8 cups thinly-sliced, unpeeled apples (about 6-8 depending on size), such as Granny Smith, Golden Delicious, Braeburn, Jonagold, McIntosh, or Pink Lady
0.33 cup all purpose flour
0.33 cup granulated sugar
1 tablespoon apple cider vinegar
1 teaspoon cinnamon
0.5 teaspoon salt
0.5 teaspoon ground nutmeg
0.5 teaspoon ground ginger
0.5 teaspoon allspice
2 batches Basic Flaky Pie Crust , chilled
1 tablespoon unsalted butter, cut into 3 pieces
1 egg, beaten
1 tablespoon turbinado sugar (optional)

Steps:

  • Heat oven to 425°F. In a large bowl, combine the apples, flour, sugar, vinegar, cinnamon, salt, nutmeg, ginger, and allspice and toss gently until combined.
  • Roll one batch of pie dough into an 11-12-inch round. Gently fit the dough into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang on all sides. Fill with the apple mixture, mounding it slightly in the center. Dot with butter. Roll out the second batch of dough and place it over the pie. Trim the edges, then crimp with your fingers or a fork.
  • Use a sharp knife to cut small vents in the top crust. Brush the entire surface with beaten egg, then sprinkle with turbinado sugar if using. Place pie on a baking sheet and transfer to oven. Bake for 15 minutes, until crust is just beginning to brown, then lower temperature to 375°F and bake until filling is bubbling and crust is deep golden brown, 45-50 minutes more.
  • Transfer pie to a rack and cool for at least 1 hour before serving.

225g softened salted butter, plus extra for the tins
125g golden caster sugar
100g light brown soft sugar
1 tsp vanilla extract
4 large eggs
225g self raising flour
2 tbsp milk
toffee, chocolate or caramel pieces, to decorate
200g softened salted butter
400g icing sugar (golden icing sugar if you can find it - it adds a golden colour and caramel flavour)
70g caramel sauce, dulce de leche or caramel spread, plus 3 tbsp to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter two 20cm springform tins and line the bases with baking parchment.
  • Beat the butter and both sugars in a bowl with an electric whisk for a few mins until lighter in colour and fluffy. Add the vanilla and the eggs, one at a time, adding a spoonful of flour and beating in between each egg. Add the remaining flour and milk. Divide between the cake tins and bake for 25-30 mins until they're golden, spring back when pressed, and a skewer comes out clean when inserted into the middle. Cool in the tins for a few mins, then tip out and leave to cool completely on a wire rack.
  • Meanwhile, for the icing, put the butter and icing sugar in a bowl and whisk for a few mins until light and airy. Whisk in the caramel briefly, adding 1 tbsp of boiling water to loosen, if needed. Set aside until the sponges are completely cool before assembling, or the icing will melt.
  • Use half the icing to sandwich the cakes together, then spread the remainder over the top, smoothing it out with a knife or the back of a spoon. Leave in a cool place until ready to serve. Drizzle with the 3 tbsp extra sauce (warm briefly in the microwave if it's a little stiff), allowing some to drip down the sides if you like, and scatter over the toffee, chocolate or caramel pieces to serve. Edible glitter, birthday candles or sparklers, optional.

3 eggs
1 C vegetable oil
2 C sugar (regular ol' white sugar)
2 C all-purpose flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract or vanilla bean paste
4 C raw apples (chopped into 1/2 inch pieces (about 5 medium sized apples))
Ingredients:
1 C brown sugar
1 TBSP cornstarch
3/4 C cold water
1 tsp vanilla extract or vanilla bean paste
4 TBSP butter

Steps:

  • Preheat oven to 350 degrees F. In a large bowl combine eggs and oil and whisk for 2 minutes, or until foamy and pale. Gradually add sugar, while whisking. Add flour, cinnamon, soda and salt (yes just throw it on top of the mixture of oil/egg/sugar. You probably think I should be telling you to 'sift ingredients', blah. Don't waste your time.) Stir dry ingredients into wet ingredients only until combined. Don't overmix. Add chopped apples. Fold in gently. Pour batter into a greased 9x13 inch glass baking dish. Spread evenly. Bake for 50-55 minutes in a preheated 350 degree F oven. Remove from oven, let cool a bit. Serve warm with Brown Sugar Caramel Sauce. (recipe below.)
  • *I like larger pieces of apples in my cake and sometimes make 3/4" pieces. Try 1/2" pieces if you are unsure.
  • *Try to use a flavorful baking apple, tart in flavor works well. About the only apple that won't work is "Red Delicious" and any apple that is mushy.)
  • In a medium saucepan, whisk together sugar and cornstarch until well blended. (This will prevent the cornstarch from clumping.) Add water and whisk well. Bring to a boil over medium high heat. Boil for 6 minutes. Remove from heat. Add vanilla and butter. Mix well until combined. Set aside to cool to warm. (The sauce will thicken as it stands. When it is hot, it will look thinner than it will turn out. Don't worry!) You can pour this on the cake, or serve it on the side.
  • *If you make the cake with Honeycrisp apples, you could add 1 TBSP of honey to this sauce to play off of the honey flavored apples in the cake.

250g (or 2 cups) self-raising flour
100g (or ½ cup) granulated sugar
1 teaspoon ground cinnamon
pinch of salt
175g (or ¾ cup + 1 teaspoon) unsalted butter, softened at room temperature and cubed
430g (or about 15 ounces) peeled, cored and cubed Granny Smith apples (about 3 medium apples)
2 large eggs
145g (or ½ cup) homemade Salted Caramel Sauce
1 tablespoon of granulated sugar for sprinkling

Steps:

  • Preheat the oven to 175°C/350°F (standard oven setting). Line the bottom of a 20-cm/7-inch spring-form pan with baking parchment and butter the sides of the pan.
  • In a large bowl, stir together the self-raising flour, granulated sugar, cinnamon and salt. Add the cubed butter and rub the butter into the dry ingredients with your fingers. At some point, the mixture will start to come together.
  • Add the apple pieces and stir to combine. Add the eggs one at a time and stir with a wooden spoon until incorporated. The mixture will now look like thick batter.
  • Press one third of the mixture into the cake pan with a metal spoon. Because there are so much apple pieces in the batter, it may need a little encouragement. Drizzle half the caramel over the batter in the pan, then gently press another third of the batter on top of the caramel. Add the remaining caramel, then add the remaining batter.
  • Bake in the middle of the oven for about 45 minutes. Sprinkle the tablespoon of sugar on top of the cake and place the cake bake in the oven for 5 minutes.
  • Remove the cake from the oven and allow to cool for 10 minutes in the pan. After 10 minutes, use a thin knife to loosen the cake from the sides of the pan. Remove the spring-form collar. Allow to cool to room temperature on a wire rack or serve warm.
  • Stored in an airtight container, the cake will keep for up to five days.

175g soft butter, plus extra for greasing
175g golden caster sugar
1 tsp vanilla extract
2 eggs
225g self-raising flour
½ tsp cinnamon
4 rounded tbsp Greek yogurt
2 eating apples
50g walnuts, very roughly chopped, plus 1 tbsp extra, chopped
50g soft toffee (we used Werther's chewy toffees)
2 tbsp double cream

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease a 2lb loaf tin and line the base and ends with a long strip of baking paper.
  • Beat together the butter, sugar and vanilla until pale, then beat in the eggs, one by one. Tip in the flour, cinnamon and yogurt. Peel, core and chop apples into small chunks, then add to the bowl and mix everything together with a wooden spoon.
  • Scrape into the tin, smooth the top and scatter the walnuts down the middle. Bake on a middle shelf for 1 hr 20-30 mins until a skewer poked in comes out clean. Cool in the tin.
  • To decorate, put the toffees in a small saucepan with the double cream. Gently heat, stirring, until toffees have melted into a smooth caramel sauce. Cool for about 1 min while you gently turn out the cake. Slowly drizzle the toffee sauce over the top of the cake. Scatter immediately with the extra walnuts - they should stick where they hit toffee. Leave for 10 mins before serving. Best fresh but will keep in an airtight tin for 3-4 days.

1 orange, zest finely grated and juice squeezed (about 1/3 cup)

1/2 cup sugar
1 tablespoon light corn syrup
1/2 cup heavy cream
3/4 cup pecans, toasted and roughly chopped

Steps:

  • Preheat the oven to 350 degrees F. Generously butter and flour a 10-cup bundt pan.
  • Whisk the flour, baking powder, baking soda, salt, 1 1/3 cup of the sugar and 1 teaspoon of the pie spice together in a large bowl.
  • Toss the apples with the remaining 1/4 cup sugar and 1/2 teaspoon pie spice and set aside. Whisk the eggs and oil together in another bowl.
  • Whisk in the sour cream, orange zest and juice, and vanilla. Pour the egg mixture into the dry ingredients and stir with a wooden spoon just until combined but still a bit lumpy.
  • Using a slotted spoon, scatter about 1/2 cup of the apples in the bottom of the bundt pan. Put about a third of the batter on top. Repeat, alternating with the remaining apples and batter, ending with the batter.
  • Bake the cake until it pulls away from the sides of the pan and a skewer inserted into the center of the cake comes out clean, about 1 hour and 15 minutes. Cool 10 minutes and invert the cake onto a rack placed over a baking sheet. Cool. (The cake can be prepared to this point a day ahead.)
  • To make the caramel: Combine the sugar, corn syrup, and 2 tablespoons water in a small saucepan. Bring to a boil over medium heat and cook, swirling the pan but not stirring, until the sugar is dark amber-colored caramel, about 15 minutes. Pull pan from the heat and carefully pour in the cream (take care it will splatter). Stir in the pecans, vanilla, and salt. Cool until caramel becomes thick and syrupy, then evenly pour over the cake and cool until set.

1 cup heavy cream
4 large Golden Delicious apples (1 3/4 to 2 pounds)
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup sour cream
1/3 cup fresh orange juice
1 tablespoon vanilla extract
1 stick unsalted butter, softened
1 1/2 cups sugar
3 large eggs

Steps:

  • Butter a 9-by-3-inch round cake pan. Make the caramel: Cook the sugar and corn syrup in a large skillet over medium-high heat, stirring occasionally, until the sugar is dissolved and the mixture is dark amber, 7 to 10 minutes.
  • Reduce the heat to medium. Carefully add the cream and 4 tablespoons butter (it will splatter) and cook, stirring, until combined, about 3 minutes.
  • Remove the skillet from the heat and let sit 1 minute. Pour 1 1/2 cups caramel into a glass measuring cup and set aside. Pour the remaining caramel into the prepared pan and set aside until set, about 30 minutes.

  • Using a stand mixer with the paddle attachment, beat the butter and sugar on medium-high speed until light and fluffy, about 5 minutes.
  • Crack the eggs into a small bowl. Slip them into the mixer bowl, one at a time, and beat until the mixture is pale and creamy, about 5 more minutes. Scrape down the bowl and beater with a rubber spatula.
  • With the mixer on low speed, add half of the sour cream mixture, then half of the flour mixture. Repeat. Turn off the mixer and scrape down the bowl with a rubber spatula; finish combining the batter by hand.
  • Spread the batter over the apples in the pan. Top with the chopped apple. Bake on the middle oven rack until the cake is brown on top and springs back when pressed, 1 hour to 1 hour 20 minutes (don't worry if the top is dark). Cool in the pan on a rack.
  • Bring 1 inch of water to a simmer in a skillet wide enough to hold the cake pan. Carefully run a sharp knife around the inside of the pan several times, then rest the pan in the water to soften the caramel, about 8 minutes. Remove the pan from the water and dry.

Steps:

Steps:

  • Preheat your oven to 350 degrees and grease a 9x13 baking dish with non-stick spray.
  • Spread both cans of apple pie filling onto the bottom of your prepared dish.
  • Sprinkle about half of the bag of caramel bits evenly over the top of the pie filling.
  • Evenly distribute the dry cake mix over top.

Steps:

  • Heat the oven to 350 degrees F.
  • Grease and flour 2 (1 1/2-quart) oven-safe bowls. Combine the first 6 ingredients in a large bowl mixing bowl. In a separate bowl, beat together the remaining cake ingredients, then add this mixture to the dry ingredients, and beat until well mixed. Pour the batter into the prepared bowls and bake for 60 to 70 minutes or until a knife inserted in the center comes out clean.
  • Allow the cakes to cool in the bowls for 10 minutes, then remove them from the bowls, and set them inverted on wire racks to cool completely. Once they have cooled, turn over the cakes and use a long knife to even the tops.
  • To make the topping, place the caramel candies and water in a medium bowl and microwave on high power for 1 minute. Stir, then heat 30 to 45 seconds more until the mixture is smooth and forms a slow, thick ribbon when dropped from a spoon.
  • Layer the cakes (flat sides together), using a few spoonfuls of the caramel to help hold them in place. Pour the remaining sauce over the cake. The caramel will run down the sides of the cake to cover it completely, or you can spread it with a knife while it's still warm. Let the caramel set for about 20 minutes before pressing the walnuts onto the bottom half of the craft stick with waxed paper and insert the covered end into the top of the cake. Refrigerate or serve immediately.

3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 1/2 teaspoons vanilla
3 eggs
1 1/4 cups apple pie filling
1 -2 tablespoon chopped peanuts
1/4 cup caramel ice cream topping

Steps:

  • Preheat oven to 350°F
  • Spray 9-inch springform pan with nonstick cooking spray.
  • Combine crumbs and butter in small bowl. Press into bottom of prepared pan. Bake 9 minutes; cool.
  • Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended. Add eggs and beat well.
  • Pour cream cheese mixture over crust. Bake 40-50 minutes or until center is almost set. Refrigerate at least 3 hours. Carefully run knife around edge to loosen pan. Remove side of pan.

2 teaspoons vanilla extract
¼ teaspoon salt
1 ½ cups white sugar
¼ cup light corn syrup
¼ cup water
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¾ teaspoon salt
½ teaspoon ground nutmeg
1 cup firmly packed brown sugar
¾ cup unsalted butter, softened
½ cup white sugar
4 large eggs, at room temperature
¾ cup unsweetened applesauce
½ cup sour cream, at room temperature
2 teaspoons vanilla extract
3 cups Granny Smith apples - peeled, cored, and diced

Steps:

  • Combine heavy cream, butter, vanilla, and salt for caramel sauce in a small saucepan. Cook over medium-low heat until butter is melted and mixture begins to bubble, about 5 minutes. Remove from heat and keep warm.
  • Combine sugar, corn syrup, and water in a large, light-colored saucepan with high sides. Cook over medium heat, swirling occasionally, until mixture is amber in color, 15 to 20 minutes. Reduce heat to low, and very carefully whisk in reserved cream-butter mixture; stir constantly as caramel mixture will bubble up and steam. Continue cooking over low heat, stirring occasionally, for 5 more minutes. Remove from heat. Set out 1/2 cup of caramel sauce for the cake, and reserve the remainder for the topping. Allow to cool to room temperature.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt® pan.
  • Prepare cake: Whisk together flour, baking powder, baking soda, cinnamon, salt, and nutmeg in a bowl until combined.
  • Beat together brown sugar, butter, and white sugar in a large bowl until light and fluffy. Beat in eggs, 1 at time, mixing well after each addition. Mix in applesauce, sour cream, reserved 1/2 cup caramel sauce, and vanilla until thoroughly combined. Add in 1/2 of the flour mixture, and mix until just combined. Mix in remaining flour mixture until just combined. Fold in diced apples. Pour batter into the prepared Bundt® pan and smooth into an even layer.
  • Bake in the preheated oven until a bamboo skewer inserted into the cake comes out with a just few moist crumbs, 55 to 60 minutes. Allow cake to cool in the pan for 30 minutes. Gently run a knife around the edge to loosen and remove cake to a wire rack and cool completely, 15 to 30 more minutes.
  • Just before serving, pour remaining caramel sauce over the top of the cake. If needed, reheat the caramel slightly to make it a pourable consistency.
