This is a great recipe for a night when you're feeling lazy - only a few ingredients, nothing to chop, easy cleanup, and very yummy! My husband announced the fish was 'excellent,' and he's not usually one to rave about food.

4 flounder fillets
salt and ground black pepper to taste
¼ cup butter, melted
3 tablespoons white wine
3 tablespoons seasoned bread crumbs
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
  • Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.
  • Bake in the preheated oven until flounder flakes easily with a fork, 25 to 30 minutes.

chopped scallion
dried parsley flakes

Steps:

  • Preheat oven to 350 degrees& spray large baking dish with cooking spray.
  • Rub the fillets on both sides with lemon juice, then salt and pepper them to taste.
  • Place the fillets in the baking dish& completely dab with butter.
  • Then sprinkle evenly with chopped scallions& tarragon.

Have no fear of cooking fish with this easy baked flounder recipe. Hardly any prep work, ready in 30 minutes, and delicious!

16 oz flounder fillets
3 cups cherry tomatoes (whole)
4 cloves garlic (peeled and halved)
1/4 cup kalamata olives
2 tbsp fresh thyme ((2 tsp if using dried))
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1 lemon (sliced thin)
2 tbsp extra virgin olive oil

Steps:

  • Heat oven to 425F. Line a baking sheet with aluminum foil.
  • Place on the sheet: tomatoes (whole), olives, garlic, and half the thyme (1 tbsp).
  • Drizzle 1 tbsp olive oil, a pinch of fresh ground pepper, toss with a spatula or with your hands. Place in the oven. Set a timer for 18 minutes.
  • Pat fish fillets with paper towels. Season fish on both sides with salt and pepper.
  • After 18 minutes, take the sheet out of the oven. Move tomatoes to the perimeter of the sheet and lay the fish in the center. Top with lemon slices and the rest of your thyme. Drizzle with another tablespoon olive oil.
  • Return the baking sheet to the oven. Bake 7 minutes.
  • Serve immediately.

If you can't find flounder, any mild white fish would work, such as Dover sole, halibut, or branzino filet will work. Choose thinner fish filets if possible. 2 medium zucchini, (halved and cut into ½-inch slices (half moons))
1 small red onion, (halved and cut into ½-inch slices (half moons))
Kosher salt and black pepper
3 garlic cloves, (minced)
2 teaspoons dried oregano
½ teaspoon paprika
½ teaspoon cumin
Juice of 2 lemons, (plus more lemon wedges for serving)
¼ cup to 1/3 cup extra virgin olive oil
½ cup grated Parmesan cheese

Steps:

  • Heat the oven to 350 degrees F.
  • Pat the fish dry and season it well with kosher salt and black pepper on both sides. Arrange the fish in a large pan and add the zucchini and onions next to it and season them with salt and pepper.
  • In a small mixing bowl, add the garlic, spices, lemon juice, and olive oil. Whisk to combine.
  • Pour the sauce all over the fish and vegetables.
  • Bake in the heated oven for 7 to 10 minutes, then carefully remove the pan and sprinkle the grated parmesan all over the fish and vegetables. Return the pan to the oven and bake for another 3 to 5 minutes or so until the fish is flaky and the cheese has melted some. (Flounder fillets are thin and should not take too long to cook. 2 tablespoons unsalted butter
1 medium onion, chopped
1/2 teaspoon kosher salt, plus extra for the sweat and for seasoning fillets
1 clove garlic, minced
1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.
  • Place the heavy cream and wine into a saucepan over medium heat. Once the mixture begins to simmer, gradually add the cheese and stir until melted. Set aside and keep warm.
  • If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place the rice into a 2 1/2-quart casserole dish and spread evenly. Place each roll on top of the rice, seam side down. Pour over the cheese sauce and place in the oven for 25 minutes. Allow to cool for 5 minutes before serving.

  • Preheat the oven to 375 degrees. Lay the flounder fillets in a buttered 13 × 9 × 2-inch baking dish. Season with salt and pepper to taste. Pour the sherry over the fish, then pour on half of the butter. Cover the fish with breadcrumbs and pour the remaining butter over the crumbs. Bake for 15 minutes.

¼ teaspoon salt
3 tablespoons lemon juice, divided
½ cup grated Parmesan cheese

3 tablespoons mayonnaise
3 tablespoons chopped green onions

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with nonstick cooking spray.
  • Season both sides of flounder fillets with salt. Place into the prepared baking dish. Brush 1 tablespoon lemon juice over fillets.
