CHEESY SMOKED SAUSAGE CASSEROLE
My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
- Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

- In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
- Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.
- Preheat the oven to 350 degrees F. Brush a medium casserole dish with oil. Pour the chilled bread mixture into the prepared casserole dish. Sprinkle with the remaining 1/4 cup of cheese. Let sit at room temperature for 20 minutes.
- Transfer the casserole to the oven and bake until puffed and golden brown, about 30 minutes. (If the top of the casserole starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.
SPICY CHEESY SAUSAGE BREAKFAST CASSEROLE
Good for holidays, Mother's Day, and lazy Sunday mornings. :) Make it the night before and stick in the fridge, then just pop into the oven the next morning.

- Cook the sausage until browned well, crumble; set aside.
- In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
- Combine the sausage with the mushroom mixture; set aside and let cool.
- Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
- Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
- (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
- Preheat oven to 350 degrees F.
- Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
- Cut into squares and serve.
- If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!
DELICIOUS CHEESY SAUSAGE BRUNCH CASSEROLE
Throw this together the night before so it will be ready to pop in the oven the next morning, this makes a great weekend brunch! Italian sausages may be used in place of small breakfast sausages. For extra heat add in some cayenne pepper! Plan ahead this needs to chill for 8-24 hours.

- Grease a 13 x 9-inch baking dish.
- Cook the pork sausage meat with onion in a skillet until well browned, breaking up meat while cooking, drain fat; set aside.
- Spread the bread cubes evenly into the baking dish, then sprinkle the shredded cheese over the bread.
- Sprinkle the cooked sausage meat over the cheese.
- In a bowl whisk together the eggs with milk, salt, dry mustard, Worcestershire sauce and black pepper; pour evenly over the mixture in the baking dish.
- Cover and chill for 8-24 hours.
- Let stand 30 minutes at room temperature before baking.
- Sprinkle top with grated Parmesan cheese.
- Set oven to 350 degrees and bake for 45 minutes or until set.
- Let stand 5 or more minutes before slicing.

- Unroll one package of crescent rolls onto the bottom of a 9x13 pan. Press to join seams. Leave the other package in the refrigerator until ready to use.
- Bake for 6-7 minutes, until very light golden brown.
- Brown the sausage. Rinse. Return to pan.
- Add cream cheese to the warm pan. Stir on low heat until sausage and cream cheese are well mixed.
- Pour this mixture into the 9x13 pan, over the slightly baked crescent roll layer.
- Unroll the second package of crescent rolls over the sausage/cream cheese mixture. Press seams together.
- Bake in oven 13-18 minutes until top is golden brown.
