6 skinless, boneless chicken breast halves - cut into strips
¼ cup olive oil
2 large onions, diced
⅓ cup curry powder, or to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
  • Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

2 tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, crushed
thumb-sized piece of ginger, grated
6 chicken thighs, boneless and skinless
3 tbsp medium spice paste (tikka works well)
400g can chopped tomatoes
100g Greek yogurt
1 small bunch of coriander, leaves chopped
50g ground almonds
naan breads or cooked basmati rice, to serve

Steps:

  • Heat the oil in a flameproof casserole dish or large frying pan over a medium heat. Add the onion and a generous pinch of salt and fry for 8-10 mins, or until the onion has turned golden brown and sticky. Add the garlic and ginger, cooking for a further minute.
  • Chop the chicken into chunky 3cm pieces, add to the pan and fry for 5 mins before stirring through the spice paste and tomatoes, along with 250ml water. Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 25-30 mins or until rich and slightly reduced. Stir though the yogurt, coriander and ground almonds, season and serve with warm naan or fluffy basmati rice.

2 cloves garlic, minced
1 tablespoon curry powder
1 14.5 oz. can diced fire-roasted tomatoes, drained
1/3 cup low-sodium chicken broth (see notes)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper, optional
1 1/2 cups cooked chicken, chopped (from a rotisserie or leftover, see notes)
3/4 cup plain Greek yogurt (non-fat, 2% or 5% fat are all OK)
Chopped fresh parsley or cilantro
Chopped peanuts (optional)

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and sauté for 4-5 minutes, until softened. Add garlic and sauté another 30 seconds.
  • Stir in curry powder, diced tomatoes, and chicken broth. Season with salt, pepper and cayenne, if using.
  • Bring to a low simmer and cook for 2-3 minutes, until slightly thickened.
  • Stir in chicken until warmed through, 1-2 more minutes.
  • Turn off the heat and stir in the Greek yogurt until just combined.

1 tablespoon canola oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks

2 shallots, minced
3 cloves garlic, minced
3 tablespoons red curry paste
1 tablespoon freshly grated ginger
1 (13.5-ounce) can coconut milk
1 bunch broccolini, cut into 3-inch pieces
2 green onions, thinly sliced
3 tablespoons chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice

Steps:

  • In a large saucepan of 3 cups water, cook rice according to package instructions; set aside. Heat canola oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Add chicken, shallots and garlic to the stockpot and cook until golden, about 3-5 minutes. Stir in red curry paste and ginger until fragrant, about 1 minute. Stir in coconut milk. 500 g (1lb) boneless chicken thighs
2 tbsp plain yogurt
1 tbsp spices (any combination of coriander, cumin, cardamom, chilli, turmeric or Garam Masala.)
1 onion (finely chopped )
4 garlic cloves (crushed )
1 tsp ginger (crushed )
1 tbsp spices (The same mixture you used for the marinade )
1 cup tomato Passata ((or use 1 can chopped/crushed tomatoes) )
1 tsp salt
½ tsp pepper
pinch of sugar
1 cup cream

Steps:

  • Chop the chicken into bite-size chunks and place in a mixing bowl.
  • Add the yogurt and half of the spices (the other half will be used in the curry sauce), salt and pepper and mix well.
  • Cover and allow to marinate for at least 10 minutes but up to 24 hours in the fridge.
  • In a large, deep braiser/pan, heat a splash of oil then brown the chicken on both sides in batches.
  • Remove from the pan then add the onion, garlic and ginger to the pan and cook until soft and fragrant.
  • Add a splash of water to lift the "fond" left over from the chicken from the bottom of the pan.
  • Add the remaining spices and cook for 1 minute then pour in the tomatoes.
  • Bring to a simmer then season with salt, pepper and sugar.
  • Add the chicken back in to the sauce and pour in the cream.
  • Reduce the heat and allow to simmer for 15 minutes until the sauce has thickened slightly and the chicken is cooked through.
  • Serve with yogurt, coriander/cilantro, rice and roti or naan bread.

¾ cup Plain yoghurt
2 red chillies
2 bay leaves
1/2 teaspoon ground cloves

Thumb size piece ginger (grated)

800 g (28oz) whole peeled tomatoes
400 g (14oz) tomato puree

3 tablespoons oil/ghee
2 large onions (sliced)
4 garlic cloves (thinly sliced)
½ cup cream
½ cup butter (cubed)

Steps:

  • In a blender, process the spices, yoghurt, tomatoes, ginger and garlic until completely fine. Pour over the chopped chicken and allow to marinade (I left mine for about 2 hours)
  • Heat the oil in a hot pot and fry the onions until soft and golden.
  • Add the garlic and fry for another minute then add the Chicken and all the marinade and allow to come to the boil.
  • Lower the heat and allow to cook for 30-45 minutes until the chicken is fully cooked and the sauce has thickened. Add the cream and cook for another 5 minutes.
  • Add the butter and stir through. Season to taste.
  • Serve with Jasmine Rice and Naan Bread.

Steps:

  • Add a 1/2 teaspoon chilli powder and turmeric to the chicken pieces.
  • Mix well and let it marinate for atleast 1/2 hour.
  • Heat a heat and add oil.
  • When the oil is hot, add the ginger and onion.
  • Fry in medium heat until the onions are brown and soft.
  • Add chopped tomatoes and continue frying until oil begins to leave.
  • Add the remaining salt and chilli powder and continue to fry stirring occasionally for 3 minutes.
  • Add the well marinated chicken pieces and mix well so that all the pieces are coated with the onion, tomato gravy.
  • Close the vessel with lid and let the chicken cook on low-medium for about 5-7 minutes.
  • Add a little water and the yogurt and mix well. Let it cook for a few more minutes until the gravy becomes a bit thick. ( the yogurt added makes a very rich gravy).
  • Switch off the stove. Sprinkle with the chopped cliantro leaves.
  • Serve hot with white rice.

You cant get much easier than this. I was craving chicken curry one day and couldnt find anything that was easy enough for me. Also, it seemed like i was always missing atleast one ingredient in every recipe i could find. This recipe is easy to adjust. I add more peas n carrots if i need more veggies for the day. This is alot better the next day. Pour in some more chicken broth or water and heat in up in the skillet to bring it back to life. :)

2 tablespoons margarine (or enough to coat the skillet you're using) or 2 tablespoons oil (or enough to coat the skillet you're using)
2 boneless skinless chicken breasts
1 1/2 cups diced onions
1 cup fresh carrot, diced
1 1/2 cups frozen peas
1 (8 ounce) can chicken broth
1/3 cup heavy cream
3 teaspoons flour (i just eyeball it)
1 tablespoon curry powder (yellow)

  • Brown off chicken breast with butter, set aside. Once the chicken cools off, cut into bite-sized pieces.
  • Cook the onion down until it is translucent, using the same pan you cooked the chicken inches
  • Add carrots and cook until softened.
  • Add all of your spices and cook for another 3 minutes.
  • Add flour and scrape the bottom of the pan, like you're making a rue for a gravy.
  • Add the whole can of chicken broth, slowly. Return the chicken back into the pan.
  • Stir and simmer for 15 minutes.
  • Add frozen peas and cream and simmer for another 5 minutes or so, until peas are fully cooked.
  • Serve with rice! Sometimes i even mix the rice in just before i eat. Im gonna mix it on my plate anyway! :).

1/4 cup onion, minced
1 1/2-2 teaspoons curry powder
3 tablespoons flour

  • Curry Accompaniments:.

  • You can also use this recipe to make shrimp curry. Replace the cooked chicken with 2 cups of cooked, cleaned shrimp.

1/2 tsp Chinese five spice mix
1/4 tsp ground ginger
1/4 tsp garlic powder
2 chicken thighs (diced, skin and bone removed)

240 ml vegetable stock
2 tsp soy sauce (*or tamari to be gluten free)
2 tsp chilli sauce (or more to taste)
1/4 red pepper (sliced)
80 g miniature corn
80 g mange tout peas

Steps:

  • Mix the spices and cornflour together. Then add the chopped chicken and mix well to evenly coat the chicken.
  • Heat the oil in a large frying pan or flat casserole dish. Add the chicken and cook, stirring frequently, until the chicken has cooked on all sides.
  • Add enough stock to just cover the bottom of the pan. Stir well so that there are no lumps of spice mixture. Add the sliced red pepper & the soy and chilli sauces.
  • Simmer the mixture gently for about 15 minutes, stirring occasionally. The sauce will thicken until a track will remain for a few seconds after dragging a wooden spoon across the bottom of the pan.
  • Add the mange tout and miniature corn. Stir in well and then cover for about two minutes, to allow to soften slightly.

2 lb Boneless skinless chicken (Wash, drain, and cut into 2 inch pieces)
1 large Tomato (finely chopped)
2 tbsp Tomato paste
½ cup Sour cream (Or yogurt or coconut cream)
1 tbsp Lemon juice ((less if yogurt or sour cream is too sour))
2 tbsp Canola oil
1 tsp Kosher salt
½ tsp Black pepper
1 large Onion (roughly chopped)
6 large Garlic cloves
3 inch Fresh ginger
¼ cup Cilantro leaves
5 Curry leaves
2 tbsp Red chilly powder (or Paprika (med or hot))
1 tsp Cayenne pepper (mild or hot)
3 tbsp Coriander powder
1 tbsp Cumin powder
½ tsp Turmeric powder
1 tsp Garam masala

Steps:

  • Curry paste - Add all curry paste ingredients to a food processor and blend until smooth. Set aside Pro tip - if using a small blender do this in batches. Also, make sure to cut large pieces to encourage a smooth paste.
  • Saute paste - In a large skillet or pan over medium heat, add the oil and ground curry paste. Cook for about 2 minutes until fragrant. If necessary add a few tablespoons of water to prevent the spices from burning. Pro tip- I add a few tablespoons of water to clean the blender and add it to the pan, this prevents the spices from burning.
  • Tomatoes - Next, add the chopped tomatoes and tomato paste. Cook another 2 minute
  • Chicken - Add the chicken pieces and saute for 2 minutes more or until the chicken is well coated in all the masala. Add 1 cup water or chicken broth and combine well. Bring to a boil on medium-high heat.
  • Simmer - Season with salt and pepper. Cover the pot and cook on medium heat for about 8 to 10 minutes or until the chicken is cooked. Pro tip - if you use chicken breast it should be done in about 6 to 8 minutes, boneless chicken thighs or legs will take about 10 to 12 minutes.
  • Acid - Finally, add sour cream (or yogurt) and lemon juice. Simmer another 2 minutes. Taste and adjust seasoning and consistency. Pro tip - if serving chicken curry with rice you may want to have some gravy so add a little water and bring to a boil. If serving chicken curry with chapati a thicker consistency is preferable.
  • Sprinkle with more chopped cilantro before you serve.

1 tablespoons coconut oil
6-8 chicken thighs (skin-on, bone-in)
1 onion (finely chopped)
3 garlic cloves (crushed)
1 teaspoon crushed ginger
2 teaspoons curry powder (I used Garam Masala)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon smoked paprika
1/2 teaspoon chilli powder/cayenne pepper (optional)
400 g (14o) coconut milk
2 tablespoons cream (optional)
1 teaspoon honey (optional)
juice of 1/2 lemon
salt and pepper to taste
2 cups broccoli florets

Steps:

  • Melt the coconut oil in a large frying pan then fry the chicken until golden and crisp, remove and set aside.
  • Fry the onion in the same pan (add a little more coconut oil if needed) until soft and translucent then add the ginger, garlic and spices and fry for another 30 seconds until fragrant.
  • Pour in the coconut milk, cream and honey and allow to come to a simmer. Add the chicken thighs to the sauce then turn down the heat and allow to cook for 15-20 minutes until the chicken is cooked.
  • In the meantime, steam the broccoli until almost cooked through and transfer to the chicken and coconut curry sauce to finish cooking.
  • Season the chicken with lemon juice, salt and pepper and serve.

This is an adapted recipe of Madhur Jafreys. I have had great success with making this recipe for guests. People are always asking for this recipe as they see how quickly I get dinner together and they love how it tastes. I have used ground turkey as a sub for the ground chicken. Also I have used cubed chicken breasts if I don't have ground on hand. I once used leftover Tzatziki sauce and used that in lieu of the yogurt or sour cream and it was also good. The curry powder I use is the Sweet Curry I buy from penzeys.com. The recipe is flexible if you want to add 1 cup of cooked/cubed potatoes and/or 1 Cup of frozen peas at the step where you add the tomatoes.

I've found a hack to making the most delicious Indian Chicken Curry in just 30 minutes! I love this recipe because it has all those warm spicy Indian flavors, but there are only two spice blends called for (yellow curry and garam masala). The curry sauce has a great depth of flavor, and it's so easy to make. Perfect for a weeknight!

2 tablespoons yellow curry powder
1 & 1/2 teaspoons garam masala
1/4 teaspoon cayenne pepper (more or less to taste)
1 & 1/2 pounds chicken breast (chopped)
1 teaspoon kosher salt
1 13-ounce can coconut milk
3 tablespoons olive oil
1 medium onion (chopped)
1 jalapeno (seeded and chopped)
1 tablespoon garlic (smashed and minced)
1 tablespoon ginger (peeled and then minced)
1 tablespoon fresh lemon juice (about half a lemon)
1 cup chicken broth*
1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup cilantro (chopped)

Steps:

  • In a large saute 12-inch skillet, toast the spices in a dry pan. This 2 minute process wakes up their flavor so much! Add 2 tablespoons curry powder, 1 and 1/2 teaspoons garam masala, and 1/4 teaspoon cayenne pepper to the dry pan and set over medium heat. Let toast for 1-2 minutes, keeping a careful eye on it. Don't walk away and let it burn. Continually stir the dry spices so they don't scorch. After about 90-120 seconds, remove from heat and scrape into a small bowl.
  • Chop 1 and 1/2 pounds chicken breast into bite size chunks, 1-2 inch pieces. Sprinkle with 1 teaspoon kosher salt. Add the raw chicken pieces to a medium bowl.
  • Sprinkle the chicken in the bowl with HALF of the toasted spices. Stir to mix it together and get all the chicken coated.
  • Open the can of coconut milk and dump it on the chicken. We're going to let it marinate for a hot minute while we chop our veggies.
  • Chop the onion and jalapeno. Make sure you get all the seeds and membranes out of the jalapeno unless you like it really spicy!
  • Smash, peel, and mince the garlic, you will need 3-4 cloves to get 1 tablespoon. (Or you can use the jarred garlic if you're in a rush) Peel the ginger with a spoon (it's the best way!) and mince up 1 tablespoon (save the rest of your ginger in the freezer for next time!)
  • Add 3 tablespoons olive oil to the same large skillet from before. Set over medium high heat.
  • When the oil is hot and shimmery, add the chopped onion and jalapeno. Add all the remaining toasted spices to the onions. Let saute for 4-6 minutes, until the onions are translucent. If the spices are starting to stick to the pan, add a little more oil.
  • Add the minced garlic and ginger and saute for 1 minute until fragrant. Do not let it brown, turn down the heat if necessary, or add a bit more oil.
  • Add 1 tablespoon lemon juice to the pan (about half a lemon).
  • Add the coconut milk and chicken to the pan. Add 1 cup chicken broth and stir. Turn the heat back up to medium high if you moved it down.
  • Let the mixture come to a gentle boil over medium high heat, then reduce the heat to a simmer over medium low heat. Make sure there is a slow bubble happening.
  • In a small bowl, add 2 tablespoons water and 1 tablespoon cornstarch. Stir it together until there are no lumps (add a bit more cold water if necessary). Add the cornstarch slurry to the chicken curry and stir.
  • Let the curry simmer on the lowest heat you can while still maintaining a slow bubble. The curry is done when the chicken is cooked through, it should take about 5-8 minutes depending on how large your chicken pieces are. Test the chicken by splitting a piece with your wooden spoon to see if it's cooked. Once the chicken is cooked, remove from heat immediately so that it doesn't get overcooked and tough.
  • Chop about 1/2 cup of cilantro and stir into the curry.
  • Serve hot with Jasmine rice or Basmati rice, Homemade Naan, or Buttery Roti!
