Here's what you need: ripe bananas, eggs, vanilla extract, quick-cook oats, blueberry

2 ripe bananas
2 eggs
1 teaspoon vanilla extract
½ cup quick-cook oats
½ cup blueberry

Steps:

  • Mash the bananas in a large bowl until smooth. Mix in the eggs and vanilla until well combined, then mix in the oats. Carefully fold in the blueberries.
  • Heat a medium nonstick skillet over medium heat. Add a scoop of the pancake batter. Smooth out to form an even layer. Cook for 2-3 minutes until you start to see bubbles forming on the surface. Flip and cook until the other side is golden brown, 1-2 minutes more.
  • Garnish your pancakes with your favorite toppings! We like Greek yogurt, granola, fresh blueberries, and/or maple syrup.
  • Enjoy!

1 ¼ cups all-purpose flour
½ teaspoon salt
1 tablespoon baking powder
1 ¼ teaspoons white sugar
1 egg
1 cup milk
½ tablespoon butter, melted
½ cup frozen blueberries, thawed

Steps:

  • In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup 2% milk
2 tablespoons canola oil
1 tablespoon maple syrup
Additional maple syrup

Steps:

  • In a small bowl, combine the flour, baking powder and salt. In another bowl, combine the egg, milk, oil and syrup; stir into dry ingredients just until blended. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown (pancakes will be thin). Serve with additional syrup.

I have not tried this sauce. I'm posting this for safe keeping. I found this recipe in Complete Book Of Small Batch Preserving. A spoonful of this sauce is a scrumptious topping for sliced fresh peaches or other fruit. Of course, serve it on pancakes and waffles as well.

2 cups fresh unsweetened blueberries (500 ml) or 2 cups unsweetened frozen blueberries (500 ml)
1/4 cup water (50 ml)
1 tablespoon lemon juice (15 ml)
1 cinnamon stick, 4-inches long (10 cm)
1/2 cup granulated sugar (125 ml)
1/2 cup maple syrup (125 ml)

Steps:

  • Combine blueberries, water, lemon juice and cinnamon stick in a 4-cup (1 L) microwavable bowl. Microwave, uncovered, on high (100%) for 5 minutes, stirring once. Stir in sugar and maple syrup. Microwave, uncovered, on high for 3 minutes or until sugar is dissolved and mixture comes to a boil. Let cool.
  • Discard cinnamon stick and store sauce in a tightly sealed container in refrigerator for up to 1 month.

  • Heat first 3 ingredients in a bowl for 45 seconds, or until berries are thawed and have released their juices.
  • Lightly mash the berries until the sauce no longer has any big chunks, and mix in flour and sweetener.
  • Enjoy over pancakes, waffles, crepes, or whatever you want! Great with margarine and a dollop of Cool Whip.

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

1 lemon
1 pint raspberries
1/3 cup sugar, plus
1 tablespoon sugar
2 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon baking powder
1 cup ricotta cheese
1 1/4 cups milk
4 large eggs, separated
maple syrup, for serving

Steps:

  • 1. Working over a bowl, use a grater to zest the lemon, being careful not to remove any of the bitter white pith. Cut the zested lemon into wedges, and set them aside.
  • 2. Add the raspberries to the bowl containing the lemon zest. Stir in 1/3 c sugar, gently crushing the raspberries with a wooden spoon. Set aside while making the pancake batter.
  • 3. In a medium bowl, combine the flour, salt, 1 Tbsp sugar and baking powder. In another bowl, beat the ricotta cheese with milk and egg yolks. Add the flour mixture to the ricotta mixture, and stir until just combined. Let the batter sit for 10 minutes.
  • 4. Beat the egg whites with a mixer until they hold soft peaks. Next gently fold the raspberries with their juices into the batter, then fold in the egg whites. (You want little clumps of whites in the batter. The important thing is not to overmix it.).
  • 5. Heat a large nonstick skillet over moderately low heat. Melt 1/2 T butter at the center of the skillet, where you will spoon the batter.
  • 6. Spoon the batter into the hot skillet, directly on the melted butter.
  • 7. Cook each pancake until the bottom is golden brown and the bubbles on the surface begin to break, about 2 minutes. Using a spatula, flip the pancake quickly. Cook until golden brown, about 1 minute longer.
  • 8. Serve finished pancake with maple syrup and lemon wedges.
  • 9. Peaches and bananas work well in this recipe.

1 tablespoon baking powder
1/4 cup flax seed (ground)
1/4 cup wheat germ

Steps:

  • Combine the oat bran or oats and milk in a medium bowl and let it stand for about 3-5 minutes.
  • Stir in the rest of the ingredients and mix it evenly. If the batter is too runny then add more oat bran, oats, or whole wheat flour until the batter becomes thicker. (If you're making pancakes then the batter does not need to be as thick.).
  • Be sure to spray the waffle iron and keep in there for about a minute, adding about 5-10 seconds longer for each waffle.
  • Top with applesauce, berries, whip cream and/or pure maple syrup, honey or berry/fruit flavored apple sauce would be good, too.
