Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Sprinkle squash with salt and pepper, and lightly spray with cooking oil. Place in a baking dish flesh side down, and cover with plastic wrap.
- Microwave on high for 10 to 15 minutes, or until flesh is fork-tender.
- Meanwhile, cook beef and pork in 1 tablespoon of oil on medium high heat until well browned, stirring frequently to crumble. Drain, and set aside. In the same skillet, cook the onion and garlic until onion is translucent. Combine beef and pork with cheese and onions, and spoon mixture into squash halves.
- Bake, uncovered, in the preheated oven for 15 to 20 minutes, or until cheese is melted and squash is lightly browned. Season with salt and pepper to taste. Serve hot.

- Halve the squash lengthwise and clean.

- Keep the mixture warm until it is needed.

- Preheat oven to 425°F with rack in upper third of oven. Line a large baking sheet with foil. Place squash halves, cut-side up, on the prepared baking sheet; brush with oil. Roast until tender, about 40 minutes. Let stand until cool enough to handle, about 10 minutes. Reduce oven temperature to 350°F.
- Scoop the squash flesh into a large bowl. Mash with a potato masher or a large fork until smooth. Add milk, eggs, shallot, garlic, 1/3 cup Parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper; stir until well combined. Pour the mixture into a lightly greased 7-by-11-inch baking dish.

- Prepare your acorn squash by cutting it in half and coring out the seeds. Leave as much flesh as possible in each half of the acorn squash. Rinse after coring.
- Place the acorn squash halves facing downward in a microwave-safe bowl or dish with 2 tablespoons of water. Heat on high for 5 minutes.
- Transfer the heated acorn squash halves to individual bowls then add 1 tablespoon each of light brown sugar and butter. Heat on high for an additional 5 minutes in the microwave. Use a fork to check for tenderness after heating, if needed heat in additional 1-minute increments until the squash reaches your desired level of tenderness.

- Preheat oven to 350 degrees F (175 degrees C).
- Turn acorn squash upside down onto a cookie sheet. Bake in a 350 degrees F (175 degrees C) oven until it begins to soften, approximately 30 to 45 minutes.
- Remove squash from the oven and turn onto a plate so that the flesh is facing upwards. Place butter and brown sugar into the squash, and place remaining squash over the other piece. Place squash in a baking dish (so the squash won't slide around too much) while baking.

- Preheat oven to 400 degrees Fahrenheit.
- Cut squash in half and remove all seeds and strings. (Scrape the inside of the squash with the edge of a spoon).
- Place squash halves upside down in a shallow pan. Pour water in pan to a depth of 1/4 inch (may use more or less water depending upon size of pan used).
- Bake for 35 minutes. If any water remains, drain it off.
- Turn squash over. Sprinkle cut side of squash lightly with salt if desired. Mix together the marmalade and melted butter and spoon over cut side of squash pieces.
- Place under broiler for 5 minutes or until lightly browned.
