsalted butter
3 large eggs
1 1/3 cups/267 grams granulated sugar
½ cup/113 grams unsalted butter, melted and cooled
½ cup/118 milliliters unsweetened coconut milk or whole milk
2 teaspoons apple cider vinegar or 1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon zest (optional)
1 teaspoon vanilla extract
½ teaspoon fine sea salt
1 packed cup/100 grams shredded sweetened coconut

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch square pan and line with parchment, leaving some overhanging.
  • In a food processor, pulse together flour, sugar and salt. Pulse in butter until crumbs form and the dough starts to come together. Press mixture into the prepared pan in an even layer. Bake until firm on top and lightly golden at the edges, 20 to 25 minutes. Transfer to a rack. You can bake the crust up to 6 hours ahead, or use it while it's still hot.

  • Transfer to a wire rack to cool completely, then chill for at least 2 hours. Cut into bars and serve.
