EASY CREAMY BAKED ASPARAGUS
A fantastic way to have asparagus for all those asparagus lovers out there, and for those of you who are on the fence about them, try this recipe, I know you will enjoy it - so simple!! You can make this ahead, assemble as directed; cover. Refrigerate up to 24 hours. Remove from refrigerator 20 minutes before baking. Bake, uncovered, at 350F for 15 minutes or until heated through.

Steps:
- Preheat oven to 350°F Cook asparagus in large skillet of simmering water 2-3 minutes or until bright green but still crisp; drain.
- Toss asparagus with dressing in 1 1/2 - 2 quart baking dish. Sprinkle with cheese and cracker crumbs.
- Bake 10-15 minutes or until cheese is lightly brownee and mixture is heated through.

Steps:
- Put asparagus and stock into a medium pot and bring to a boil over high heat.
- Reduce heat to medium and simmer until asparagus is very soft, about 10 to 15 minutes, Set aside 2 cups of the broth; keep warm.
- Puree asparagus and remaining broth in blender; return to pot and set aside.
- (I puree in batches) Melt butter in a medium heavy saucepan over low heat.
- Add flour and cook stirring constantly with a wire whisk for 2 minutes.
- Whisk in reserved warm broth.
- Increase heat to medium and cook, stirring, until smooth and thickened, about 5 minutes.
- Transfer to pot with asparagus puree.
- Bring to a simmer over medium heat, stirring often.
- Slowly add half-n-half.
- Season to taste with salt and pepper.

My mom made this when I was a kid. My wife makes it for me often. It's easy and delicious. I am not a big fan of asparagus prepared any other way. I like to pour over one slice of toast, add another on top, and then pour more over it.

Steps:
- Place asparagus into a large pot or skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.
- Mix 3 tablespoons butter and flour together in the same pot over medium-low heat until flour is dissolved and mixture is smooth, 2 to 3 minutes. Add milk, asparagus, and salt to butter-flour mixture and simmer until thickened, 10 to 15 minutes.
- Spread about 1 teaspoon butter onto each piece of toast. Pour creamed asparagus over each piece of toast.

- Preheat oven to 375-400°F.
- Remove fibrous end pieces of the asparagus.
- Lay asparagus across shallow baking dish and add oil, salt, lemon juice, and pepper. Roll and toss to coat well. Arrange the oiled asparagus in the pan so they do not overlap.
- Bake in oven 20 minutes.
