2 (20 ounce) bags Simply Potatoes Diced Potatoes with Onion
6 tablespoons butter
1 tablespoon Worcestershire sauce
1/3 cup chicken broth
1 cup shredded cheddar cheese

Steps:

  • Spray a large piece of heavy duty aluminum foil with non-stick cooking spray.
  • Open both bags of Simply Potatoes and pour onto aluminum foil.
  • Dot with slices of butter.
  • Fold aluminum foil up around potatoes and pour Worcestershire sauce and chicken broth over potatoes.
  • Sprinkle with shredded cheddar.
  • Seal edges of aluminum foil and grill covered on medium heat for 35 to 40 minutes. (This meal can also be made in the oven, but is not quite as tasty without the grilled flavor. Bake at 350 degrees in the oven for about 45 minutes.).

These easy cheese potatoes are great over the grill or campfire. And since they're in a foil packet, there's no mess to clean up!

6 potatoes, sliced
¼ cup diced onion
2 tablespoons cold margarine
¼ cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
¾ cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.
  • Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength. Spray top one with non-stick spray. Spread potatoes on foil leaving plenty of room to fold up later. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper. Bring opposite edges of foil together and seal.
  • Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes.

3 cups Simply Potatoes® Shredded Hash Browns
1/2 cup pancake mix
2 eggs, slightly beaten
1 (8 ounce) cream cheese
2 tablespoons fresh dill, chopped

Steps:

  • Measure potatoes into a medium mixing bowl. Add pancake mix and mix well. Add beaten eggs and dill and stir to combine thoroughly. Allow to sit for 5 to 10 minutes. Measure one teaspoon of cream cheese and roll into a ball about the size of a marble. Using hands, scoop about a tablespoon of potato mixture and coat cream cheese ball so that it is completely covered with potato mixture. Form into a ball using gentle pressure just so potatoes stick together. This is a little messy, but kind of fun! Gently drop a few at a time into hot oil (350 degrees) with a slotted spoon and fry until golden, about 3 or 4 minutes each batch. Drain on paper towels. Allow to cool a little as cheese inside gets very hot!

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1/3 cup white cheddar cheese, shredded
3 eggs, divided
1 ounce prosciutto
1 tablespoon chives, chopped

Steps:

  • Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
  • Set oven to 375°.
  • Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
  • Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
  • Put the mixture into a greased mini-cheesecake pan. Sprinkle 2 t. of chives on top.
  • Bake for 25-30 minutes. Let cool for 5 minutes, then remove from pan. Sprinkle the remaining chives on top.
