A minute of prep in the home kitchen will make for a really quick dish at the campsite. Equally easy for a home meal on the grill or in the oven. This is summertime food and the living is easy!

2 lbs small potatoes, like red bliss or fingerlings,scrubbed clean
2 tablespoons olive oil
1 teaspoon coarse salt
1 teaspoon pepper
4 sprigs fresh rosemary
6 cloves garlic, peeled

Steps:

  • Before leaving the house, put oil, salt, pepper, rosemary and garlic in a large ziploc bag.
  • At the campsite, heat a grill to medium hot.
  • If potatoes are not all the same size, cut them into pieces to achieve uniform size-- this ensures that the potatoes will cook evenly.
  • Toss potatoes into the ziploc bag with the seasonings, zip and shake to coat!
  • Tip the mixture onto a large piece of aluminum foil (12-by 24-inch); bring the sides up and fold to make a sealed package.
  • Place package on grill and leave for about 45 minutes until potatoes are fork tender, then serve.

5 medium potatoes, peeled and thinly sliced
1 medium onion, sliced
6 tablespoons butter
1/3 cup shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/3 cup chicken broth

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.

  • Put all ingredients except milk and butter in crock pot. Cover & cook on simmer for 1 hr on stove. Stir in last 2 ingredients the last 30 minutes before serving. Add salt & pepper to taste. Garnish with shredded cheese, sour cream & bacon.

1 (12 ounce) package thick-cut bacon, diced
1 cup panko-style unseasoned breadcrumbs
2 cups jarred spicy cabbage kimchi, chopped
1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
4 scallions, ends trimmed and thinly-sliced

Steps:

  • Preheat your oven to 375 degrees F.
  • In a large, heavy-bottomed skillet, cook the diced bacon until the fat is fully-rendered and the bacon is golden brown and crisp. Using a slotted spoon, transfer the crisped bacon to a paper towel-lined plate to drain. Pour the rendered bacon fat into a small bowl.
  • Add the unseasoned Panko-style bread crumbs to the bowl containing the rendered bacon fat and stir to combine until the crumbs have been evenly moistened with the bacon fat. Set aside.
  • In a large mixing bowl, mash together the chopped spicy cabbage kimchi and Simply Potatoes Traditional Mashed Potatoes. Fold in your crisped bacon and half of your thinly-sliced scallions, reserving the remaining scallions for garnish.
  • Transfer your kimchi-potato mixture to a casserole baking dish and sprinkle the top evenly with the Panko-style bread crumbs. Bake the potatoes for 20 to 25 minutes, or until the bread crumbs are golden brown and the potato mixture is hot and heated evenly.

6 tablespoons butter
1 tablespoon Worcestershire sauce
1/3 cup chicken broth
1 cup shredded cheddar cheese

Steps:

  • Spray a large piece of heavy duty aluminum foil with non-stick cooking spray.
  • Open both bags of Simply Potatoes and pour onto aluminum foil.
  • Dot with slices of butter.
  • Fold aluminum foil up around potatoes and pour Worcestershire sauce and chicken broth over potatoes.
  • Sprinkle with shredded cheddar.
  • Seal edges of aluminum foil and grill covered on medium heat for 35 to 40 minutes. (This meal can also be made in the oven, but is not quite as tasty without the grilled flavor. Bake at 350 degrees in the oven for about 45 minutes.).
