8 oz. No Yolks® Extra Broad Noodles
2 tbsp. extra-virgin olive oil
1 green bell pepper, chopped, some reserved for topping
1/2 pt. (4-oz.) sliced cremini mushrooms, some reserved for topping
2 cloves garlic, thinly sliced
1/3 c. pepperoni, some reserved for topping
1 c. marinara (or pizza sauce)
kosher salt
Freshly ground black pepper
1/4 tsp. crushed red pepper
2 c. shredded mozzarella, divided
1/2 c. parmesan, grated
6 large egg whites, beaten (or 3 large eggs)

Steps:

  • Cook No Yolks Extra Broad Noodles according to package directions. Drain and return to pot.
  • Preheat oven to 375 degrees F and grease a 9" pie dish. In a large skillet over medium heat, heat olive oil. Cook peppers and mushrooms until slightly softened, 6-8 minutes. Add garlic and cook until fragrant, 2 minutes more.
  • Turn off heat and stir in pepperoni and marinara. Season with salt, pepper, and crushed red pepper.
  • To pot of drained, cooked noodles, add marinara mixture, 1 cup mozzarella, and all of the Parmesan. Toss to coat. Transfer to prepared pie dish.
  • Pour over beaten egg whites and gently toss to incorporate. Sprinkle top with remaining mozzarella and garnish with extra pepperoni, mushrooms, and peppers.
  • Bake until set, 30 minutes. If desired, broil the top until golden, 2-3 minutes more. Let cool 15 minutes, then slice and serve.

1/2 large onion (chopped)

2 14.5 oz. can diced tomatoes (undrained)
8 oz. package cream cheese (cut into 10 slices)
8 oz. frozen corn kernels
1 cup cheddar cheese (shredded)
2 tbsp. fresh flat-leaf parsley (chopped)

Steps:

  • Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside. In a large saucepan, cook egg noodles in boiling water until al dente. Drain and rinse. In a medium skillet, cook the ground beef, onions, salt and pepper over medium heat until the meat is no longer pink and the onions are soft. Remove from heat.
  • Layer the prepared baking dish as follows: ground beef-onion mixture, half of the noodles, one can of tomatoes, cream cheese, corn, remaining half of the noodles, second can of tomatoes, shredded cheddar cheese and parsley.
  • Bake covered in the preheated oven for 45 minutes. Remove cover and bake for an additional 15 minutes.

1/4 cup flour
1/4 cup butter
2 cups whole milk
3 cups sharp cheddar cheese (divided)

  • Pre-heat your oven to 350 °F.Cook your pasta according to the instructions on the bag. Drain and place in a greased medium sized casserole dish.

8 ounces egg noodles (1/2 pound)
1 1/2 cups 10% cream (half and half)
1/2 cup plain yogurt
4 tablespoons butter, melted, divided
1/4 cup all-purpose flour
8 ounces cheddar cheese, grated (I love sharp)
2 ounces monterey jack cheese, grated (or other cheese of choice)
1 medium parsnip, diced
olive oil
1/4 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg
1/4 teaspoon red pepper flakes (more or less to desired heat)
3/4 cup fresh breadcrumb

Steps:

  • Roast parsnip:.
  • Cut parsnip into small cubes and place on baking sheet. Drizzle with a couple teaspoons of olive oil and a sprinkle of salt. Toss to coat and bake at 400*F. for about 15-20 minutes, until browning on the edges and tender.
  • Meanwhile, cook the egg noodles in boiling water for about 8-9 minutes(al dente). Drain well.
  • In a small pan, heat the half and half and plain yogurt until hot(don't let boil) Turn off heat.
  • Heat a skillet and add 2 tbls. butter, stirring with a whisk to melt.
  • Add the yogurt mixture, remove from heat and stir until smooth.
  • Add cheeses, roasted parsnip, salt, pepper, nutmeg and red pepper flakes. Add the cooked noodles, stir well.
  • Pour mixture into a 1 1/2 quart baking dish.
  • Melt the remaining 2 tbls. butter and combine with the fresh breadcrumbs. Sprinkle over top of casserole.
  • Bake 30-35 minutes, until bubbly and top browned.
  • Enjoy!
  • Note: Add some shaved cauliflower(roast with parsnips last 10 minutes), peas, grated onion, or other vegs. to give more nutrition and flavor.
