EASY CAKE POPS
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat cake mix, water, eggs, and vegetable oil together in a bowl using an electric mixer on low speed for 30 seconds; increase speed to medium and beat until batter is smooth, about 2 minutes more. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool cake completely, at least 1 hour.
- Crumble cake into a large bowl and mix in cream cheese. Roll cake mixture into about 40 to 50 quarter-size balls. Insert a lollipop stick into each cake ball and arrange on a baking sheet; refrigerate until chilled, at least 30 minutes.
- Melt chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each melting, 1 to 3 minutes.
- Dip each cake ball into melted chocolate until coated. Arrange cake pops on a baking sheet to dry.

CAKE POPS
These fun cake pops are easy to make and great for parties. Kids and adults will love these colourful chocolate-covered bites

Steps:
- First make the cake. Heat oven to 190C/170C fan/gas 5. Grease and line the base of a 20cm sandwich tin. Place the butter, sugar and vanilla extract into a bowl and beat well to a creamy consistency. Slowly beat in the eggs, one by one, then fold in the flour and mix well. Tip into the cake tin and bake for about 20 mins until risen and golden brown. Set aside to cool completely.
- While the cakes are cooling, make the buttercream. In a large bowl or the bowl of stand mixer, beat the butter and icing sugar together until smooth, add the vanilla extract and milk and beat again. Once the cake is cooled, crumble into large crumbs. Add the butter cream and stir together. Take chunks of the cake mixture and roll into balls, transferring each ball to a lined tray or plate, push a lollypop stick into each, then put into the fridge for an hour to set.
- Melt the white chocolate in the microwave, blasting it and stirring at 10 seconds intervals until smooth. Tip the sprinkles into another bowl. Take each of the chilled cake pops and dip into the white chocolate, allowing it to drip off a little over the bowl. Dip into the sprinkles, then stand upright in a mug to dry at room temperature for an hour, or in the fridge for 30 mins.

CHOCOLATE VANILLA SWIRL POUND CAKE
Steps:
- Spray and flour a loaf pan. Preheat oven to 350 degrees F.
- In a mixing bowl, combine the flour, baking powder and salt. In another bowl, beat the butter until light and fluffy. Gradually add the applesauce, sugar and vanilla to the butter. Add the eggs 1 at a time, scraping down the sides of the bowl after each addition. Stir the flour into the butter, on low, alternately with the milk, beginning and ending with the flour.
- Put 2/3 of the batter in the prepared loaf pan. Add the fudge sauce and the baking soda to the remaining batter and mix until just blended. Spoon the chocolate mixture on top of the batter in the pan and swirl with a butter knife.
- Bake for approximately 1 hour or until the cake pulls away from the sides of the pan. Cool 10 minutes in the pan. Remove from the pan and cool completely.

- Combine sugar, flour, and baking soda in a bowl. Add butter, milk, eggs, and vanilla extract; stir, adding more flour if needed, until batter is thick but smooth.
- Scoop batter onto a nonstick baking sheet using an ice cream scoop.
- Bake in the preheated oven until golden brown, 30 to 40 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

VANILLA SWIRL CAKE

- Preheat oven to 350 degrees
- Butter and flour a 13 x 9 x 2 inch pan
- Cake Mix
- In a large bowl add the cake mix, pudding mix and powdered milk
- Add the eggs, one at a time mixing well
- Next add the vegetable oil and the buttermilk
- Mix on low then medium speed for 3 minutes then add the white chocolate chips and set aside
- Swirl Filling
- Beat the cream cheese and butter on high for 2 minutes with blender
- Next lower speed and add the sugar, then the eggs, one at a time, mixing well
- On low speed, add 2 tbsps plus 2 tsps of flour and vanilla extract
- Scrape down the sides of the bowl and set aside
- In a small bowl toss the apricots, cashews, raisins, candied ginger and toasted coconut with 1 tsp of flour
- Add the fruit and flour to the cream cheese mixture
- Pour half of the vanilla cake batter into the prepared pan, top with the fruit and cream cheese mixture
- Now pour the remaining vanilla cake batter ontop of the fruit and cream cheese mixture
- Take a knife and gently swirl thru all 3 cake layers to create a marbilized effect
- Bake in a 350 degree oven for 40 - 50 minutes - or until a toothpick comes out almost clean
- Cool completely and frost top of cake with cool whip
- Refrigerate for 1 hour and enjoy
- This cake is also wonderful sprinkled with icing sugar, or served with vanilla bean ice cream, or glazed with chocolate or carmel

EASY HERSHEY'S BAR SWIRL CAKE AND GLAZE
This is the easier-to-prepare version of the classic Hershey Bar Swirl Cake. The recipe comes from Hershey's Holiday Recipes.

Steps:
- Preheat oven 350°F.
- Generously grease and flour pan 12 cup flute pan (I have found that when making a chocolate cake that COCOA works better than flour for dusting the pan).
- Prepare cake mix batter as directed on package with oil, water, and eggs.
- Remove 2 cups batter, stir in corn syrup and pecans.
- Place chocolate bar pieces and chocolate syrup in a small microwave safe bowl.
- Microwave on high 1 minute or until smooth when stirred.
- Blend into remaining plain batter; pour into prepared pan.
- Spoon Vanilla Nut batter evenly over top.
- Bake 40 to 45 minutes or until wooden pick comes out clean.
- Cool 15 minutes; remove from pan to wire rack.
- Cool completely.
- Glaze with Milk Chocolate Glaze, allowing to drip down sides.
- GLAZE: Place chocolate bar pieces and shortening into micro-safe bowl on high (about 45 seconds) until melted when stirred.
- Cool slightly, glaze cake.
