SIMPLE BAKED MAHI MAHI RECIPE

This simple baked mahi mahi is such a light and delicious meal to prepare on a summer evening, paired with your favorite vegetables or rice.

2 (5-ounce) mahi mahi fillets
½ cup salted butter
4 large cloves garlic, minced or pressed
2 tablespoons chopped parsley
2 tablespoons chopped chives
¾ teaspoon fine sea salt
¼ teaspoon freshly ground black pepper
1 lemon, sliced into 2 slices and 4 wedges

Steps:

  • Preheat the oven to 400 F.
  • Pat the mahi mahi fillets dry, and debone them.
  • Melt the butter, and mix in the minced garlic, chopped herbs, sea salt, and pepper. Stir until the salt dissolves.
  • Grease a baking dish, and place the fillets in it. Spoon half of the butter mixture over the top. Top each fillet with 1 lemon slice.
  • Bake on the middle rack for 12 to 16 minutes. The cook time is based on the thickness of the fillets.
  • Serve the mahi mahi fillets with the remaining herb butter and lemon wedges.

3 mahi mahi fillets
¼ cup raw honey
1 clove garlic, grated
¼ teaspoon coriander
¼ teaspoon white pepper
½ teaspoon chili powder
1 teaspoon of salt, divided
1 orange, divided
2 mangoes, diced
1 yellow bell pepper, finely diced
1 red bell pepper, finely diced
¼ cup finely chopped cilantro
2 tablespoons olive oil
1 lime, juiced

Steps:

  • Preheat the oven to 425 F.
  • Prepare the glaze: In a bowl, combine the honey, garlic, coriander, white pepper, chili powder, ¼ teaspoon salt, and juice from half the orange. Whisk well until completely combined.
  • Place the mahi mahi fillets on a foil-lined baking sheet. Brush each fillet with a generous amount of glaze, reserving any remaining glaze. Slice the remaining half of the orange, and slide the slices under the fillets for baking. You can also put the slices on top of the fillets.
  • Bake the mahi mahi for 20 minutes, or until flaky. Once done, remove from the oven.
  • While the fish is baking, prepare the salsa. In a medium bowl, combine the diced mangoes, yellow bell pepper, and red bell pepper. Add the cilantro, olive oil, lime juice, and the remaining salt, and mix well to combine.
  • To serve, brush the mahi mahi with the remaining orange glaze, then top with mango pepper salsa.

I have used this method for fresh albacore, yellowtail, and dorado (mahi mahi). I am sure it would work for any firm white fish. Don't fear the mayonnaise! I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

2 tablespoons soy sauce, or more to taste
1 large clove garlic, minced
6 (5 ounce) mahi mahi fillets
¼ cup crushed saltine crackers, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir mayonnaise, soy sauce, and garlic together in a bowl.
  • Place mahi mahi in a baking dish. Spoon mayonnaise mixture over the fish, then turn to coat. Sprinkle saltines over top.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.

2 tbsp butter, melted

Steps:

  • Preheat ovento 425 degrees.
  • Rinse the fishand pat it dry with paper towels. Sprinkle inside of the fish cavity with saltand black pepper.
  • Place the butterin a large, heavy-duty plastic bag and add the fish. Turn the fish around tocoat it properly with the butter.

I came up with this marinade after buying some Mahi-Mahi without any real idea on what I was going to do with it. It's so simple, it makes a great weeknight meal that is still impressive with the addition of some rice and a salad. I use Zatarain's blackened seasoning for mine, but any other blackened or Cajun seasoning will do just fine. Preparation time includes marinating. I haven't tried it yet, but the fish could also be easily grilled.

3/4 cup salsa verde (green salsa made with tomatillos)
12 ounces mahi mahi fillets
blackening seasoning

Steps:

  • Combine lime juice, salsa verde and mahi-mahi fillets in a freezer bag.
  • Marinade for two to three hours, turning every thirty minutes or so.
  • Place fillets on a greased cooking sheet. If a little of the marinade still remains on the fish, it is okay.
