1 (10 1/4 ounce) can French onion soup
1 (10 1/4 ounce) can cream of mushroom soup
3/4 cup dry red wine
6 ounces fresh mushrooms, sliced

  • Put all the ingredients into the crock pot and set on low for 8-10 hours .
  • The soup and juice make a great base for a gravy with the addition of some flour (adding a juice to a quarter cup of flour until the correct consistency is reached).

1.5 kg topside of beef
2 medium onions
2 carrots
2 sticks celery
1 bulb of garlic
1 bunch of mixed fresh herbs, such as thyme, rosemary, bay, sage
olive oil

Steps:

  • Remove the beef from the fridge 30 minutes before you want to cook it, to let it come up to room temperature.
  • Preheat the oven to 240°C/475°F/ gas 9.
  • Wash and roughly chop the vegetables - there's no need to peel them. Break the garlic bulb into cloves, leaving them unpeeled.
  • Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with oil.
  • Drizzle the beef with oil and season well with sea salt and black pepper, then rub all over the meat. Place the beef on top of the vegetables.
  • Place the tray in the oven, then turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well done, leave it in for another 10 to 15 minutes.
  • If you're doing roast potatoes and veggies, this is the time to crack on with them - get them into the oven for the last 45 minutes of cooking.
  • Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them from burning.
  • When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so. Cover it with a layer of tin foil and a tea towel and leave aside while you make your gravy, horseradish sauce and Yorkshire puddings.

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Pour vegetable oil into a large oven-safe pot over medium-high heat. Season the chuck roast with salt and black pepper. Brown the meat on both sides in the hot oil, and transfer to a plate.

Steps:

  • Season roast. Place in shallow roasting pan. Insert oven-safe meat thermometer into center of roast avoiding fat or bone.
  • Oven-Sear by placing uncovered roast in preheated 450°F (230°C) oven for 10 minutes.
  • **Reduce heat to 275°F (140°C); cook uncovered to desired doneness, removing from oven when 5°F (3°C) below finished temperature. (Bone-in roast can take 30 to 45 minutes less.)
  • Cover with foil and let stand for at least 15 minutes before carving into thin slices.
  • **Not around to turn it down? Skip Step 2 and roast at a constant 275°F (140°C). This is especially good for less tender cuts and smaller roasts (less than 1 kg/2lb). Allow approximately 15% longer cook time.
  • A rack in the pan promotes even cooking.
  • Roast without a lid for best browning.
  • Use a thermometer to know when your Oven Roast is done the way you like it.
  • Let roast stand at least 15 minutes after cooking to let juices settle.

1 tsp plain flour
1 tsp mustard powder
950g beef top rump joint (see tip below)
1 onion, cut into 8 wedges
500g carrots, halved lengthways
1 tbsp plain flour
250ml beef stock

Steps:

  • Heat oven to 240C/220C fan/gas 9.
  • Mix 1 tsp plain flour and 1 tsp mustard powder with some seasoning, then rub all over the 950g beef top rump joint.
  • Put 1 onion, cut into 8 wedges, and 500g carrots, halved lengthways, into a roasting tin and sit the beef on top, then cook for 20 mins.
  • Reduce oven to 190C/170C fan/gas 5 and continue to cook the beef for 30 mins if you like it rare, 40 mins for medium and 1 hr for well done.
  • Remove the beef and carrots from the oven, place onto warm plates or platters and cover with foil to keep warm.
  • Let the beef rest for 30 mins while you turn up the oven to cook your Yorkshire puds and finish the potatoes.
  • For the gravy, put the tin with all the meat juices and onions back onto the hob.
  • Stir in 1 tbsp plain flour, scraping all the stuck bits off the bottom of the tin. Cook for 30 seconds, then slowly stir in 250ml beef stock, little by little.
  • Bubble to a nice gravy, season, then serve with the beef, carved into slices, carrots and all the other trimmings.

2 -3 lbs rump roast
1 (8 -10 ounce) package dry onion soup mix
1 cup water
1/2 cup red wine (I prefer wine) or 1/2 cup ginger ale (I prefer wine)
sliced mushrooms, depending on size
fresh ground pepper
4 tablespoons flour
6 tablespoons water

Steps:

  • Rub the rump roast with the pepper and put in good size roaster.
  • Add rest of the ingredients, except flour and water.
  • Cover.
  • Roast in a 350* oven for approximately 2 hours.
  • Use your thermometer for the doneness you prefer.
  • I like an inner temperature of 150*.
  • Baste every so often to keep meat moist.
  • When done take out meat cover with foil and let it rest.
  • Mix your flour and water in a jar with a cover and shake quickly. This removes any and all lumps.
  • Put your pan on the burner, pour in the flour/water mixture; stir until thickened.
  • If you like a thinner gravy just add water. If you like a darker, richer color to your gravy add a"seasoning and browning sauce".
  • Now you are ready to thinly slice your meat.

1 can beef broth
1 package mccormick au jus sauce
1 1/2 cups water
1 -2 cup of medium sliced carrot
1/2 cup chopped onion
1 -2 clove chopped garlic
1 teaspoon salt
1 teaspoon pepper
8 ounces noodles

Steps:

  • In a skillet on medium to low heat, put roast in a large skillet.
  • Pour can of beef broth over beef and add onion and garlic clove.
  • Cook for 1 hour until broth is about 1/2 gone.
  • After an hour, add Au jus, water, salt and pepper.
  • Mix well until Au jus is disolved.
  • Add sliced carrots and cook for additional hour until meat and carrots are tender.
  • In a separate pan cook noodles until tender and drain.
  • Put noodles in a serving dish, cut meat into pieces (should be tender enough to pull apart) and add to noodles.
  • Pour remaining liquid from pan over noodles and beef.
  • Stir well and serve.
  • You can add more of less carrots.
  • We like a lot of carrots.
  • Also, I like to turn my roast off and let it sit for about 15 minutes in the pan before cutting so it will retain more of the juices.

The flavor of the pepper rings and juice goes right through the roast, and it is so moist, with a mild taste. I received this recipe from a close friend who works in the meat dept. at a local grocery store. When customers ask for a different way to make a roast, they suggest this. The leftovers make the best sandwiches. Be sure you use the Mild pepper rings, and not the Hot. I wouldn't advise adding potatoes or carrots to this recipe. This is one of my husbands favorite, I hope you like it too.

This is a pretty fool proof way to make a roast beef. You can add or subtract any seasoning you want. * I don't add salt before cooking as it will draw out the juices. *Always check your roast with a meat thermometer, to get a perfect roast. I use a digital read thermometer. see bottom of directions for timetable. *Remember that the roast will continue cooking after you remove from the oven and let it sit. Usually about 5-10 degrees, so keep that in mind when you go to read the temperature *Allow the roast to sit for 10-15 minutes after removing from oven, so that the juices can redistribute, before you slice it.

  • Medium rare- 130-140 degrees.
  • Medium- 145-150 degrees.

1 (12 fluid ounce) can or bottle beer (such as Rickard's® Red)
½ cup honey
½ cup soy sauce
¼ cup Montreal steak seasoning
2 teaspoons minced garlic

Steps:

  • Use a metal skewer to poke some holes throughout beef rib roast so marinade can penetrate the muscle.
  • Whisk together beer, honey, soy sauce, Montreal steak seasoning, and garlic in a bowl; pour into a large resealable plastic bag. Add the rib roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator at least 24 hours.

1 5-pound beef rump roast, all visible fat discarded
2 tablespoons olive oil
1 tablespoon Chili Powder (page 277) or no-salt-added chili powder
1 medium onion, thinly sliced
2 medium carrots, thinly sliced
1 large rib of celery, thinly sliced
1/2 cup dry red wine (regular or nonalcoholic) (plus more as needed)
1 tablespoon Worcestershire sauce (lowest sodium available)
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°F. Lightly spray a roasting pan with olive oil spray. Set aside.
  • Rub the beef on all sides with the oil. Sprinkle with the Chili Powder. Using your fingertips, gently press the Chili Powder so it adheres to the beef. Transfer the beef to the roasting pan. Put the onion, carrots, and celery around the beef.
  • In a small bowl, stir together the wine and Worcestershire sauce. Pour over the beef.
  • Bake for 1 hour 30 minutes, or until a meat thermometer inserted in the thickest part of the beef registers almost the desired doneness. If the beef begins to dry out during cooking, baste with additional wine. Don't use the drippings for basting. Leaving the pan juices in the pan, transfer the beef to a cutting board, retaining the pan juices. Let stand, lightly covered with aluminum foil, for 10 to 15 minutes to continue cooking. Thinly slice the beef. Arrange on a platter.
  • Meanwhile, skim the fat from the pan juices or remove the juices with a bulb baster and discard the fat. Stir the salt into the pan juices. Spoon over the sliced beef.
  • Cook's Tip on Beef Temperatures
  • Use a meat thermometer or an instant-read thermometer to determine the internal temperature. To be safe, cook beef to at least 160°F. For well-done, cook to 170°F.
  • Cook's Tip on Separating Fat from Pan Juices
  • A gravy separator, which looks like a measuring cup with a spout coming from the bottom, makes it easy to remove the fat from pan juices. Pour all the pan juices into the separator. After the fat rises to the top, simply pour the fat-free juice out of the bottom until the fat layer falls to the level of the spout. Discard what remains in the separator.

200 ml Creme Fraiche (or soured cream)
700 g Leftover Roast Beef (cut into strips)
2 tbsp Parsley (chopped)

Steps:

  • Heat the oil in a frying pan and gently fry the onions and garlic over a medium heat for 4-5 minutes.
  • Turn the heat up and add in the sliced mushrooms (and fresh steak strips if you don't have any leftover roast beef - see top tips below), and cook for a further 2-3 minutes until the mushrooms are tender.
  • Stir in the beef stock, tomato puree, smoked paprika, dijon mustard and dried herbs. Simmer for 10 minutes on a low heat.

1/2 cup unsalted butter (at room temperature)
1 teaspoon salt
1 teaspoon freshly cracked black pepper

1 teaspoons fresh parsley (finely chopped)
1 teaspoons fresh rosemary (finely chopped)
5 cloves garlic (finely minced)
beef drippings ((skim off some fat, if desired))
1 teaspoon worcestershire sauce

2 tablespoons all purpose flour
2 cups low sodium beef stock ((or broth))

Steps:

  • Preheat your oven to 425 degrees Fahrenheit.
  • Place your beef ribeye roast in a large roasting pan on a rack. Using a rack makes for even cooking. If you don't have one, use a regular baking dish or cast iron pan. Be sure your roast is at room temperature (let it sit out at room temperature for about 1-2 hours before cooking).
  • Combine the unsalted butter, salt, pepper, herbs and garlic in a small bowl until well combined.
  • Pat the beef roast dry on all sides with some kitchen paper towel and rub the butter mixture all over the roast, making sure to coat all sides.
  • Place the roast in the oven at 425 degrees and set the timer for 15 minutes.
  • After 15 minutes, turn the oven temperature down to 350 degrees Fahrenheit and roast for about 50 minutes to 1 hour and 20 minutes. Check the internal temperature after about 50 minutes. Remove the roast as soon as the internal temperature reaches 120 degrees Fahrenheit (48 Celsius) for medium rare.
  • Once you remove the roast from the oven, use the rack to remove the roast from the roasting pan and let it sit on a cutting board for about 15 minutes before slicing. Loosely tent some foil over the top to keep it warm.
  • Place the roasting pan on the stovetop over medium heat and use a whisk to scrape any bits off the bottom of the pan. Feel free to skim the fat off the top of the beef drippings before placing it over the heat, but if you're making this recipe for a holiday dinner leaving the fat in the drippings will make the au jus nice and rich.
  • Add the wine and Worcestershire sauce to the drippings and whisk them together.
  • Add the flour to the beef stock and whisk to combine. Pour the stock mixture into the pan with the drippings and continue whisking the mixture, until it thickens just slightly.
  • Taste, and season with salt and pepper to your tastes.
  • Place a fine mesh strainer over a bowl and strain the au jus to remove any impurities.
  • If you wish, add a tablespoon of butter to the strained au jus and stir it in to the sauce as it melts.
  • Slice the beef ribeye roast into thick slices (a 6-pound roast should serve 6-8 people generously) and serve with the au jus gravy and your favourite side dishes.
