Categories     Breakfast     Dessert

Time 2h40m

Number Of Ingredients 17

1 cup whole milk (warm (105 degrees F))
½ cup + 1 Tablespoon granulated sugar (divided)
1 Tablespoon Active dry yeast
2 large eggs (room temperature)
6 Tablespoons salted butter (melted)
1 teaspoon pure vanilla extract
4 to 4 ½ cups all-purpose flour
1 teaspoon fine sea salt
1 teaspoon ground cinnamon
1 cup brown sugar (packed)
2 ½ Tablespoons ground cinnamon
6 Tablespoons salted butter (softened)
8 oz cream cheese (softened)
¼ cup salted butter (softened)
2 cups powdered sugar
½ tsp pure vanilla extract
1/8 tsp fine sea salt

Steps:

  • Warm milk in the microwave milk for 45-60 seconds. It should be warm but not hot to the touch (about 105 degrees F).
  • Place milk into the bowl of your standing mixer, then add 1 TBS sugar and 1 TBS yeast to the warm milk. Stir and let it sit (proof) for five minutes or until it becomes foamy.
  • Add the ½ cup sugar, butter, eggs, and vanilla to the mixture in the bowl of your standing mixer. Use a dough hook to stir until combined
  • Add 4 cups flour, salt and cinnamon and stir the dough hook, starting on low and increasing to high.
  • Knead dough in the standing mixer until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If the dough seems too sticky and is not forming a ball, add more flour 1 TBS at a time until a smooth ball is formed.
  • Transfer dough to a floured surface and knead with your hands until it is smooth and elastic (about 3-5 minutes). Form it into a ball.
  • Grease a large bowl and place the dough inside.
  • Cover the bowl with a warm, damp towel and put the bowl in a warm place to rise.
  • Let the dough rise in a warm place about 1 hour or until dough has doubled in size.
  • While the dough is rising, make the filing. In a small bowl, combine butter, brown sugar and cinnamon until mixture is homogenous (uniform throughout). Set aside.
  • Alternately, you can combine the cinnamon and sugar. Then melt the butter and brush it on the rolled dough, then sprinkle the cinnamon sugar on the butter-brushed dough. (I think this way is easier)!
  • Assemble Cinnamon Rolls
  • Sprinkle a large work surface with flour.
  • Gently press the gas out of the dough and form it into a rectangle.
  • Roll the dough into a 24x12" rectangle, about 1/4 inch thick.
  • Spread the filling all over the dough using greased hands or a greased spatula. This process can seem difficult but it gets easier as you spread it. (Alternately: if you only combined the cinnamon and sugar, then melt the butter and use a pastry brush to spread the melted butter all over the dough. Then sprinkle the dough with cinnamon sugar and pat it down gently to insure it sticks).
  • Roll up dough cut into 12 equal sized rolls (feel free to measure and cut each roll to be 2" long).
  • Line a 9x13 inch glass baking dish with parchment paper and lightly grease. Then place rolls in 4 rows of three, evenly spaced.
  • Cover and let rise until nearly doubled, about 30 minutes and preheat the oven to 350 degrees F
  • Bake Cinnamon Rolls
  • Once rolls are doubled in size, bake them in the preheated oven until golden brown, about 18-20 minutes. They will rise more in the oven. (NOTE: Check the center cinnamon rolls and make sure they are baked through. If your oven bakes cool or unevenly you may need to increase the baking time up to 10 minutes longer. If the top starts to brown before the center is baked, tent the baking pan with foil to prevent further browning).
  • While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla extract and salt. Do NOT chill the frosting. Keep it at room temperature until the cinnamon rolls are baked.
  • Once the cinnamon rolls have bene removed from the oven, spread the cream cheese frosting on them while they are still warm.
  • Cool & Serve!
  • Let cool and serve warm.

EASY HOMEMADE CINNAMON ROLLS

Easy Homemade Cinnamon Rolls image

I love this easy homemade cinnamon roll recipe because it allows me to skip the first rise, and I can get them on the table a lot sooner. We usually top with cream cheese, but we have used buttercream.

Provided by Juanwi

Categories     Bread     Yeast Bread Recipes

Time 1h20m

Yield 12

Number Of Ingredients 11

1 cup milk
⅓ cup butter
2 eggs, room temperature
4 cups bread flour, divided
½ cup white sugar
2 ½ teaspoons rapid-rise yeast
1 teaspoon salt
1 tablespoon vegetable oil
¾ cup packed brown sugar
2 ½ tablespoons ground cinnamon
⅓ cup butter, softened

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
  • Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
  • Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
  • Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
  • Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.
  • Turn dough out onto a lightly floured surface and use your hands to shape into a small rectangle. Roll dough out into a rectangle that is about 1/4-inch thick.
  • Mix brown sugar and cinnamon together in a small bowl. Spread 1/3 cup softened butter over dough and sprinkle with cinnamon-sugar mixture. Roll dough into a log and cut into 12 equal pieces.
  • Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

PUFF PASTRY CINNAMON ROLLS

Puff pastry cinnamon rolls image

Use ready-made puff pastry to quickly and easily make these cinnamon rolls - an all-butter pastry will give the best flavour

Provided by Monaz Dumasia

Categories     Breakfast, Brunch, Snack

Time 25m

Yield Makes 12

Number Of Ingredients 6

1½ tbsp ground cinnamon
3 tbsp caster sugar
320g ready-rolled puff pastry
plain flour, for dusting
1 medium egg, beaten
50g icing sugar

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line large baking tray with baking parchment. Stir the cinnamon and sugar together in a small bowl. Unravel the puff pastry on a lightly floured work surface, then sprinkle the cinnamon sugar mixture all over the top. Gently level the cinnamon sugar mixture with the back of a spoon so it covers the pastry almost completely, leaving a 1cm border on one of the short sides. Brush a little of the beaten egg over the exposed pastry border.
  • Roll the pastry up in a tight log from the short side without the border. Gently press along the egg-washed border to seal, then slice into 12 equal rounds. Arrange the cinnamon rolls on the prepared baking tray, placing them up against each other so they're just touching. Brush the remaining beaten egg all over the tops and sides of the pastry, then bake for 15-18 mins until golden and risen. Leave to cool on the tray for 10-15 mins.
  • Combine the icing sugar with 1½ tsp water in a small bowl until you have a thick icing that easily runs off the spoon. Drizzle this over the warm rolls, then immediately serve.

  • To make cinnamon rolls: Preheat the oven to 350°F. Use a pastry brush to lightly coat the insides of a small (7-1/2-inch-by-5-1/2-inch) casserole dish with some of the melted butter, about one teaspoon. Set the butter aside. In a separate bowl, combine the brown sugar and cinnamon. Set aside.
  • To assemble: Pop the crescent roll dough canister and carefully unravel dough into a long rectangular shape, careful not to tear the perforated markings. Use a pastry brush to lightly coat the dough with some of the melted butter, about one teaspoon or more, leaving a 1/4-inch border free of any butter. Then sprinkle the top of dough with the cinnamon sugar mixture, leaving the 1/4-inch borders free of sugar. Spread sugar evenly around the dough using a plastic bowl scraper, and then press it into the dough using a fork or your fingers. Drizzle the remaining melted butter on top of the sugar mixture until partially saturated.
  • Roll the dough into a tight log. Slice it into eight even pieces (about 1/2 inch thick). Using a bench scraper or a spatula (so the cinnamon sugar does not pour out), transfer the dough pieces into a prepared baking dish and place them cut side up. Bake for 20 to 25 minutes, or until dough begins to turn golden brown on top.
  • To glaze: While rolls are baking, combine butter and cream cheese together in a mixer, then whip in lemon juice and vanilla. Add powdered sugar and mix until fully incorporated. Using a spatula, spread the glaze evenly over cinnamon rolls. Place any leftover glaze in a bowl to serve on the side.

  • Heat oven to 180C/160C fan/gas 4. Line a 23cm cake tin with a square of baking parchment so the corners stick up (this will help you to lift the rolls out).
  • Unroll the croissant dough from the can and lay it out on your work surface. Cut it into three sections along the dotted lines, but don’t cut the diagonal line. Spread over a quarter of the butter onto each piece.
  • Mix the cinnamon and sugar together. Using one square of dough at a time, sprinkle over 2-3 tsp of the sugar and roll up the dough. When you have three rolls, cut each one in half and then each half into three. Arrange the rolls in the tin in two circles – you need to spread them well apart as they will rise and spread. Stick the end bits in among fatter pieces from the centre of the rolls so they cook evenly. Bake for 15 mins or until the rolls are risen and cooked through.
  • Meanwhile, heat the remaining sugar mix with the remaining butter until you have a thick caramel (don’t worry if some of the butter separates out, it will soak into the dough). When the rolls are cooked, pour over the caramel. Leave to cool a little, then eat warm.

  • In a medium glass bowl add the warm water, 1 tbsp of sugar, and active dry yeast. Stir well and set aside to rise for 15 minutes.NOTE: Do not add the water, sugar, and yeast to a metal or aluminum bowl. The active dry yeast won’t activate in the bowl of a stand mixer. It’s better to let it rise in a glass bowl and then transfer it to your stand mixer bowl.
  • While yeast is rising add room temperature buttermilk, ½ cup sugar, melted butter, salt, and eggs to the bowl of a stand mixer. Use whisk attachment o on low to whisk together.
  • Once the active dry yeast has activated and is foamy on the top pour it into the bowl of the stand mixer. Using the whisk attachment, whisk the mixture together for 20 seconds.
  • Remove the whisk attachment and add the dough hook. Add 5.5 cups of all purpose flour to the bowl and mix on low for 40-60 seconds. Turn up the speed to medium and allow dough to mix together for 8-10minutes. (Dough will be sticky.)

  • To the bowl of a stand mixer, add 3 1/2 cups of flour, yeast, salt, sugar, eggs, butter, and warm milk. Using the dough hook attachment, mix until the flour is incorporated, about 4 to 5 minutes. If the dough is sticky, add the remaining 1/4 to 1/2 of flour. Cover the bowl with plastic wrap and let the dough sit for 15 minutes or up to an hour at room temperature.
  • Lightly flour a work surface and turn out the dough. Punch it down and roll it into a rectangle about 10 x 15 inches. Spread the 1/2 cup of room temperature butter evenly over the dough. Sprinkle over cinnamon sugar.
  • Starting on the long edge, roll the dough into a log making sure it's as tight as possible. Pinch the edge to seal. Using a sharp knife, cut into 8 rolls. Place in a buttered 3qt rectangle (about 6x8 inch) baking dish. Bake for 30-35 minutes or until rolls are golden brown. Remove from oven and let cool for 10 minutes. Spread icing over warm rolls and serve.

  • Warm milk to around 110 degrees F. I like to do this by placing milk in a microwave safe bowl and microwaving it for 40-45 seconds. It should be like warm bath water. Transfer warm milk to the bowl of an electric mixer and sprinkle yeast on top. Add in sugar, egg, egg yolk and melted butter. Mix until well combined. Next stir in flour and salt with a wooden spoon until a dough begins to form.
  • Place dough hook on stand mixer and knead dough on medium speed for 8 minutes. Dough should form into a nice ball and be slightly sticky. If it's TOO sticky (meaning it's sticking to the bottom of the mixer, add in 2 tablespoons more bread flour.) If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes on a well-floured surface.
  • Transfer dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour to 1 ½ hours, or until doubled in size. This may more or less time depending the humidity and temperature in your home.
  • After dough has doubled in size, transfer dough to a well-floured surface and roll out into a 14x9 inch rectangle. Spread softened butter over dough, leaving a ¼ inch margin at the far side of the dough.

  • Combine the milk, water, and butter together in a heatproof bowl. Microwave or use the stove and heat until the butter is melted and the mixture is warm to touch (about 110°F). Pour into the dry ingredients, add the egg, and stir until it forms a soft dough or use your mixer.
  • On a lightly floured surface using floured hands, knead the dough for 3 minutes. Place in a lightly greased bowl (I use non-stick spray), cover loosely, and let rest for about 10 minutes.
  • After 10 minutes, roll the dough out in a 14×8 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar. Sprinkle it all over the dough. Roll up the dough tightly to make a 14 inch log. Cut into 10-12 even rolls and arrange in a lightly greased 9-inch round cake pan or pie dish.

  • Microwave the oatmilk and butter for a minute until butter is melted and the oatmilk is warm (make sure it’s not hot!) and whisk together.
  • Pour the oatmilk mixture and whisked eggs into the dry ingredients and mix together roughly with a metal spoon.
  • Then knead with your hands for 4-5 minutes. You should have a moist dough ball that barely sticks to your hands. If the dough is too wet, slowly sprinkle in flour and knead until you get the right consistency. If it’s too dry, add a few drops of warm water and continue kneading.
