150 g unsalted butter (10 ¼ tbsp (very soft but not melted))
Pinch of fine sea salt
120 g confectioner's sugar (about 1 cup powdered sugar)
70 g yolks
1 tsp vanilla extract
1 tsp coffee extract (optional)
260 g AP flour (2 cups (measured by spoon and level method))
57 g dutch cocoa powder (½ cup (measured by spoon and level method))

Steps:

  • In a large bowl, place the butter and salt. Using a spatula or a hand whisk, mix the butter until you get a soft and creamy texture (like a thick body cream or lotion).
  • Sift the confectioner's sugar, and add it to the butter mixture.
  • Mix the sugar in until it's completely mixed in with the butter.
  • Whisk the egg yolks (or whole eggs), and add this to the butter sugar mixture along with the vanilla extract and coffee extract.
  • Incorporate the egg mixture into the butter until smooth.
  • Sift the flour and cocoa together, and add it to the egg, butter, and sugar mixture.
  • Gently mix in the flour. I like to use a spatula and mix the dough by cutting through the dough several times.
  • Turn the dough out onto a work surface lined with parchment paper. Use the parchment paper to fold the dough over to incorporate all of the flour. If you used whole eggs, take extra care to not overwork the gluten in the dough.
  • The dough will be very soft and a little sticky. This is normal. Handle the dough gently with lightly floured hands.
  • Cut the dough in half and shape each dough into a disc. Wrap each disc with plastic wrap and refrigerate for at least 1 hour to chill. If your tart mold is a rectangle or square, shape the dough into a rough square instead of a disc.
  • Lightly flour your work surface. Place one of the chilled pate sucree discs on the work surface. Knock it a few times with the rolling pin to soften the dough and make it more pliable.
  • Start rolling out the dough, turning the dough a ¼ circle every few rolls. This makes it easy to maintain a circle and also prevents the dough from sticking to the counter. If any cracks appear, shape the dough to seal those cracks as you go. If the dough gets too soft, carefully transfer it to the fridge for a few minutes to let it slightly harden again, OR roll it out between two parchment paper sheets.
  • The dough needs to be rolled out to a thickness of 3 mm. If at any stage the dough shrinks as you roll it out, that is an indication that the dough has been overworked.
  • If the dough is overworked - transfer the dough onto a tray, cover with plastic wrap, and let it rest in the fridge for about 10-20 minutes. Then resume rolling it out afterwards.

This sweet, crumbly pastry makes an ideal crust for classic French tarts. The recipe makes enough dough for two 9-inch or 10-inch tart shells.

3 cups / 340 grams all-purpose flour
1/2 cup / 100 grams granulated sugar
1 teaspoon salt
1 cup / 220 grams unsalted butter (cold, cut into bits)
2 egg yolks
1 to 4 tablespoons ice water (as needed)

Steps:

  • Gather the ingredients.
  • In a bowl, blend together the flour, sugar, and salt.
  • Cut in the cold butter with a pastry cutter or fork until the mixture resembles a coarse meal with bits of butter no larger than peas. (Alternatively, you can process the mixture on pulse mode in a food processor .)
  • Add the egg yolks and continue blending with the pastry cutter (or pulse in the processor) until the eggs are evenly incorporated and the mixture resembles a fine meal.
  • Stir in the ice water with a fork, 1 tablespoon at a time, until the mixture is just moistened enough to gather and mold into a smooth ball. (Or, with the food processor running, add the water 1 tablespoon at a time just until the mixture forms a dough.)
  • Divide the dough in half and flatten each portion into a smooth disc. Wrap with plastic and chill in the fridge for at least 2 hours, or overnight if you prefer.
  • Remove the chilled dough from the fridge and allow to rest at room temperature for 15 to 30 minutes.
  • Remove the plastic wrap and, on a lightly floured surface, roll out the dough to fit in the tart pan . Lift and turn the dough as you work, keeping the work surface dusted with flour to prevent sticking.
  • Lay the dough in the tart pan and press it firmly against the sides and bottom without stretching it.
  • Trim off any excess dough.
  • Cover and chill the dough in the pan for at least 30 minutes before filling and baking.
  • To pre-bake the empty tart shell, prick the dough all over with a fork. Cover lightly with foil and bake at 375 F / 190 C for 15 minutes.
  • Remove the foil, and continue baking until barely colored for a partially baked shell or golden brown for a fully baked shell.
  • Use in your favorite tart recipe and enjoy!

1 1/4 cups all purpose flour
7 tablespoons unsalted butter, chilled and cut into pieces
2 teaspoons sugar
1/8 teaspoon salt
3 tablespoons ice water

Steps:

  • Place 1 cup of the flour, the butter, sugar and salt, into a food processor fitted with the metal blade. Process 10 seconds, until the mixture resembles coarse crumbs. Add the ice water and pulse 10 to 15 times, just until the mixture begins to come together (do not let it form a ball). Empty the dough out of the machine onto a floured work surface and gather together by pressing lightly. If the dough seems too sticky, gently incorporate more flour. Shape into a ball, then flatten into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour before proceeding with recipe.

Sweet tart crust, also known as pâté sucrée, short crust pastry, sweet pastry dough, is a sweet cookie-style dough used as a tart base for a delicate crunch. This Chocolate Sweet Tart Crust version can be filled with all types of creams, curds, or ganaches.

6 T unsalted butter (room temperature (85g))
⅓ cup granulated sugar (67g)
⅛ teaspoons kosher salt
1 large egg (room temperature)
1¼ cup plus 2 tablespoons all-purpose flour (165g)
2 tablespoons dutch-processed cocoa powder (12g)

Steps:

  • In a bowl, whisk together the flour and cocoa powder until combined.
  • In the bowl of a stand mixer fitted with the paddle attachment (or with a hand mixer), cream together the butter, sugar and salt until smooth. Scrape down the sides.
  • Add in the egg and mix until incorporated, then scrape down the sides again.
  • Add the flour and cocoa powder and mix on low until just incorporated.
  • Wrap the dough in plastic wrap and flatten into a 1-inch thick disc. Place in the fridge for two hours.
  • Remove the dough from the fridge and allow it to sit at room temperature for about 15 minutes. Then, remove the plastic wrap.
  • Flour your work surface and rolling pin and roll out the dough until it's ⅛-¼" thick. This dough is very forgiving, so if it cracks, you can patch it later. Roll the dough so it's about 2 inches wider than the tart pan.
  • Transfer the dough to the pan and press it into the bottom, corners, and sides of the tart pan. Roll the rolling pin over the top of the pan to remove the excess dough, then push the sides in once again and use a finger to slightly push down the top to smooth it out. Use any of the scraps to patch holes or weak spots.
  • Transfer to the freezer for 15 minutes, and preheat the oven to 325℉/163℃. Remove the dough from the freezer and dock the bottom of the tart with a fork multiple times. Line the shell with parchment paper and fill completely with pie weights (or dried beans/rice).
  • Bake for 10-15 minutes. Carefully remove the weights and parchment, and continue to bake for another 10-15 minutes until lightly golden. When done, the middle of the tart should not look moist or raw. Remove the pan to a wire rack to cool completely.

1 cup (2 sticks) cold unsalted butter, cut into small pieces
2 large egg yolks, lightly beaten
2 to 4 tablespoons cold heavy cream or ice water

Steps:

  • Pulse flour, sugar, and salt in a food processor until combined. Add butter, and pulse just until mixture resembles coarse meal. Add yolks and drizzle 2 tablespoons cream evenly over mixture; pulse just until dough begins to come together, no more than 30 seconds. If dough is too dry, add remaining cream, 1 tablespoon at a time, and pulse. Divide dough in half, pat each half into a disk, and wrap in plastic. Refrigerate 1 hour or up to 2 days, or freeze up to 3 months (thaw in refrigerator before using).
  • Citrus Variations:
  • Add 2 teaspoons finely grated orange zest and 1 teaspoon finely grated lemon zest to the dry ingredients.
  • Poppy Seed Variations:
  • Add 2 tablespoons poppy seeds to the dry ingredients.
  • Chocolate Variations:
  • Replace 1/4 cup flour with 1/4 cup unsweetened Dutch-process cocoa powder.
  • Cornmeal-Lemon Variations:
  • Replace 3/4 cup flour with 3/4 cup coarse cornmeal; reduce sugar to 2 tablespoons. Add 1 teaspoon lemon zest to the dry ingredients.

2 tablespoons cocoa
1/3 cup sugar

1/2 teaspoon vanilla extract
1 cup chopped pecans
1 cup sugar
1/4 teaspoon salt
1/4 cup water
1 1/2 cups heavy cream
2 tablespoons unsalted butter, room temp
1 teaspoon vanilla extract
6 ounces bittersweet chocolate, finely chopped
cocoa, for dusting
24 pecan halves
3 cups sugar
3/4 cup water
1 teaspoon cream of tartar

Steps:

  • For the Chocolate Pate Sucree-----------.
  • Place the flour, cocoa, sugar and salt in the bowl of a food processor, pulse several times to combine Add the butter and pulse until the mixture resembles coarse meal, about 10 seconds Add the egg yolks and vanilla and process just until the mixture begins to hold together, no more than 30 seconds Turn dough out onto a lightly floured surface and form a disk.
  • Cover in plastic wrap, refrigerate for 30 minutes or until ready to use.
  • For the Tart----------------.
  • Preheat the oven to 350F degrees.
  • Roll the chocolate pate sucree to 1/8" thick and fit into a 9" fluted tart pan with a removable bottom Dock the bottom of the tart with a fork.
  • Refrigerate the shell for 30 minutes.
  • Place chopped pecans on a baking sheet and toast until slightly darkened and fragrant, about 10 minutes, set aside.
  • Line tart shell with parchment paper, pressing into edges and cover with dried beans or pastry weights.
  • Place on a baking sheet, bake for 20 minutes.
  • Remove paper and beans, continue baking until crust is golden, about 10 minutes.
  • Transfer to a wire rack and cool completely.
  • Make the caramel by placing the sugar, salt and water in a small saucepan.
  • Bring the mixture to a boil over medium high heat.
  • Wash down the sides of the pan with a wet pastry brush to prevent crystals from forming.
  • Cook, gently swirling (do not stir) until the caramel is a rich amber color.
  • Remove from heat and add 1/2 c of cream, butter and vanilla.
  • Stir until smooth.
  • Pour mixture into chocolate tart shell.
  • Sprinkle with toasted pecans and place in the refrigerator while melting the chocolate.
  • Place chocolate in a medium heat-proof bowl.
  • Bring remaining cup of cream to a boil in a small saucepan.
  • Pour over the chocolate, let sit for 5 minutes.
  • Stir until completely smooth.
  • Pour over caramel and pecans.
  • Return tart to refrigerator and chill for at least 1 hour.
  • To serve, dust the op with cocoa powder and garnish with Caramel-Dipped Pecans For Caramel-Dipped Pecans-----------------.
  • Gently insert an 8" wooden skewer into each pecan, set aside.
  • Prepare an ice bath, and set aside.
  • Combine the sugar, water and cream of tartar in a medium saucepan and bring to a boil over medium-high heat Wash down the sides with a wet pastry brush to stop crystals from forming.
  • Cook, without stirring until the mixture begins to brown.
  • Gently swirl the pan to color evenly.
  • Remove from heat when the caramel is a rich amber color, place the pan in an ice bath to stop the caramel from cooking, about 5 seconds.
  • Allow the caramel to sit, until slightly thickened for about 15 minutes.
  • When caramel is ready, dip pecans, lifting up and swirling slightly to fully coat.
  • Hold skewer over pan to allow the drip to lengthen and slightly harden, about 1 minute.
  • Place the skewers in a cube of flower foam to stand them upright, allow to completely harden.
  • Gently remove skewers before serving.

This is a divine, heavenly, extremely-rich chocolate masterpiece. You HAVE to try it! Try and find the clotted cream for the topping, it's so worth it. I got the recipe from a colleague of mine.

Number Of Ingredients 5

250 g unsalted butter, cut into pieces
110 g caster sugar
200 ml strong brewed coffee or 200 ml brewed espresso (not instant coffee!)
250 g dark chocolate, cut into pieces (approx. 50% cocoa content*)
4 large eggs

Steps:

  • Preheat oven to 350 F, 180C, Gas Mark 4.
  • Coat a 9" or 10" bread loaf pan with cooking spray or lightly butter and set aside.
  • Boil water in a kettle.
  • Place butter, sugar and coffee in a double boiler (or place large mixing bowl on top of medium saucepan filled with boiling water) and heat until all butter is melted.
  • Stir in broken chocolate and mix until smooth.
  • Remove from heat (or remove mixing bowl from saucepan) and cool for 10 minutes.
  • Add eggs one at a time either mixing by hand or using a hand mixer at a slow speed (only blend, do not beat).
  • Pour into greased bread pan.
  • Place bread pan in a roasting pan filled with 1 to 1 1/2 inches of warm water.
  • Place in oven for 60-75 minutes.
  • Remove just before it starts to brown on the edges.
  • Let stand until it cool to touch (will reduce in size).
  • Place tightly covered in refrigerator for at least 6 hours or overnight to set.
  • To remove from pan, fill sink with 2-3 inches hot water and place pan in sink (careful not to let water spill in chocolate).
  • Let sit 10-15 minutes (depending on water temp) and run a small sharp knife around to aid removal.
  • Place serving plate on top and flip over.
  • Cut into thin pieces.
  • Serve with clotted cream, cream, whipped cream topped with fresh raspberries.
  • Serves 12-15 slices.
  • *N.B.Chocolate should be less than 60% cocoa content.A higher cocoa content will make the paté grainier.
  • N.B.You can double the recipe and fill within ¼ inch of top of bread pan.Prepare ramekin dishes for left over liquid.
