4 cups cooked chicken, shredded or chopped
1 1/2 c shredded cheddar cheese, divided
2 c enchilada sauce
8 tortillas

Steps:

  • Preheat oven to 425 degrees.
  • Chop or shred cooked chicken. Add it to a bowl with 1/2 cup shredded cheese (reserve the rest to top your dish) and 1/4 cup enchilada sauce to hold it together. Stir to combine.
  • Lay a tortilla on a flat surface and spoon approximately 1/3 cup of mixture in a line near the center of the tortilla. Fold one side over the center line of filling, then roll. Place seam side down in a 9x13 glass baking dish. Repeat with the remaining seven tortillas.
  • Pour enchilada sauce over the tops of the chicken enchiladas. Use a spatula to gently press any exposed tortilla ends into the sauce. Spread the cheddar cheese over the top of the chicken enchiladas.
  • Bake in 425 degree oven for 10 minutes, until you see the cheese melted and sauce bubbling. Let sit for one to two minutes, then serve immediately.

Absolutely DELICIOUS. I found this recipe in a book called, '30-Minute Recipes From Around the World. It is actually tweaked a bit here the way I love it.

2 cups chopped cooked chicken
1 1/4 cups shredded monterey jack cheese
1 cup shredded cheddar cheese
2 (4 ounce) cans chopped green chilies
8 flour tortillas
2 tablespoons butter
1/4 cup flour
2 1/2 cups chicken broth
1 teaspoon cumin
1/4 teaspoon garlic powder

Steps:

  • Cook your chicken with your favorite seasonings, even if just salt and pepper. I personally like to add garlic salt to mine.
  • In a medium bowl, mix chicken, monterey jack cheese and one can of green chilies together.
  • Put equal portions of the mixture onto each tortillas using a big spoon, line them up enclosed side face down in a 9x13 dish.
  • Melt butter in a saucepan, then add flour and stir until it is smoothened. Pour in the broth and when it s boiling, continue to stir until the sauce is thick. Add in the cumin, garlic powder and the last can of green chilies, stir to mix.
  • Pour all over the tortillas and top with cheddar cheese, and now you've got yourself enchiladas!
  • Bake for about 15 minutes in a 375°F oven.

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. Spread 1/4 cup of the enchilada sauce in bottom of baking dish.
  • In medium bowl, mix chicken, 1 cup of the Cheddar cheese, the cream cheese and seasoning mix with spoon, breaking apart cream cheese cubes. Spoon slightly less than 1/2 cup filling onto each tortilla. Roll up each tortilla tightly; place seam side down in baking dish. Drizzle with remaining enchilada sauce. Sprinkle with remaining 1/2 cup Cheddar cheese.

3 -4 chicken breasts
15 white corn tortillas (fajita size) or 15 flour tortillas (fajita size)
3 (10 ounce) cans green enchilada sauce (I use Old El Paso)
3 -4 cups grated monterey jack pepper cheese (or for less spice, use 1 cup pepper jack and 2 cups of cheddar, or a fiesta blend mexican cheese mix)

Steps:

  • Boil chicken until it falls apart, then shred.
  • Mix 1/2 can of sauce and a little cheese with chicken.
  • Put other 1/2 can on bottom of 11x9 baking dish.
  • Microwave tortillas until soft.
  • Roll chicken mixture into tortillas.
  • Put in pan semi-tightly.
  • Cover with remaining 2 cans sauce.
  • Cover top with remaining cheese and bake at 350 until cheese is fully melted (usually about 20-25 min).
  • Brown top slightly or to preference.

1 1/2 pounds tomatillos, husked and rinsed
1 to 2 serrano chile peppers, stemmed and seeded
1/2 cup low-sodium chicken broth
Kosher salt

8 corn tortillas
3 cups shredded rotisserie chicken
2 1/2 cups shredded mozzarella and/or Monterey Jack cheese
1/3 cup fresh cilantro
2 tablespoons extra-virgin olive oil, plus more for greasing

Steps:

  • Preheat the broiler. Slice half of the onion into thin rings and set aside. Place the other onion half, tomatillos and serranos on a foil-lined baking sheet and broil until the vegetables are soft and slightly brown, 7 to 10 minutes, turning as needed. Transfer the vegetables and any liquid to a blender, add the broth and puree. Season with 1/2 teaspoon salt and the sugar.

3 tablespoons flour
8.5 ounces unsalted chicken broth
1 cup low fat sour cream
7 ounces green chiles (drained and rinsed (1 can))

cilantro for garnish (roughly chopped)

Steps:

  • Preheat oven to 350F. Spray a 9x13 inch baking dish with nonstick spray.
  • In a large bowl, stir together the chicken, enchilada sauce, 1 cup cheese, 7 ounces green chiles, and onion.
  • Place 2-3 tablespoons of the chicken mixture and fill each tortilla down the center, rolling to close. place in the baking dish, seam side down. I put 8 tortillas along the long side of the baking dish and then squeezed in the extra two along the side.

  • Pour the sauce over the enchiladas, fully covering. Top with the last remaining 1/2 cup cheese.
  • Bake for 25-30 minutes or until bubbly and slightly browned. Garnish with cilantro.

10 oz can red enchilada sauce
1 cup chicken broth
1 tablespoon canola oil
2 yellow onions (diced)
4 oz can diced green chiles
3 cups rotisserie chicken shredded ((about ½ rotisserie chicken))
1 tablespoon cumin
1 teaspoon chili powder
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
6 oz queso fresco (crumbled)
1 cup sour cream
16 oz Monterey Jack (shredded and divided)
8 large flour tortillas
¼ cup cilantro (chopped)

Steps:

  • Preheat oven to 350°F.
  • In a small pan over medium heat, melt butter and add flour. Stir constantly and cook. Add enchiladas sauce, broth, salt, and pepper and stir. Bring to boil; reduce heat and simmer, stirring occasionally, while preparing the other ingredients.
  • In a large pan, heat oil until shimmering. Add onions cook, stirring, 5 to 7 minutes until translucent.
  • Stir in the full can of diced green chilies, cumin, and chili powder and chicken.

  • Debone chicken.
  • Pull the meat with 2 forks.
  • Melt the butter.
  • Add can of sauce, taco seasoning, sour cream, salt & pepper.

Easy Buffalo Chicken Enchiladas Recipe image

Life gets boring when you eat the same foods all the time. We all love traditional enchiladas, but these buffalo chicken enchiladas are a great way to spice it up.

3 cups cooked chicken (shredded)
4 ounces cream cheese (softened & cubed)
2 cups shredded cheddar cheese (divided)
4 ounces chopped green chilies (drained)
1 cup Buffalo-style hot sauce (plus more for serving)
3 tablespoons unsalted butter (melted)
3 tablespoons heavy cream (room temperature)
6-10 flour (or corn tortillas)
Blue cheese crumbles or ranch dressing (for garnish)
Fresh cilantro or green onions (for garnish)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 9-by-13-inch baking dish with cooking spray; set aside.
  • In a large bowl, combine chicken, cream cheese, 1 ½ cups shredded cheese, green chiles, and ½ cup Buffalo sauce, stirring until well combined. Stir together the butter, remaining Buffalo sauce, and heavy cream in a medium bowl.
  • Microwave the tortillas in batches until warm, softened and foldable, about 30 seconds. Keep warm between damp paper towels.
  • Spoon ½ cup of the chicken mixture down the middle of each tortilla and roll up. Place them side by side, seam-side down, in the prepared pan. Pour the hot sauce mixture over the tortillas. Sprinkle with the remaining cheese and bake 15-18 minutes, or until cheese is melted and bubbly.
  • Sprinkle with blue cheese or drizzle the ranch dressing over the enchiladas, then garnish with cilantro or green onions. Serve with more Buffalo sauce, if desired.

This delicious chicken enchilada casserole is super easy to make and tastes great. Loaded with cheese and deliciously seasoned chicken, this hearty enchilada casserole is perfect for a delicious weeknight dinner.

4 chicken breasts, (boneless, skinless, cut into bite-size pieces)
1 cup onions, (diced)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon Cajun seasoning, (I use Slap Ya Mama)
½ teaspoon red pepper flakes
28 oz can green enchilada sauce
3.8 ounce can sliced black olives
16 oz block Colby Jack cheese, (shredded)
24 corn tortillas

Steps:

  • Preheat oven to 350° and spray a 9 x 13 baking dish with a non-stick cooking spray. Set aside.
  • In a large frying pan or skillet, heat oil over medium high heat.
  • Add chicken and onions to pan, sprinkle with seasonings and pepper. Stir.
  • Cook chicken until it is no longer pink and onions are tender. Drain any excess grease, if needed, and return to pan.
  • Add ⅔ can of the olives into the chicken mixture saving the remaining olives for the top.
  • Add ½ cup of green enchilada sauce to bottom of prepared baking dish and add just enough sauce to cover the chicken mixture in the pan (saving the remaining sauce to pour over the top). Stir to combine and heat over medium heat until hot.
  • Place 8 corn tortillas covering the bottom, overlapping each other.
  • Next, spoon ½ of the chicken mixture on top of tortillas followed by ⅓ of the shredded cheese. Repeat with 8 tortillas, the remaining chicken mixture and ⅓ of the cheese. Last layer will be 8 tortillas, the remaining sauce, as needed, and the remaining cheese, followed by the remaining olives.
  • Cover with aluminum foil and bake in preheated oven for 40-50 minutes, removing the foil during the last 10 minutes of baking.
  • Carefully remove from oven and serve hot. Garnish with sour cream, sliced avocado, cilantro, green onions and/or salsa.
