Steps:
- Remove the meat from the fridge an hour before you plan to start cooking it.
- Preheat your oven to 500 degrees F. Line a rimmed baking sheet with foil (for easy cleanup) and fit it with a wire rack.
- Pat the beef dry with paper towels. If one end is thinner than the other, tuck it underneath and tie with butcher's twine to make sure the roast cooks evenly. You can also ask your butcher to tie it for you.
- Mix the olive oil and the spices, then use your clean hands to rub the beef all over with the mixture.
- Place the tenderloin on the wire rack. Insert a meat thermometer into its thickest part. Place it in the oven and roast it for 15 minutes in the 500°F oven.
- Lower the oven temperature to 350°F. Continue roasting until the meat thermometer registers 130 degrees F (medium-rare), about 20 more minutes.
- Transfer the roast to a cutting board. Loosely cover it with foil and allow it to rest for 30 minutes.
- Gently remove the butcher twine (you can cut it with kitchen scissors then gently pull it out of the meat), slice, and serve.

Steps:
- Remove roast from refrigerator and allow to come to room-temperature (about 30-40 minutes). Preheat oven to 300 degrees. Trim excess fat from roast and generously rub all sides with Kosher salt.
- In a heavy roasting pan or Dutch oven, over medium-high heat, melt butter. Add roast to pan and sear on all sides for about one minute per side. You want the roast to be brown all over.
- Sprinkle onion soup mix over the roast and pour beef broth over the top and around the inside of the roasting pan.
- Cover and roast in the oven for 3 hours or until beef is fall-apart tender (add 40-60 minutes per pound over 3 pounds).
- Allow roast beef to rest 10-15 minutes, still covered or wrapped in foil, before carving. While the roast rests, make gravy (optional, see notes above). Use a sharp knife to cut into slices and serve!

Steps:
- Place rack in the lower ⅓ of the oven then preheat to 275 degrees. Trim brisket of excess fat, but make sure to leave at least a ¼" layer of fat on the fatty side for flavor-the fatty layer on top essentially 'bastes' the meat as it is cooking. Trim lean side of as much silver skin as possible. Place brisket, fat side up, into a roasting pan that allows 1"-2" of space all the way around the meat then set aside.
- To make the dry rub, mix chili powder, salt, paprika, garlic powder, onion powder, brown sugar, pepper, mustard powder and thyme leaves in a small bowl then stir until uniformly combined. Spread entire bowl of dry rub over brisket, coating the top, bottom and sides then return brisket to pan, fatty side up, before cooking.
- Place brisket in oven, uncovered for 1½ hours. Remove from oven then pour the can of beef broth into the bottom of pan. You should have ¼"-½" of liquid in the bottom of the pan. Cover tightly with 2 layers of foil then return to oven for 3-4 hours-when the meat is nice and tender.
- Remove from oven then transfer meat to cutting board. Let it cool for 8-10 minutes before slicing against the grain into thin slices. Pour cooking liquid into a bowl then let the fat collect on top. Skim the oil from the cooking liquid then serve the juice alongside the meat if desired. Enjoy!

Steps:
- Remove the beef from the fridge 30 minutes before you want to cook it, to let it come up to room temperature.
- Preheat the oven to 240°C/475°F/ gas 9.
- Wash and roughly chop the vegetables - there's no need to peel them. Break the garlic bulb into cloves, leaving them unpeeled.
- Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with oil.
- Drizzle the beef with oil and season well with sea salt and black pepper, then rub all over the meat. Place the beef on top of the vegetables.
- Place the tray in the oven, then turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well done, leave it in for another 10 to 15 minutes.
- If you're doing roast potatoes and veggies, this is the time to crack on with them - get them into the oven for the last 45 minutes of cooking.
- Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them from burning.
- When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so. Cover it with a layer of tin foil and a tea towel and leave aside while you make your gravy, horseradish sauce and Yorkshire puddings.

Steps:
- Use a metal skewer to poke some holes throughout beef rib roast so marinade can penetrate the muscle.
- Whisk together beer, honey, soy sauce, Montreal steak seasoning, and garlic in a bowl; pour into a large resealable plastic bag. Add the rib roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator at least 24 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove rib roast from the marinade. Discard remaining marinade. Place roast into a roasting pan with a rack.
- Cook the roast until hot and slightly pink in the center, about 2 1/2 hours. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove from oven, cover with aluminum foil, and let rest on top of stove for 20 minutes before slicing and serving.

Steps:
- Season roast. Place in shallow roasting pan. Insert oven-safe meat thermometer into center of roast avoiding fat or bone.
- Oven-Sear by placing uncovered roast in preheated 450°F (230°C) oven for 10 minutes.
- **Reduce heat to 275°F (140°C); cook uncovered to desired doneness, removing from oven when 5°F (3°C) below finished temperature. (Bone-in roast can take 30 to 45 minutes less.)
- Cover with foil and let stand for at least 15 minutes before carving into thin slices.
- **Not around to turn it down? Skip Step 2 and roast at a constant 275°F (140°C). This is especially good for less tender cuts and smaller roasts (less than 1 kg/2lb). Allow approximately 15% longer cook time.
- A rack in the pan promotes even cooking.
- Roast without a lid for best browning.
- Use a thermometer to know when your Oven Roast is done the way you like it.
- Let roast stand at least 15 minutes after cooking to let juices settle.
- Carve Oven roasts in thin slices across the grain.

Steps:
- Preheat oven to 275F.
- Salt and pepper the beef. Lay the beef (bone side down) in a baking dish, snuggle the ribs close together and cover tightly with aluminum foil. I use 2 sheets of foil.
- Cook ~ 3 1/2 - 4 hours or until bone starts to separate from the meat and meat is tender.
- Uncover, drain off any liquid or excess fat (you don't want to start a fire if your broiler runs uber hot. Ribs are fatty and the grease could catch on fire so don't skip this step) OR place ribs on an aluminum lined baking sheet if you don't want to drain the hot baking dish (see video).
- Remove any excess fat from the top of the ribs with a butter knife (see video).
- Baste on bbq sauce (my favorite bbq sauce is Sweet Baby Ray's). Broil on low for 2-4 minutes (watching carefully so it doesn't burn) or until caramelized.
- Serve with potato salad or corn on the cob. Happy Eating! Beckie

EASY ROAST BEEF
This is a pretty fool proof way to make a roast beef. You can add or subtract any seasoning you want. * I don't add salt before cooking as it will draw out the juices. *Always check your roast with a meat thermometer, to get a perfect roast. I use a digital read thermometer. see bottom of directions for timetable. *Remember that the roast will continue cooking after you remove from the oven and let it sit. Usually about 5-10 degrees, so keep that in mind when you go to read the temperature *Allow the roast to sit for 10-15 minutes after removing from oven, so that the juices can redistribute, before you slice it.

Steps:
- Preheat Oven to 500 Degrees.
- Remove Roast beef from package and rinse under cold water. Pat dry with paper towels.
- Rub Olive Oil all over roast and put in roasting pan on a rack. (FAT SIDE UP).
- Sprinkle Garlic Powder and Black Pepper all over roast.
- Put in oven and roast at 500 degrees for 20 minutes.(do NOT open oven door during this step. You want the intense hot heat to "sear" the roast and keep in all the juices.).
- After 20 minutes, lower the oven temperature to 300 degrees and continue roasting for at that temperature for 18 minutes per pound.
- *3lb Roast- 54 minutes
- *4lb Roast-72 minutes
- I generally start checking the temperature after 45 minutes of cooking at 300 degrees. When the roast reaches the required temperature (see below) remove from oven and let sit for 10-15 minutes.
- Timetable.
- Rare- 125-130 degrees.
- Medium rare- 130-140 degrees.
- Medium- 145-150 degrees.
- Well Done-155-165 degrees.
- After allowing the roast to "rest" Slice and Serve!
- Enjoy!

Steps:
- Preheat oven to 300F and allow chuck roast to come to room temperature. Peel and chop carrots into sticks. Clean and cut each baby potato in half.
- Season chuck roast on all sides with the salt and pepper. Heat olive oil in a frying pan over medium heat. When the oil is warm, sear the chuck roast on all sides until there is a golden brown crust - about 4 mins each side.
- Remove the chuck roast from the pan, drain any excess oil from the pan and reduce the heat to medium low. Mix beef broth, wine, and tomato paste in the pan scraping any brown bits off the bottom as you mix. Let this mixture simmer for 5 minutes.
- Arrange half of the carrots and potatoes in a layer in the bottom of a roasting pan. Place the roast on top and arrange the rest of the carrots and potatoes around it. Season with rosemary and thyme and pour the liquid from the pan over top.
- Cover the roasting pan with a lid and place in the oven to cook. Cook for an hour and a half then remove from the oven and spoon the liquid from the bottom of the pan over the roast for a minute. Cover the pan and return it to the oven.
- Cook for another hour and half until the roast has cooked for 3 hours total. Remove from the pan and let it rest for at least 10 minutes. Slice and serve with the carrots and potatoes.
- Skim the excess fat off the juice from the pan and serve with the sliced roast.

- 1. Make the rub: In a small bowl, combine the brown sugar, garlic powder, chilli powder, paprika, cumin, and salt. Add the oil and mix until a crumbly paste forms. Rub the spice mix all over the ribs and let rest for 1–2 hours at room temperature, or up to overnight in the fridge. If refrigerating the ribs, bring to room temperature before cooking.
- 2. Move the oven rack to the middle position and preheat oven to 250°F. Line a baking sheet with aluminum foil and arrange ribs in a single layer on the foil. Top with another piece of foil and crimp the foil sheets together into a packet containing the ribs. Bake for 3 hours, then check on the ribs: They should be fall-off-the-bone tender and the internal temperature should be 203°F at the thickest part. If they’re not ready, bake for another 30-60 minutes.
- 3. When the ribs are tender, remove from the oven and preheat the broiler. Return the ribs to the oven and broil until crisp on the outside, about 5 minutes. Use a pastry brush to lightly coat ribs in barbecue sauce.
