1-1 ½ pounds stir fry steak (or thinly sliced flank or skirt steak)
⅓ cup reduced sodium soy sauce (for regular soy sauce use 1/4 cup)
2 tablespoons corn starch (divided)
2 tablespoons brown sugar
2 teaspoons minced garlic
¼ teaspoon ground ginger
¼ teaspoon crushed red pepper flakes
⅛ teaspoon black pepper
1 teaspoon sesame oil
2 tablespoons vegetable oil
¼ cup julienned carrots
½ cup sliced mushrooms
1 cup snow peas
¼ cup beef broth
1 package ramen noodles (any flavor) boiled until tender, drained, and flavor packet discarded
chopped green onions and sesame seeds (for garnish, optional)

Steps:

  • Place steak in a large resealable bag. Whisk together soy sauce, 1 tablespoon corn starch, brown sugar, garlic, ginger, red pepper flakes, black pepper, and sesame oil. Add sauce to the bag, press out any excess air, and seal. Chill for 10 minutes.
  • Drizzle a large pan or skillet over medium heat with the vegetable oil. Use tongs or a fork to transfer beef strips to the pan (do not discard marinade in the bag!). Add carrots, snow peas, and mushrooms to the pan. Saute for 4-6 minutes until browned.
  • Add marinade from the bag to the pan. Bring to a boil. Whisk remaining tablespoon of corn starch into the beef broth and stir into the pan until sauce thickens. Reduce to a low simmer.
  • Stir in cooked noodles, garnish with sesame seeds and green onions if desired and serve.

3 oz instant ramen, 3 packages
8 cups water, boiling hot
1 clove garlic, minced
1 teaspoon cornstarch
2 tablespoons sesame oil
1 lime, juiced
¼ cup soy sauce, plus 1 tablespoon
2 cups broccoli floret
1 tablespoon olive oil, divided
¾ lb flank steak, thinly sliced
½ medium yellow onion, thinly sliced
2 tablespoons green onion, sliced
2 tablespoons fresh cilantro, chopped
1 ½ teaspoons sesame seeds, toasted

Steps:

  • Place the ramen noodles in a large bowl (discard the seasoning packets or save for another use) and pour the boiling water over them. Let sit for 6 minutes, stirring every now and then to break up the noodle blocks. Drain and rinse under cold water. Set aside.
  • In a small bowl, combine the garlic, cornstarch, sesame oil, lime juice, and soy sauce. Stir well, then set aside.
  • Place the broccoli in a large, microwave-safe bowl and microwave for 1½ minutes, until soft. Set aside.
  • Heat 1 teaspoon of olive oil in a large, nonstick pan over high heat. Add the steak to the pan and toss with 2 tablespoons of the reserved sauce. Cook until browned, about 2 minutes. Remove from the pan and set aside.

2/3 cup beef broth
2 tablespoons brown sugar
4 cloves garlic (minced)
2 teaspoons minced ginger

16 ounces boneless beef sirloin steak (sliced thin)
16 ounces linguini noodles
4 teaspoons canola oil (divided)
1 red bell pepper (sliced thin)
1 onion (sliced thin)
2 carrots (sliced into match-sticks)

Steps:

  • Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
  • Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.

1 tablespoon olive oil
8 ounces beef top sirloin filet, thinly sliced across the grain

1/3 cup reduced sodium soy sauce
3 tablespoons oyster sauce
1 tablespoon brown sugar, packed

Steps:

1 1/4 pounds boneless skinless chicken breasts or thighs (thinly sliced then cut into bite-sized pieces)
4 tablespoons low sodium soy sauce (plus additional to taste, divided)
3 cloves garlic (minced)
1 small bunch green onions (thinly sliced (about 1 cup), divided)
2 tablespoons hoisin sauce
1 tablespoon minced fresh ginger
1 tablespoon rice wine vinegar
2 tablespoons grapeseed oil or canola oil (divided)
6 ounces dry long noodles (such as soba (udon) noodles or whole wheat spaghetti or whole wheat linguine noodles)
6 cups thinly sliced vegetables
2 large eggs (lightly beaten)

Steps:

  • Place the chicken in a bowl and toss with 1 tablespoon soy sauce. Let sit while you prep the remaining ingredients.
  • In a small bowl or large liquid measuring cup, combine the three-quarters of the green onions, the remaining 3 tablespoons soy sauce, hoisin, garlic, ginger, and vinegar. Set near the stove. Reserve the remaining green onions for serving.
  • Bring a large pot of salted water to a boil. Cook noodles until they are about 1 to 2 minutes from done, according to package instructions.   • To the now-empty skillet, add the remaining 1 tablespoon oil. Add the vegetables and cook until they begin to brown and soften but are still fairly crisp, about 3 to 4 minutes.
  • Add half the scallion mixture and saute until fragrant, about 1 minute.
  • Add the noodles. Cook, using tongs to toss the noodles and coat them with the sauce, for 30 seconds.
  • Add the eggs, sriracha, chicken, and remaining scallion mixture.
  • Continue to stir fry and toss the noodles, until the eggs are cooked through and the noodles are tender, 1 to 2 minutes longer.
  • Remove from heat. Sprinkle with the reserved green onions.

This is an easy recipe and a very tasty stir-fry dish that I have made many times. If you are not using low-sodium broth and soy sauce make certain to add in any salt (if you are using) at the end. To save time slice your beef and chop your veggies ahead of time and refrigerate.

1 lb flank steak, thinly sliced crosswise (to make slicing earier, partially freeze the meat before slicing)
1 tablespoon chopped fresh garlic (or to taste)
1 tablespoon chopped fresh ginger
2 tablespoons sesame oil
hot pepper flakes (I add in about 1/2 teaspoon or a little more)
1 onion, sliced
1/2 lb mushroom (to taste)
1 red bell pepper, thinly sliced
1 1/2 cups chicken broth (preferably low-sodium)
1/3 cup hoisin sauce
1/4 cup soy sauce (preferably low-sodium)
2 tablespoons cornstarch
6 -7 ounces fresh snow peas, trimmed
7 -8 ounces angel hair pasta (cooked el dente, heat under hot water before adding the noodles into the hot wok) or 7 -8 ounces use thin rice noodles
1 1/2 cups baby corn, drained and rinsed

Steps:

  • Saute the beef with 1/2 tablespoon garlic and about 1/2 tablespoon fresh ginger in a wok or in a nonstick skillet (I prefer a wok for this) with about 1 tablespoon sesame oil for 4-5 minutes, until almost cooked through; transfer to a plate.
  • In the wok with remaining 1 tablespoon sesame oil, saute remaining garlic and ginger with hot pepper flakes, sliced onion, mushrooms and sweet pepper for about 4 minutes (make certain that the wok is hot).

  • Add to the wok or skillet; cook stirring for 2 minutes.
