2 tablespoons olive oil
1/8 lb boneless skinless chicken (thighs or breasts)
28 ounces diced fire-roasted tomatoes or 28 ounces diced tomatoes
2 cups frozen artichoke hearts or 2 cups canned artichoke hearts
2 yellow onions, thinly sliced
1 teaspoon red pepper flakes (optional)
3 tablespoons capers

Steps:

  • Heat a large, heavy pot over medium-high. Once it's hot, heat the olive oil, then add the chicken. Sear on each side until golden, about 3 minutes per side.
  • Add the tomatoes, onions, artichoke hearts and red pepper flakes and give everything a big stir. Reduce the heat to medium-low. Simmer for 20 - 30 minutes, or until the onions are transparent and the chicken is cooked through.
  • Shred the chicken with two forks, or skip this step. Serve and top each portion with a few capers.

4 6-to-8-ounce skinless, boneless chicken breasts
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 9-ounce package frozen artichoke hearts, thawed and patted dry (see Cook's Note)
1 small red onion, cut into wedges
3 cloves garlic, thinly sliced
1 teaspoon dried oregano
3/4 cup low-sodium chicken broth
1/4 cup pitted kalamata olives
1/4 cup chopped fresh parsley
1/4 cup crumbled feta cheese
1/4 cup sliced Peppadew peppers, plus 2 teaspoons brine from the jar (see Cook's Note)

Steps:

  • Place the chicken breasts between 2 pieces of plastic wrap and pound with a skillet until about 1/2 inch thick. Season with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, undisturbed, until golden on the bottom, 4 to 5 minutes; turn and cook until the other side is golden, 2 to 3 more minutes. Transfer to a plate and set aside.
  • Wipe out the skillet and return to medium-high heat. Add the remaining 2 tablespoons olive oil; when hot, add the artichoke hearts and red onion and cook, undisturbed, until golden in spots, about 1 minute. Season with salt and pepper and continue cooking, stirring occasionally, until the vegetables are tender, about 2 more minutes. Add the garlic and oregano and cook, stirring, 30 seconds.
  • Return the chicken to the skillet and add the broth and olives. Bring to a gentle simmer, cover and cook until the chicken is cooked through, 4 to 6 minutes. Top with the parsley, feta, peppers and brine.

3 tablespoons extra-virgin olive oil, plus 2 tablespoons for pan
2 lemons, halved
1 whole chicken (3 to 4 pounds), backbone removed, flattened
Coarse salt and freshly ground pepper
1/4 teaspoon red-pepper flakes
1 pint-size jar Artichokes Packed in Oil with Lemon, room temperature or warmed in oil
Fresh mint, for garnish

Steps:

  • Preheat oven to 425 degrees. Rub 3 tablespoons oil and the juice of 1 lemon over chicken; season generously with salt and pepper. Heat remaining 2 tablespoons oil in a large skillet (preferably cast-iron) over medium-high heat. Cook chicken, breast side down, until golden, about 5 minutes.
  • Set a large skillet (preferably cast-iron) on top of chicken, pressing to flatten. Transfer to oven, and roast until golden, about 30 minutes.
  • Remove skillet; flip chicken. Return skillet onto chicken; roast until cooked through and an instant-read thermometer inserted into thickest part of the thigh reaches 165 degrees, about 10 minutes.
  • Transfer to a platter; let rest 10 minutes before carving. Drizzle with juice of remaining lemon, and sprinkle with red-pepper flakes. Scatter artichokes over top, and drizzle with oil from jar. Garnish with mint.

Boneless, skinless chicken breast half (6 ounces)
Coarse salt and ground pepper
1 tablespoon all-purpose flour
4 sun-dried tomatoes packed in oil, drained, and slivered
4 teaspoons olive oil
1/2 cup artichoke hearts packed in water, drained, rinsed, and halved
2 scallions, green and white parts separated, thinly sliced
2 garlic cloves, thinly sliced
1/4 cup Israeli couscous (optional)

Steps:

  • Place chicken between 2 sheets of plastic wrap or waxed paper. With the flat side of a meat mallet or a small skillet, pound to a 1/2-inch thickness. To soften noise, place chicken in plastic on a folded kitchen towel when pounding.
  • In a medium skillet, heat 3 teaspoons of the oil over medium-high heat. Season chicken with salt and pepper. Coat chicken in flour, shaking off excess. Saute until golden brown and cooked through, 1 1/2 to 2 minutes per side. Remove.
  • To pan, add garlic, white part of the scallions, and 1/2 cup water; bring to a boil, scraping up browned bits. Add artichokes, sun-dried tomatoes, and remaining teaspoon oil; season with salt and pepper. Cook until artichokes are heated through and sauce has reduced slightly, about 1 minute. Spoon mixture over chicken.
  • To make couscous, if desired: Bring a small pot of salted water to boil; add couscous. Boil until couscous is tender but still pleasantly chewy, about 10 minutes. Drain, toss with scallion greens, and serve alongside chicken.

This recipe calls for lighter ingredients so it is not very heavy. It has the taste of a baked artichoke wrapped in lightly breaded chicken. I was trying to emulate the way the I like to eat my artichokes....breaded, covered with mozzarella cheese and dipped in butter. My family really enjoyed this one, hope you do too!

6 artichoke hearts, from a can, chopped
6 ounces light cream cheese
1 tablespoon butter (I prefer smart balance)
salt, to taste
3 chicken breasts, sliced in have length-wise, creating 6 thin breasts to work with
breadcrumbs, for lightly coating the chicken
1 cup part-skim mozzarella cheese

Steps:

  • Preheat oven to 375 degress.
  • In a bowl, mix the artichoke hearts, cream cheese, butter and salt together and put aside.
  • Flatten out each breast by laying it on a cutting board, covering it with wax paper and using the flat, broad side of a meat tenderizer (or whatever is handy) gently pound the chicken on the side of the chicken where the skin is stronger (tighter looking).
  • After the breast is flattened, lightly coat it in the bread crumbs.
  • After the breast is coated, spread about 1/6 of the artichoke mixture on top of the breast.
  • Roll the breast over the mixture and secure it with a toothpick.
  • Repeat for the remaining breasts and put them all in a baking dish and cover it with aluminum foil.
  • Bake for 30 minutes covered,.
  • Uncover and bake f5 minutes longer.
  • Remove chicken from the oven and sprinkle the mozzarella cheese over each chicken breast.
  • Cook chicken about five minutes longer, until the cheese has melted.
