½ cup sugar
1 tsp baking soda
1 tsp baking powder

1 cup canned crushed pineapple (with juice), partially drained
2 eggs, beaten
⅔ cup vegetable oil
1 tsp vanilla extract
1 cup raw grated carrots

Steps:

  • Preheat the oven to 350 degrees F. Line or grease a muffin pan.
  • Using a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, and salt. Set aside.
  • In another bowl, whisk together the wet ingredients: crushed pineapple, eggs, vegetable oil, and vanilla extract until combined together.
  • Stir the wet ingredients into the dry ingredients, whisking until the ingredients are just combined (no dry ingredients are visible). Fold in the grated carrots. Scoop into the muffin cups, filling each ¾ full. Bake for 20-22 minutes, until a wooden skewer inserted in the middle comes out clean.
  • Let the muffins cool for 5 minutes before removing them from the pan and letting them cool further on a wire rack. Enjoy warm or cool with some butter if you like.

1 (8 1/4 ounce) package yellow cake mix (do not use the "pudding added" cake mix for this)

1 pinch nutmeg
1 cup shedded carrot
1 cup chopped walnuts or 1 cup pecans

this is delicious, I started making it with a Duncan Hines carrot cake mix in the 1980's and had to switch to Betty Crocker when Duncan stopped making it. I actually made it for Miss Picky's first birthday and she will be 25 in June. The pineapple and raisins really make it moist and the the chopped pecans add a different texture. Try it with cream cheese frosting.

1/4 cup water, i usually substitute milk
1/2 cup vegetable oil
4 eggs
1 (8 ounce) can crushed pineapple with juice, undrained

1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a bundt pan.
  • I use Bakers Joy spray.
  • Beat cake mix, water (milk), oil, eggs and pineapple on low speed 3 minutes.
  • Stir in nuts and raisins.
  • Pour into prepared pan.
  • Bake for 50-55 minutes or until toothpick comes out clean.
  • Cool in pan 15 minutes.
  • Remove from pan and cool on wire rack.
  • Cool at least 1 hour before frosting.

I changed it a tad, by adding golden raisins to my liking, and I made it in a 11x13 pan, and added baking time to it until it tested done as directed. The prep time was based on shredding the carrots, but buying the prepared carrots cuts the prep time to about 10 minutes!

I love carrot cake but sometimes I don't have time to make it from scratch. I found this recipes many years ago and it has been a great stand-in for the "from scratch" version.

1 (18.5 oz) box carrot cake mix
1/2 c liquid (reserved pineapple juice plus enough water to make 1/2 cup)
1/3 c canola oil
3 eggs
2 c finely shredded carrots
1 small can crushed pineapple, drained (reserve the juice)
1/2 c raisins
1/2 c chopped pecans or walnuts
1 can(s) (16-oz.size)ready made cream cheese frosting

Steps:

  • 1. Preheat oven to 350 F.
  • 2. Combine the cake mix, liquid, oil and eggs; beat 2 minutes at medium speed with an electric mixer.
  • 3. Fold in carrots, pineapple, raisins, and pecans.
  • 4. Pour batter into a greased and floured 9 x 13 cake pan. (You can use the non-stick cooking spray with flour here.)
  • 5. Bake for 35 to 45 minutes or until a toothpick stuck in the middle of the cake comes out clean.
  • 6. Cool the cake in the pan for 25 minutes; turn the cake out onto a wire rack and let it cool completely.
  • 7. Place the cake on your desired serving platter and spread the icing evenly to cover the cake.

Steps:

  • Preheat the oven to 350 degrees F. Grease a 13 x 9 x 2 rectangular pan. set aside.
  • Sift together flour, baking powder, baking soda, and salt. In a bowl, combine the oil and sugar. Add eggs, one at a time, beating and mixing. Stir in vanilla. Stir in lemon juice. Add the carrots. mix well. Add the fry ingredients and the crushed pineapple with juice. Mix well. Pour into your prepared pan and bake for 35 minutes or until done. Set aside to cool before frosting.
  • Cream cheese filing:.
  • In a bowl, beat cream cheese and butter until soft. Add sugar and mix well. Add vanilla and lemon juice and mix well. Continue to mix well until soft and fluffy. Put in refrigerator to chill while cake is cooling. When cake is cooled, frost and enjoy with cold glass of milk.

  • On low speed, beat in half of the flour mixture until smooth, then beat in the sour cream, scraping down the sides of the bowl as needed. Beat in remaining flour just until incorporated.
