PORK CHOPS WITH GARLICKY BROCCOLI
A little Parmesan in the pork chops' crunchy coating makes it extra-flavorful. The broccoli is simple yet special--try it alongside just about anything you're cooking, but it pairs perfectly with the pork here for a satisfying healthy dinner ready in just 30 minutes.

- Position rack in upper third of oven; preheat broiler to high. Line a rimmed baking sheet with foil.
- Toss broccoli with 1 1/2 tablespoons oil on the prepared pan and spread in an even layer. Broil, stirring once, until charred in spots, about 10 minutes. Transfer to a bowl and set aside.
- Meanwhile, combine breadcrumbs and Parmesan in a shallow dish. Place flour in another shallow dish and egg in a third shallow dish. Sprinkle pork with 1/4 teaspoon salt, then dredge in the flour, shaking off excess; dip in the egg, letting excess drip off; and coat with the breadcrumb mixture.
- Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning once, until golden brown and an instant-read thermometer inserted in the thickest portion registers 145 degrees F, about 6 minutes total. (If the pork is browning too quickly, reduce heat to medium.) Transfer to a plate and drizzle with lemon juice. Tent with foil.
- Wipe the pan clean. Add the remaining 1 1/2 tablespoons oil, garlic and crushed red pepper and cook over low heat, stirring, until the garlic is sizzling, about 3 minutes. Remove from heat and stir in vinegar and the remaining 1/2 teaspoon salt. Drizzle over the reserved broccoli and toss to coat. Serve the pork and broccoli with more Parmesan and thyme, if desired.

SHEET PAN PORK WITH BROCCOLI

- Preheat the broiler. Place the pork on a rimmed baking sheet; season generously with salt and pepper. Mix 1 tablespoon olive oil, the grated garlic, paprika, oregano and 1 teaspoon Peppadew brine in a bowl; rub all over the pork and set aside 5 minutes. Broil the pork until lightly browned, about 8 minutes.
- Meanwhile, toss the broccoli, chickpeas, Peppadews, whole garlic cloves, 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Remove the pork from the oven and flip. Spread the broccoli mixture around the pork. Continue broiling until a thermometer inserted into the pork registers 145 degrees F and the broccoli is lightly charred, 6 to 9 more minutes. Transfer the pork to a cutting board and let rest 10 minutes.
- Squeeze the broiled garlic cloves from their skins; finely chop. Combine the garlic with the remaining 2 tablespoons olive oil and 2 teaspoons Peppadew brine, the parsley, lemon zest and juice and a pinch of salt in a small bowl. Slice the pork and serve with the broccoli mixture. Drizzle the herb sauce on the pork.

- Heat butter and oil in large skillet.
- Brown pork chops on both sides. Set aside.
- Combine soup, mushrooms, mustard, chicken broth, garlic, salt, basil and pepper in slow cooker.
- Add potatoes and onion, stirring to coat.
- Place pork chops on top of potato mixture.
- Cover and cook on Low 8 to 10 hours or on High 4 to 5 hours.
- Sprinkle with parsley.
BROCCOLI PORK
This is my favorite marinade for pork, oriental with just a hint of lemon. You would never know that it was low fat.

- ------Marinade-------Mix garlic, onions, lemon juice, soy sauce and honey together.
- -------Pork--------.
- Trim fat from pork.
- Cut pork into 1/2" pieces; place into a resealable plastic bag and pour marinade over pork.
- Seal bag.
- Marinade pork for 20 minutes, or refrigerate until ready to use, no longer than 24 hours.
- Drain pork, reserving marinade.
- Spray skillet with nonstick spray; add olive oil and heat until oil is hot.
- Add pork; stir-fry until no longer pink in the center.
- Remove pork from skillet.
- Add broth to skillet; bring to a boil.
- Add broccoli, pork and marinade.
- Reduce heat to medium, cover and cook about 3 minutes or until broccoli is crisp tender.
- Heat until boiling.
- Mix cornstarch and water; stir into pork mixture.
- Cook and stir until thickened.
- Serve over pasta or rice.
- Sprinkle with lemon peel.
EASY BROCCOLI & PORK CHOP DINNER
My dh loves pork chops, me not so much. This is one recipe that we both agree on, the pork chop is moist and tender with a delicious sauce. Its quick and easy and is a great week day meal.

- Add broth to a pot and bring to a boil at medium high heat, then stir in the rice, cover and lower heat to medium low, simmer for 3 - 4 minutes.
- Next add the broccoli and sweet onion, stir, cover and simmer for 2 more minutes.
- Remove from heat and let stand covered, for 5 minutes or until the broth is completely absorbed.
- Place a large cooking pan on medium heat and add a little oil, add the pork chops and cook 4 minutes per side until lightly browned and cooked through.
- Remove the pork chops from the pan, cover and keep warm.
- Add the catalina dressing, orange juice, orange zest and maple syrup to the pan, bring to a boil, cooking for 3 minutes or until sauce is reduced by half.
- Serve chops over the rice and drizzle with the sauce and garnish with almonds if using.

PORK CHOP EASY, TASTY DINNER IN ONE PAN
I found this about 40 years ago in the newspaper - lovely unexpected flavors! Since I have not seen anything like it I decided to contribute. I strongly suggest you try it as written, I have never needed to tweak it. I know, ketchup! But it works! (Now Heinz has come out with one without High Fructose corn syrup). I use an electric frypan. The chops are always tender, moist and tasty. Everybody I have served it to asks for the recipe. Give it a try, Enjoy!

- Mix the wine, ketchup, lemon juice, garlic,s +p, and water together.
- Sprinkle the chops w/garlic salt and brown in 1 Tblsp butter or oil on medium heat for 3 minutes a side.
- Add all the cut veggies to the pan and pour the sauce over all (I like to get the veggies in the liquid).
- Cover and simmer over med low heat for 45 minute or until the potatoes can be easily pierced with a fork. Meal in a pan!

- In a large skillet heat olive oil and butter. Brown chops on both sides.
