SLOW-COOKER BOLOGNESE

4 tablespoons olive oil
4 celery stalks, chopped
2 carrots, chopped
2 onions, chopped
Kosher salt and freshly ground black pepper
6 cloves garlic, chopped
One 6-ounce can tomato paste
1 cup dry red wine
4 pounds ground beef
2 cups whole milk
Two 28-ounce cans crushed tomatoes
1 tablespoon dried oregano
1 tablespoon dried basil
2 teaspoons dried thyme
2 teaspoons red pepper flakes
1/2 teaspoon ground nutmeg
1 Parmesan rind, optional, plus grated Parmesan, for serving
Cooked spaghetti, for serving
Chopped fresh basil, for serving
Chopped fresh parsley, for serving

Steps:

  • Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the celery, carrots and onions, season with salt and pepper and cook until softened, about 10 minutes. Stir in the garlic and cook for 30 seconds. Add the tomato paste and cook for a minute. Pour in the red wine and cook until it is mostly evaporated, about 3 minutes. Pour this mixture into a slow cooker.
  • Pour the remaining 2 tablespoons oil into the skillet, add the beef and season with salt and pepper. Cook, breaking up any lumps, until it is nicely browned, about 15 minutes. Drain off any excess fat. Stir in the milk and cook until it is mostly absorbed by the meat, about 5 minutes. Add this to the slow cooker along with the tomatoes, oregano, basil, thyme, red pepper flakes, nutmeg and Parmesan rind if using. Add some salt. Give it a good stir, cover and cook on low for 6 hours.
  • Skim off any fat on top and check the consistency. If it is too thick, add a bit of water. If it is too thin, cook for another 30 minutes with the cover off.
  • Remove the rind and serve over spaghetti with lots of grated Parmesan and topped with fresh basil and parsley. Extra sauce can be frozen for later use.

1 cup finely chopped baby carrots
1 onion, finely chopped
2 cloves garlic, minced
1 pound lean ground beef
1 ½ cups whole milk, divided
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
¼ teaspoon crushed red pepper flakes
¼ cup grated Parmesan cheese

Steps:

  • Heat the olive oil in a large skillet over medium heat, and cook and stir the carrots, onion, and garlic until tender, about 10 minutes. Place the ground beef into the skillet and cook and stir, breaking up the meat as it cooks, until browned. Drain off excess fat from the skillet, and pour in 1 cup milk. Bring to a simmer, reduce heat to medium-low, and simmer until the milk is absorbed, about 15 minutes.
  • Place the beef mixture into a slow cooker, and set the cooker to High. Stir in crushed tomatoes, tomato paste, salt, pepper, basil, oregano, and red pepper flakes, and cook for 2 hours. Mix in 1/2 cup milk and Parmesan cheese, stir well, and cook for 2 more hours.

This is a great way to make a big batch of homemade Bolognese sauce and freeze it to have on hand for months. The slow cooking process really allows the flavors to develop and creates an incredible pairing for pasta.

2 tablespoons olive oil
4 cloves garlic, minced
1 large carrot, finely chopped
1 celery stalk, finely chopped
1 yellow onion, finely chopped
Kosher salt and cracked black pepper
3 tablespoons tomato paste
1/2 teaspoon dried thyme
1/8 teaspoon ground nutmeg
1/2 cup dry red wine
2/3 cup heavy cream
Two 28-ounce cans crushed tomatoes
1 pound ground pork
1 pound ground sirloin
Pasta, for serving

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the garlic, carrots, celery and onions. Sprinkle with salt and pepper and cook about 3 minutes. Add the tomato paste, thyme and nutmeg, and continue cooking until the vegetables have softened and started to brown, about 2 minutes. Deglaze with the wine, pulling up any bits from the bottom of the pan. Season with salt and pepper.
  • Carefully transfer to the slow cooker. Stir in the cream and tomatoes. Mix the pork and sirloin together in a separate bowl, using your hands, until combined. Stir the meat into the slow cooker, spreading out evenly and avoiding any large clumps. Cover and cook on high for 4 to 6 hours or on low 8 to 10 hours. Skim the accumulated grease from the surface before serving. Serve over pasta with crusty bread for soaking up the sauce.

3 tablespoons olive oil, plus more to finish
1 pound ground bison
1 medium carrot, finely chopped
1/2 red onion, chopped
2 cloves garlic, smashed and peeled
1 teaspoon kosher salt, plus more for the pasta water
1 cup dry white wine
One 28-ounce can whole san marzano tomatoes, crushed by hand
One 3-inch piece Parmesan cheese rind
2 stems fresh basil
1 pound pappardelle pasta
1 cup freshly grated Parmigiano-Reggiano cheese, plus more to serve
2 tablespoons unsalted butter

Steps:

  • Heat a medium Dutch oven over medium-high heat. Add the olive oil and the ground bison. Cook, breaking apart the meat into very small pieces with a wooden spoon until the meat is lightly browned, about 8 minutes. Add the carrot, red onion and garlic to the pan and stir to combine. Season with 1 teaspoon salt and cook for 3 minutes or until the vegetables are soft and fragrant. Deglaze with the white wine, scraping up the brown bits from the bottom of the pan with the wooden spoon. Simmer for 5 minutes or until almost completely reduced. Stir in the hand crushed tomatoes and nestle in the Parmesan rind and basil. Season with the remaining salt. Reduce the heat the medium and simmer the sauce, stirring occasionally for 25 minutes.
  • Meanwhile bring a large pot of water to a boil over high heat. Season generously with salt. Add the pasta to the water and cook for 2 minutes less than directed, about 6 minutes. Using tongs, add the pasta directly from the pasta water to the sauce. Add the Parmigiano-Reggiano cheese directly to the bare pasta along with the butter. Toss the pasta with the sauce to coat, thinning as needed with the pasta water to ensure it clings to the pasta. Serve drizzled with more olive oil and sprinkled with more Parmigiano-Reggiano cheese if desired.

4 slices bacon, cut into 1/2 inch pieces
1 large onion, minced
3 garlic cloves, minced
1 carrot, minced
1 stalk celery, minced
1 (28 ounce) can whole tomatoes
1 lb lean ground beef
1/2 lb sweet Italian pork sausage
1/2 lb fresh mushrooms, sliced
8 ounces tomato sauce
6 ounces tomato paste
1/2 cup dry white wine
1/2 cup chicken stock
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf
salt, to taste
ground black pepper, to taste

Steps:

  • In a large skillet, warm oil over medium heat and saute bacon until browned and crisp; remove to a paper-towel lined dish and set aside.
  • Add onion, garlic, carrots and celery to fat remaining in skillet. Saute until onion is translucent and limp, 3-5 minutes. Transfer to a slow cooker using a slotted spoon. Discard any fat remaining in pan.
  • Pour tomatoes into a large bowl. Squeeze the tomatoes with your hand, crushing them into pulp. Pour pulp and juices into slow cooker.
  • Brown beef and sausage in skillet. Drain off excess fat and add to slow cooker, along with bacon, mushrooms, tomato sauce, tomato paste, wine, stock, basil, oregano, bay leaf, salt and pepper. Cook on low for 4 hours. Serve sauce over hot pasta. (Remove bay leaf before serving.).

2 medium carrots
2 (425 g) cans chopped tomatoes
1 onion, sliced
2 stalks celery, chopped
2 red capsicums, roasted, skinned and chopped
2 garlic cloves, finely sliced
1/2 cup beef stock
2 teaspoons dried oregano
6 -8 fresh basil leaves
3 dried bay leaves
fresh ground black pepper
1 teaspoon salt (optional)

Steps:

  • Peel and chop carrot then use a food processor until very finely diced.
  • Brown mince in batches and drain.
